There’s Always Time for Pancakes!

Wow! You guys really know how to brighten a girl’s day! Thank you, thank you, thank you for all your sweet comments on yesterday’s postage! There is nothing better than the feeling I get after a long day when I settle in for the night and read all of your wonderful comments and shows of support! Seriously, I just can’t quit smiling! 😀 <-see?

Today was a long day FULL of packing! I didn’t feel like I got a lot accomplished yesterday due to spending about an hour shredding documents that had been hiding in the office for over FIVE years! Yeah…I know!

So today, I picked up the slack and went into “supreme packing mode”, but first I made myself a little breakfast…no packing schedule will make me forget about my beloved Pancake Sunday!

Today, I was more in the mood for savory…eggs mostly, so my pancakes were more of a side dish, but not one to be looked over by any means! I used Sarena’s recipe for nutritional yeast waffles only I made them into pancakes instead!

Topped with avocado and served with sauteed kale, 2 perfectly fried eggs, tomatoes, and sweet peppers.

These cheezy cakes topped with buttery avocado was the perfect compliment for this morning’s savory breakfast.

And of course a good shake of some Garlic Gold didn’t hurt!
Love that crunch!

After breakfast (which I enjoyed outside on the back deck…yay for another beautiful morning!), I got to work! I’m a bit ADD when it comes to tasks like cleaning, organizing, and in this case packing. I was all over the house, migrating room to room, collecting like things to pack into the same box.

Something I discovered a couple hours in…

Obviously I have a bit of a thing for candles…ya think? Hey, if the power ever goes out, my house will be the one on the block lit up like the Fourth of July! 😉

The rest of the day was filled with wrapping up all these beauties with my dumpster dive packing paper:

I also managed to pack up the majority of my closet (one perk to wearing scrubs Monday-Friday=less laundry), the spare bathroom, and all of the office! Next weekend we will move onto the most daunting task…the KITCHEN…duh, duh, duuuuuuh! 😉

Well, I’m off to bed! It’s definitely going to take me a few days to get used to the time change, but it’s soooooo worth it to have daylight at 6pm!

Do you collect or compulsively buy anything in particular?
I honestly didn’t know my candle buying had hit such extremes! Eek! 😉

    I am the same way with candles!! I cannot stop, and I already have WAY too many! I used to have a fireplace filled with off-white pillars, it was really cool looking! 😀

  2. At least they are pretty candles! AND when they are spread out throughout the house its really not that bad!!

    I always want to buy more lotions or makeup!! or picture frames! I really don’t know! lol

    Your meals always seem so balanced! You seem to have such a healthy view and like not care about calories and stuff. Would you either comment or mind leaving me a email?

    Like do you excersise? AND do you worry about calories? or count them? Are you an inituive eater? Have you ever had foodd problems?

    dang! you were so productive today! i’m impressed. i’m also impressed by your massive candle collection! i think the only thing i have that might come close is my shot glass collection. i can thank college for that! 🙂 i know i should get rid of some of them – seriously, who needs 20+ shot glasses? – but they’re sentimental!

    I collect Starbucks mugs from cities that I visit that have a city mug.
    I have a decent sized candle collection, only because my students always get me candles for Christmas. Always. 🙂

    Of all days to lose an hour, yesterday was not a good one. I needed that extra hour, but everything worked out in the end. However, AZ does not change their clocks, and so now we’re 2 hours behind Nashville. It’s 3:45 AM…Summer thinks it’s time to get up and play. Going to be a long day.

    I will try and bring some sunshine back to you if you promise to make me that breakfast. 🙂

    • Oh wow! That is crazy! Poor thing…once she gets adjusted to the AZ schedule, it’ll be time to come back home! 🙁

  7. Breakfast looks perfect! I need to get garlic gold. I have never tried it, but it seems like a product that is loved by many people. I’m glad you liked the waffle/pancake! I am so addicted to them! As for the candles, we used to be that way too. That is definitely one of those things that sneaks up on you. They smell so good and when they are on sale (most likely at Target for us) we always used to grab them. Good luck with the rest of the packing and have a great Monday Heather!

    • Oh I know what you mean! I have a hard time passing up a good deal! Most of the Yankee candles I have were actually purchased during an After Christmas sale where they were buy one, get one 1/2 off! Yay!

      I love the garlic gold! It’s like eating tiny little garlic croutons! 🙂

    • No, I totally get the “overwhelmed” feeling! At one point yesterday, I just kept walking from room to room wondering how in the world I was going to finish packing in time! Oh, if only I didn’t have to work!

    Good luck moving! I just did it a few months ago and it’s no fun. But it is totally worth it once you’re settled into your new place. 🙂

    • Thank you Michelle! So glad you found me! And yes, all I keep thinking about is how it will feel to be all moved in and sleeping in my new house in 2 weeks! It’s the only thing that keeps me motivated…well, that and the super big kitchen that I’m dying to cook in! You know, I might actually just sleep in there on my first night! 😉
