Vegan Coconut French Toast with Mango Puree

 I can’t help it.

I blame Meghan and Lauren and their mouth-watering WIAW’s for this.

Oh and Kroger.

Because when I mentioned the other day that dicing mango could be oddly relaxing, what I didn’t acknowledge was the quantity of mango it takes for a good therapy session…

And the fact that I got THREE mangoes for only $1 last week!

Vegan Coconut French Toast with Mango Puree

Prep Time: 5-10 minutes

Cook Time: 7-8 minutes

Ingredients (Serves 1)

For the Toast

  • 1 Tablespoon ground flax
  • 6 Tablespoons unsweetened almond milk (or coconut milk)
  • 1 Tablespoon coconut flour
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup unsweetened shredded coconut

For the Puree

  • 1/4 cup peeled, diced  mango
  • 2 tablespoons water
  • sweetener if desired

Instructions

For the Toast
1. Heat a non-stick skillet over medium heat and coat with cooking spray.
2. In a small bowl, combine ground flax and milk and allow to set for 2-3 minutes.
3. In a shallow dish, whisk together flax/milk with coconut flour, almond extract, and cinnamon.
4. Place shredded coconut in a separate shallow dish and set aside.
5. Coat one slice of bread at a time with your “egg” mixture and then lightly press into dish of shredded coconut.
6. Place bread slices in skillet and cook for 4-5 minutes per side or until golden brown.

For the Puree
Combine mango and water (and sweetener if using) in a small blender or food processor and blend until saucy.

Nutrition stats will vary depending on the type of bread that you use, but this is what the numbers looked like for me using this bread WITH the mango topping:

Yay for healthy fats and HELLO fiber! 😉

Just a note: If you pop the mango puree in the microwave for a few seconds just before drizzling over your toast, you may in fact want to smack your mama.

And for those of you who AREN’T stuck on your own imaginary tropical foodie beach two days before the first day of fall, pumpkin puree mixed with a bit of maple syrup (basically pumpkin butter) would be GREAT with this too!

Of course, that may evoke some grandmama slapping…

    YUMMY! I am planning on making some french toast since I just bought some paleo bread!! I have frozen mangos too! WIN! Fresh better but frozen good too!!

    Your recipes are amazing lately Heather! Loving it! I was just saying on my blog about how un-creative I am in the kitchen and why my new blog will be different because it is not all “eats” anymore!

    Oh and the quest bars, seriously EVERY one I have had is amazing so far! Apple pie, peanut butter, coconut cashew, strawberry cheesecake, berry, and cinnamon roll! I tried all those and LOVED! I have more to try too! Warm then up in the microwave and they are AWESOME!

      Ugh, sometimes I feel like my creativity has a hard time translating from my mind to an actual physical form! This is probably the only recipe to come out right on the first try in WEEKS! Lol

    I’m bookmarking this immediately…as soon as I get a ripe mango I’m making it! Two of my favorite foods- coconut and mango! I’ve never had vegan french toast before, but even though I’m not vegan, I’m always open to trying vegan dishes. Just the picture of the sliced mango has my drooling…

      I’m the same way. I’d NEVER go vegan…I adore my dairy entirely TOO much to give it up…but I love experimenting with vegan dishes just for fun! And I swear, coconut and mango? Match made in HEAVEN! I’d love to hear what you think! 🙂

    I haven’t tried a flax egg yet, but you are really convincing me to give it a whirl. I like to add a little bit of vanilla or almond extract to my french toast. Gives it a little extra oomph, and my favorite citrus fruit is pineapple. How did summer go by and I never to grill one. Oh well, there’s always next year.

      I swear, adding almond extract to just about anything takes it up SO many notches on the flavor scale! Love it! And yeah, I’m right there with ya…I said I was going to grill so many fruits this summer and never did! 🙁 Boo!

  6. Can’t say I’ve ever tried vegan French toast, but I wouldn’t hesitate giving it a shot if it looked like that! Another day, another amazing recipe by Heather… but that’s no surprise 😉 One day you’ll have to share your flops just to make me feel better about myself 😛

    I think mango would probably be my favorite tropical fruit. I used to looooove pineapple, but then out of the blue I developed an allergy to it. A few years ago, I tried having some and ended up with hives and a stomach ache… and each subsequent encounter with the prickly fruit yielded the same result 🙁 But at least I still have mangoes… at least for now lol

      So sad you can’t have pineapple, but it was the same way for me with kiwi…just out of the blue, one day my throat started getting all scratchy and it was difficult to breath/swallow…not cool! At least we have our mangos tho! 😀

      Awww, thanks sweetie! I try my best! I was actually a little worried when I first uploaded the pics that the mango puree wasn’t going to be enough contrast in the pic…luckily with a little photo editing, I was able to make it “pop”! 😀

      Why do I always forget bananas are a tropical fruit? Haha!

  9. I despise cutting up mangoes. One of my fav fruits, but they are sooo much work. You can come cut mine anytime you feel like it.

    I really like papaya lately. I was obsessed with papaya and lime juice this summer. And you must try passionfruit. It is kind of squishy, but my mom made me try one last year and I loved it!

      I used to hate it too until I realized that (unless you have an allergy) you can actually leave the peel on and eat it! Saves SO much time! I’ve never been a fan of papaya…and the seeds? Iiiiiiiiiiick!

      The only way I’ve had passionfruit is in Chobani! Does that count? Lol

    This made my morning! I have a bit of an issue with eggs so for the most part I try to avoid them however, I’ve been craving french toast and pancakes like no ones business but wasn’t sure a flax or chia egg would work… Can’t wait to give it a go this weekend, thanks!

      Yay! Weekends were MEANT to be filled with French toast and pancakes! I’d love to hear how they come out for you!

      I think the flax works really well in this…as long as you don’t turn the heat up too much, it’s able to get nice and toasty without burning. I’m not sure if chia would do the same…I’ll have to give it a try sometime.

  13. French Toast FTW!! And yes, flax eggs (or Ener-G) are amazing. Now if only I could figure out a good replacement for a runny yoke – I’ve been trying to do that one, but no luck!

      Ohh, that IS a hard one! The taste and texture is just so unique…and one of the MAIN reasons I could never be vegan! Gotta give you props on that one girlie! Lol

      I’ve never tried Ener-G. What’s the difference between that and ground flax?
