What I Ate Wednesday: Comfort Food

Hola mi amigos! Hope you are all having a fantastic week! I had so much fun reading through all of your random facts from yesterday’s post. You guys are awesome!

You know what today is right?….drumroll please!

It’s time for another What I Ate Wednesday!

Breakfast (8:00am)
Whole wheat English muffin with PB, cottage cheese & honey,
2 eggs scrambled with pepper and nooch,
Frozen fruit (steebies, mango, peaches, pineapple),
thawed and sprinkled with unsweetened coconut shreds
Cup o’ Dark Steamy Joe

Nom, nom, nom!
I am now officially obsessed with this sandwich!

Lunch (12:15pm)
BBQ chicken sammie (shredded chicken breast & onions + TJ’s All-Natural BBQ sauce)
Roasted cauliflower
Steamed peas

Seriously, why don’t I roast cauli more often??

Smokey Roasted Cauliflower: (serves 2)

  • 1/2 medium cauliflower, chopped
  • 1/4 teaspoon smoked paprika
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon pepper
  • 1/2 tablespoon nutritional yeast
  • cooking spray

1. Mist a baking sheet with non-stick cooking spray.
2. Lay out cauliflower florets on sheet without overlapping pieces.
3. Sprinkle with spices and then mist with more cooking spray.
4. Roast in a 425* oven for 20 minutes, or until tender.
5. Toss cooked florets in nutritional yeast and serve.

Snack (4:30pm)
Siggis Pomegranate & Passion Fruit Yogurt and
1/2 tablespoon chia seeds

Dinner (7:45pm)
Leftover quesadillas with gauc and salsa and
4 mini sweet peppers

Today’s drinkage included my new favorite teas and
32 ounces of water in my Camelbak bottle

Today was definitely a good eats kind of day! Not your typical “comfort food”, but uber comforting to my belly! I am still so full from dinner…yay for beans!

Beans, beans…good for the heart! The more you eat, the more you…feel satisfied after dinner? Of course…why whudya think I was gonna say? 😉

Oh and top of the news today! I officially converted one of my co-workers into a hummus lover! Thank you Sabra for your spinach and artichoke creamy goodness! You should have seen her face when she was trying it. At first, you’d think I just asked her to lick a toilet seat and then after her first bite, she asked for more! Ha!

I have always loved roasted red pepper, but I’m getting a little burnt out on it. My newest go-to is TJ’s white bean hummus!

What’s the best thing you ate today?
PB + cottage cheese sammie…but c’mon, you already knew that!

    • Roasted cauliflower beats raw ANY DAY! Well, according to Matt, I have to try his recipe before I can claim my love to TJ’s white bean hummus! I know what I’m doing this weekend! Hmm, I think I may try my hand at some edamame hummus too! Yum!

  3. Today, my mom made some sauted cabbage! SO INCREDIBLE! I literally ate it all up! 😀 I’ve never tried Cottage Cheese with Peanut Putter! Sounds SO delicious!

    Garlic Hummus is what I crave! 😀

    I can’t imagine putting PB and cottage cheese together! Yikes! Is it really that good? It looks delicious but it sounds like it would taste awful together…ya know? or NO? 😉

    TJ’s horseradish hummus rocks my world.
    I like the addition of cottage cheese in your sammie.
    My flatmate eats cottage cheese topped waffles every morning. It’s not the worst scent to wake up to 😉

  6. I LOVE roasted cauliflower! I used to eat it raw… so not the same. It is so good when it’s been in the oven!

    I LOVE Sabra’s spicy hummus! I love twirling everything around in Sabra hummus. 🙂
    It’s really expensive though, and sadly Sam’s doesn’t carry my fave. 🙁

    • Oh I know! My Sam’s only carries red pepper, spinach artichoke, and pine nut! All great flavors but I need more variety…and it’s hard to pay the same price for a MUCH smaller container at a different store! Boo!

    ohhh man I have always loved cottage cheese and peanut butter, straight up! IT’s such a high-protein, filling snack! I definitely have to try it on a sandwich!

    I actually like plain hummus the best. Although my husband is a huge fan of Sabra’s supremely spicy so we buy that a lot too.

  12. Best thing I ate yesterday was a PB and cottage cheese quesadilla! It was BOMB! Girl, we are so the same, I love orange spice and peach tea!! I love spinach-artichoke hummus. All of your eats looks great!

    Best thing I had was my choco oats this morning! I love your savory breakfast, it’s so different since I’m always having something sweet. I never do anything fancy to my cauliflower but I like the way you roasted it. Yums 😀

    Your breakfast looks super good.. yum! I’ve never seen that yogurt before. Is it good? Is it kind of like Greek yogurt?

    I’ve been on a tea kick lately and orange and spice sounds awesome! I might have to pick some up on my next shopping trip.

    • Siggis is one of my faves. It’s a lot like Greek yogurt (thick and protein heavy!) This flavor was a new one for me and I really liked it. Sounds funny, but it kinda felt like I was eating my yogurt while drinking red wine!

    I love cauliflower! I’ve only had it steamed though, I can’t eat it raw, it’s not appealing to me.
