Vegan Pumpkin Eggnog Oats

Hello my lovelies and happy Friday!

Hope you all have a fun-filled yet relaxing weekend! I’ve already gotten mine off to a good start.

Knowing I wouldn’t have time to get a workout in later today (BB is coming over right after work today to spend the weekend with me), as soon as I got up this morning, I changed and was back to the gym…hmm, only 12 hours since my last workout…but don’t worry, I focussed on a whole other area of the body today.

It’s been rainy and nasty outside for the last couple of days and when I made it back to the house after my workout, I knew I wanted something warm and comforting for breakfast…but it had to be something to help with muscle recovery too.

And then a little lightbulb went off!

Or the bells sounded…whatever I’m going with it! 😉

Vegan Pumpkin Eggnog Oats

Prep Time: 2-3 minutes

Cook Time: 3 minutes

Ingredients (Serves 1)

  • 1/3 cup oats
  • 1/3 cup Silk Soy Nog
  • 1/3 cup water
  • 1 teaspoon vanilla extract
  • 1 scoop vegan protein powder (optional)
  • 1/3 cup pumpkin puree
  • 1/2 teaspoon pumpkin pie spice

Instructions

1. Combine oats, eggnog, water, vanilla extract, and protein powder (if using) in a microwave-safe bowl and cook for 3 minutes, stirring halfway through.
2. After cooking, stir in the pumpkin and pumpkin pie spice (oats will still be watery until after the addition of the pumpkin).
3. Top with your favorite granola, fresh or dried fruit, and/or nuts.

If you remember, I bought the Silk Nog last year around this time, but wasn’t much of a fan of the sweetness, but when mixed in other things, like coffee and oatmeal, it lends the perfect flavor without the overwhelming sweet taste.

Fueling my muscles never tasted so good!

Now before I go and primp for BB’s visit, I’ll get down to what I know a lot of you are eagerly anticipating…

  2. Yummy! I don’t know what it is, but I am crazy about the eggnog this year. Although I love spicy apple cider stuff too. I haven’t tried a vegan nog that I’ve really liked. I wish I could find one, but I think it’s the egg flavor I like and I don’t feel bad about it when I use our local eggs. Your oats look so good.. I have NOT had enough pumpkin this year. I need to get to work on that. Have a fantastic weekend!

  3. I’ve been using the So Delicious coconut milk nog in my coffee and loving it. I NEED a star bowl to eat things out of… I bet it makes the food taste even better! 😉 And yaaaay for a weekend with BB… I love living vicariously through your new love! <3

    I love eggnog. Never tried soy eggnog, though, so I think I will this year. I also like cider.

    This weekend I am going to Topeka to see the light displays at Lake Shawnee 🙂

      The soy version isn’t as thick as regular eggnog, but I think it has the same flavor. I like cider too, but I usually only have it when it’s spiked! Shhh! Our little secret!

      LOVE light displays! I wish we had a really good one around here! The Opryland Hotel in Nashville puts up lights, but every year it seems to get more and more disappointing! 🙁

  6. I’ve actually never had egg nog before but now that I’m seeing it (well, mostly vegan versions of it) all over blogs, I’m so curious to try it!

    My weekend plans = studying for my last exam. Isn’t my life exciting? 😛

      Never ever had eggnog? Girl, you need to change that! Even if you only try it once! And hey, at least it’s your LAST exam! That’s totally exciting! 🙂

  9. I am Australian and we don’t have the same traditional foods as in America, like egg-nog and pumpkin pie, so I have never had any.
    Your creation looks so delicious that I am dying to try it! Yummmm

    Aaaaahh…I can’t with the eggnog. I just can’t. I’ve had a strong dislike for the stuff my entire life. BUT I think that your star bowl is adorable! And if you didn’t tell me it had nog in it, I’d probably enjoy your oats too. 😉

    Oh how I pine for egg nog! Love your coffee mug – too cute 🙂 What kind of protein powder is that? I’m experimenting with different vegan protein powders at the moment, always keen to hear other’s opinions!

    Oh I love apple cider, and pear cider, OK, just alcohol 😉

      Haha, you crack me up woman! This protein is one that I’ve been wanting to try for a while now…Garden of Life’s Raw Protein…I was excited about it being a good vegan option without a flavor, but it’s a bit gritty…I might try baking with it to see if it’s any better, but so far not so good in oats or smoothies! 🙁
