My First 7 Miler & A Recipe

Hello lovelies! I hope you all had a great day today…because really, I’d feel a little bad if I were all alone. 😉

Guess what! Guess what! Guess what!

So you guys know how nervous I was about meeting my friend this morning for my first 7 mile run…

Ahhhhhhh!

I never knew how much of a difference it made to run with other people! I couldn’t even believe my pace…I must’ve checked my watch a half dozen times! Just Tuesday I ran by myself at a 9:35 pace for 5 miles and that was PUSHING it!

All the factors were definitely in my favor…great weather (65 degrees), a beautiful route, and engaging conversation…the perfect way to start a Thursday if you ask me!

And you know what’s the perfect way to END a Thursday? With a delicious recipe of course! And with perfect timing for the holiday weekend!

Sweet Yogurt Broccoli Salad: (makes 8-10 servings)*

1. Wash and dry broccoli florets and place in a large bowl
2. Combine yogurt and honey in a small bowl, pour over broccoli and stir to mix.
3. Add dried cranberries and granola and stir to combine.

*Measurements are approximate due to my habit of grabbing a “handful of this” and a “handful of that.” Feel free to add more or less to suit your tastes.

You can really do many different variations with this recipe. Don’t have dried cranberries? How about raisins? I liked the addition of the granola which was mostly almonds, but I think pecans would also be a great choice!

I made this dish to take over to my parent’s house last weekend when we had our belated Father’s Day celebration for my dad and it got RAVE reviews!

And it’s even better the next day!

    OMG! This broccoli salad looks amazing. Congrats on the run. I’ve been wanting to run more these days but unfortunately the heat is never ending. Guess the treadmill will have to do for now.

  3. I don’t have any buddies to run with. Whenever I mention it to people I think might be interested they seem to think I’m trying to get them killed or something. That said, I can definitely believe that it’s great encouragement to push yourself! AWESOME job, girl. Do you have any more planned?!

      Yeah, I’m actually running with her tomorrow too! She and one of her other friends (that I’ve been introduced to) are planning on running a 12. When I told her I thought I’d pass…I mean, c’mon, I just ran my FIRST 7! Let’s not get cocky now!…she insisted that I come and they can sort of “drop me off” when I get to my stopping point. Hopefully I don’t choke out at like 5 miles or something and lose my high I’ve got here! Haha

    I like running with other people, but I have a very hard time talking when I run so I usually just listen to music anyway, but it’s nice to have someone along side me listening to music too. Can you talk while you run?

      Yeah, I don’t really have a problem talking while running…at least at this pace. I have done 5K’s on the treadmill where there was no way in heck I was getting one word…let alone a whole sentence out! Haha!

    Great job on your run, Heather! I typically like to do my longer runs with a buddy but like to do my smaller weekday runs on my own. Great salad too!

  11. woo HOO on the run – atta girl! 🙂 I am really more of a solo runner, because I like to kinda get into my rhythm and zone out… doesn’t make for good conversation 😉 if someone wants to run with me and wear their headphones, I’m there! 😀

    I always run solo. It’s my “me time” but since I’m joining the cross country next year I’ll have to start running with other people, but I think that will be good to. 🙂

    congrats on the 7-miler!! that’s awesome! i love running alone, but every once in a while it’s nice to have a buddy–and it totally can push you (and/or distract you from the tough run haha).

      Oh yeah, definitely! Seems I haven’t mastered the art of distracting myself when running alone, but when I’m with my friends, I’m so focussed on being competitive, that I don’t think about the sucky parts! lol

    First off, I love your blog and read it religiously. Secondly, I just made this broc salad and it was DELISH!! Substituted craisins for raisins and granola for walnuts but it was amazing all the same. Thanks for the idea!
