Sorry I went MIA on you guys yesterday, but after a week and a half of averaging 5 hours of sleep, it has finally caught up to me. I actually called in sick to work Wednesday night because I just couldn’t take one more day.

Unfortunately, my stomach has decided to act in a state or rebellion in response to my zombie status and for the last few days, I’ve been an absolute MESS! All I can say is that I am SO glad it’s Friday…I have a massage scheduled this morning and after that I plan to take Benedryl veg out for the entire weekend!

Banana Almond Crunch

And maybe…just maybe I can talk my tummy into a bowl of this!

Banana Almond Crunch Oats

Prep Time: 5 minutes

Cook Time: 6-7 minutes

Ingredients (Serves 1)

  • 1/4 cup rolled oats
  • 1/4 cup TVP (or more oats)
  • 1 Tablespoon ground flax
  • 1 cup water (or non-dairy milk)
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon cinnamon
  • 1/2 banana, sliced thin
  • Toppings: sliced banana, almonds, and honey for drizzling (NOT optional)

Instructions

1. Combine oats, TVP, flax, water (or milk), extract, and spices in a small pot over medium-high heat.
2. Once boiling (about 3-4 minutes), add sliced banana and whisk vigorously until smooth.
3. Reduce heat to medium and cook until desired consistency is reached.
4. Transfer to a bowl and top with other half of banana, almonds, and honey.

Banana Almond Crunch Oats

Whenever I have a bowl of oats, I HAVE to have some sort of protein punch…otherwise I’ll be chewing my arm off in an hour or so. One serving of TVP (textured vegetable protein) provides 12 grams of protein…which is more than a whole egg! And of course vegan too…if your into that! 😉

Of course for this recipe, you can always just add more oats instead of the TVP. It won’t be as strange, but I promise, still good! 😉 Just make sure to add the whipped banana because that is the KEY to the creamy sweet consistency!

    I feel your pain on the sleep thing! Those tablets the naturopath gave me were working a treat but this week my sleep has been so off its not funny.

    Have you tried lavender oil or a heat pack for helping you sleep?

    This weekend I’m having friends over for dinner so I shall be cooking up a storm! And of course, spoiling my mum on Sunday! We had flowers sent to Jesse’s Mum as well, so we’re hoping we get a call from her! 🙂

      Aww, thank you so much Kristy! It’s definitely been a rough couple of weeks, but I’m finally starting to feel a bit normal again.

      And you JUST reminded me that I have some lavender oil! Hmm, what do you think is the best way to use it? I was thinking of maybe soaking a warm washcloth in a mix of water and oil and laying it on my face before bed?

  3. I’ve never tried TVP and to be honest the sound of it kinda weirds me out… But I’ll still give it a shot 😉 This weekend we’re headed up to Boston and I CANNOT WAIT!

      It totally weirded me out at first too! I actually had it in my cupboard for almost a whole year before I used it for the first time! Haha! Definitely worth a try though! Ohh, I hope you had fun on your trip!! Off to check in with you now! 😀

      Haha! Well, I promise it’s 100% delicious and NOT disgustingly healthy and protein-y! 😉 You actually can’t even tell it’s not just oats in the bowl! And oh my gosh, I can’t believe I went so long thinking honey wasn’t “worth the calories”…I swear a small drizzle takes oats to a whole new level of yum!!

  7. Aren’t TVP oats the best thing ever?! I think that’s the top recipe that came out of my competition diet. Mostly because it means I get to eat more. Bwhahaha! Can’t wait to try this version.

  10. I’ve never seen NOT OPTIONAL listed in the ingredients list for something before! Haha. That’s awesome.

    Not so awesome that you aren’t feeling very good though. Take a hot bath and drink lots of peppermint/ginger tea. That always makes me feel better! Either way though, keep on making the delicious, warming comfort food. The TVP oats look amazing!

      Awww, thank you SO much Madison! I have definitely been putting down some peppermint tea for sure, but thankfully…with the help of my old pal Benny (Benedryl)…I’ve been able to catch up on some sleep after that relaxing massage and am finally starting to feel like myself again! Yay! 😀

      Oh girl, I totally feel ya on the bursting cupboards! ONE of these days I’ll make a dent in my insane collection of grains and flours! haha! But yeah, these would still be delicious without the TVP…it’s such a great flavor combo!

      TVP is textured vegetable protein. It’s made from defatted soy flour and looks kinda like crunchy granola (though it doesn’t have a taste really on it’s own). You can use it in so many different ways to amp up the protein in veggie-based meals just by rehydrating it…either like I did here with the oats or you can let it soak in some liquid before baking with it. The first recipe I ever tried was Laura’s chickenless nuggets and they were amazing! Great texture and since she’s the QUEEN of spice combos, FULL of flavor! http://www.sprint2thetable.com/2012/08/chick-less-nuggets/

      You can find it at most health food stores like Whole Foods or you can get it online (Bob’s Redmill makes one). 🙂

  25. Hmmm . . . a self-induced coma . . . how about a few glasses of wine?!? 😉 That usually does me in pretty quickly on a Friday evening after working all week.

    Good idea with adding TVP–I’ve actually never cooked with it before. To add extra protein to my morning oatbran, I always add about 1/3 c. of egg whites to the bowl, with almond milk, chia seeds and cinnamon. I cook all that together, and afterwards add some fruit of some sort and a nut butter topping. It does a great job of filling me up for awhile! Enjoy that massage!!

      Hmmm, I might have to try that…just look the other way as I’m tipping a glass up after my shift…at 7 in the morning! Haha!

      And oh yeah, I’m a HUGE fan of egg white oats! I love how it makes them extra creamy, but I really like the TVP for more of a “hearty” bowl! 😀

  29. Aww, girl! I sure hope you were able to get a (mallet-free) MEGA dose of R&R over the weekend. I want to see your healthy face in Utah! (SO SO excited, by the way!).

    I’ve seen TVP at Whole Foods, but I’m a total chicken, and haven’t mustered up the nerve to try it. Am I missing out big time? Oats, on the other hand, I KNOW, and banana-infused oats I LOVE. In other words, everything else about this recipe screams “eat me now!”

      Aww, thanks love! I did manage to get one good day of rest in there…along with a Benedryl-induced sleep coma on Monday so I’m starting to feel a bit better…one more day like that and I think I’ll be set! Thank goodness because I can’t WAIT until this Friday! So excited to finally meet you!

      I was nervous to try TVP at first too…I had no CLUE what to do with it, but after making Laura’s chicken-less nuggets http://www.sprint2thetable.com/2012/08/chick-less-nuggets/ (super easy by the way), I started playing around a bit more and then thought what the heck and threw them in some oats! Lol They really have no taste at all and you can’t even tell a difference in the texture of the oats, but in chicken nugget(less) form, the texture is incredible…flakey and crumbly and perfect! Definitely worth a try…and they’re pretty cheap if you get them from the bulk section! 😀

    I was in a serious “cinnamon and honey on EVERYTHING” phase a few weeks ago. Now I want BUTTER and cinnamon and honey on everything. 😉 [No butter in the house, so I can’t really do anything with that. Butter extract?]

    I haven’t ‘whipped’ a banana into my oatmeal, because for some reason I thought it required electricity. Do you really just whisk it (whisk it good)?

    Also, new discovery: just a wee bit of ACV if your oats makes them soooooooo smooth and creamy…

      Omg, butter extract would have been GREAT in these! Now I’m gonna have to make them again! Lol And yup, it’s just as simple as workin’ that whisk! 😉 The heat helps break them down (just make sure they’re sliced thin) so no electricity required! 😀

      I’ve GOT to try the ACV thing now! Have you tried adding baking powder to oats? I’ve heard from a LOT of people that it makes them taste like cookie dough!
