I’m Just Here For The Guac!

Hola mi amgios! Happy Cinco de Mayo…or what I like to call, “Mexican FEASTival Day!”

I LOVE Mexican food! Burritos, quesadillas, empanadas, rubbertireadas…you name it! Just sprinkle it with garlic, add a little salsa, sit it in front of me and watch it disappear! I swear I have been dreaming of Mexican for dinner ALL day!

Since I was a little low on pantry items and a LOT low on time before I would chew my own arm off (remember what I said about working out in the evening), I threw together a quick Mexican themed salad! I sautรฉed strips of bell pepper, onion, and portobello mushrooms in a little olive oil and dashed them with chili powder, pepper, and garrrrrrlic!

I also toasted up some frozen corn

And then I got to layering!

Spinach, portobello/onion/pepper mix, corn, tomatoes, and a drizzle of plain non-fat Greek yogurt

And well, we certainly can’t celebrate Cinco de Mayo without a little guac, right?

Right!

Served up alongside some homemade baked tortilla “chips”

Just slice up a whole wheat tortilla, pop it under broil, flip when brown!

Watch them close! They only take a few minutes and they burn fast!

Classic Chunky Guacamole:

  • 1 ripe medium-sized avocado
  • juice of 1/2 a lime
  • garlic
  • S&P to taste
  • 1/2 medium-sized tomato, chopped
  • 1/4 medium-sized onion, diced
1. Slice avocado in half and cross-hatch the flesh with a knife. Scoop out into a bowl.
2. Add lime juice, garlic, and S&P and stir to combine
3. Stir in tomato and onion
4. Serve with chips.

It doesn’t get any easier than that folks! It amazes me that people actually buy the pre-made stuff! Have you ever tried it? Blech!

I swear I get more of a rush of endorphins from a spoonful of guac than I do from ANY chocolate! There…I said it…I’m sorry I’m not sorry!

  3. Everything looks amazing! You know, it’s funny…Mexican is probably my favorite, but I didn’t eat it today. I just wasn’t feeling it…now I am! Tomorrow!

    Mexican salad is my go-to meal when I’m hungry and in a hurry. Yum. I actually didn’t eat anything Mexican last night. But we might celebrate seis de mayo tonight!

  11. ahh this all looks so good! I LOVE Mexican food, too! It’s up there with my favorite cuisines. And you’re right: it’s no cinco de mayo without guac! I’ll take guac over chocolate any day! Unless it’s chocolate AND peanut butter. Then I might have to rethink my choice… But otherwise gauc all the way ๐Ÿ™‚

  14. Totally agree, the store bought stuff is gross! Anytime someone tells me they don’t like guac, I always ask if they’ve tried it homemade!

  18. Did you hear that? It was my full from lunch stomach growling at your delicious food!!! Once I learned how to make homemade guac there was no going back! Have you ever tried guac on sourdough toast? Holy moses it’s perfection on toast!
