After a whirlwind of a day, the Yoplait peeps STILL had more fun in store for Katie, Brianne, and me…not only did we get to play around with the new Greek yogurt flavors in the Betty Crocker test kitchen, but we also got to spend time with the photographers on site which and learn a bit about what goes on behind the scenes of all those drool-worthy pictures you see in cookbooks and magazines!

Inspired by all the new yogurt flavors, the three of us donned our red aprons and set to work…mixing, chopping, spreading, and plating!

Of course, before finishing, there was some SERIOUS time spent contemplating how to fit an entire shelf of plates in my suitcase selecting just the right dish for my recipe. πŸ˜‰

So, anyone out there curious as to what’s in my FAMOUS chicken salad? Oh come on, you didn’t expect me to leave you hanging, did you? Especially after allowing me an entire week to wax poetic about my trip? And ESPECIALLY since this is like the
PERFECT SUMMER RECIPE?!

You’ll LOVE it…the sweet of the pineapple…the crunch of the peppers…the tang of the fresh ginger…and if you don’t have access to a flavored yogurt, just use plain and stir in a bit of honey and some chopped fresh pineapple!

Pineapple Pepper Chicken Salad

Prep Time: 15 minutes*

Cook Time: N/A

Ingredients (Serves 2)

  • 1 1/2 cups cooked chicken, cubed
  • 1 6 oz container pineapple-flavored yogurt
  • 1/2 red bell pepper, chopped
  • 1/2 jalapeno pepper, diced
  • 1/3 cup diced red onion
  • 1 Tablespoon grated fresh ginger
  • 1/4 cup chopped fresh cilantro, plus more for garnish
  • salt and pepper to taste

Instructions

1. Combine all ingredients in a medium-sized bowl.
2. Garnish with more cilantro.
3. Serve stuffed in bell pepper halves, over salad greens, or enjoy as a wrap!

*Note: While not absolutely necessary, I will say that after an hour in the fridge (while skipping up and down aisles of prop closet shelves), the flavors have a better chance to come together!Β

    Knowing me, I probably would have made a kitchen disaster. Were those photographers ready to handle pictures of a KITCHEN FIRE? Because I could totally make one heck of an exciting cooking show…in a bad way. And yooooou are going to be famous! You have to let us/me/blog world/mostly me know as soon as your trip adventures go public via Yoplait!

      Hahaha! Seriously, you can only imagine how nervous I was while they were filming me chopping vegetables! I kept repeating to myself “don’t cut yourself…don’t cut yourself…for the LOVE OF GOD, don’t cut yourself!!” Lol

      And I will most definitely be shouting the news from the rooftops/whoring out the blog as SOON as I get word of all this going public! I’m so excited/nervous to see the finished product!

  5. So there I go assuming again, but I just ASSUMED that you would have used plain ole flavored yogurt in your savory recipe. Imagine by surprise to read Pineapple-flavored yogurt. Again, you are a genius. The recipe looks incredible. It totally beats out regular stuffed peppers where you have to cook them and wait forever. Question: How do you eat these? With stuffed peppers because they are cooked you take a fork to them… So with these do you just pick up the pepper and take a bite? That’s what it sounds like but for those of us who over analyze everything I think I need step-by-step instructions… Haha. πŸ˜‰

      Haha, you are too cute, Madison! I’m actually ALL about the finger foods and eating with my hands when I can so that’s how I would eat these…or you could just slice it to death with a knife and fork if you’re more of a silverware person and not a cavewoman like me! πŸ˜‰

      Oh and I was TOTALLY ready to whip up just about ANYTHING based on a plain yogurt since I do that in my kitchen all the time, but once I got there, I was told there wasn’t a plain flavor so after just a little bit of freaking out, I calmed down and the thought popped in my head for this! I LOVE adding fruit to savory dishes and the idea actually came from my mango chicken salad that I posted last year http://www.kissmybroccoliblog.com/2012/09/14/did-you-know/. And just to give you a visual, you would roll those up and eat them like tacos! πŸ˜‰ xoxo

  8. mmm pineapple yogurt. the recipe for your chicken salad sounds yummy. truth be told, I think I have only had chicken salad once before. i’m more of a tuna salad kind of girl πŸ™‚

    i think. . . . I would have made chicken paprikash with a plain yogurt since many recipes for the dish call for sour cream. and i love me some classic Hungarian food.

    though i might have been a disaster in the dishes pantry. i have a tendency to break dishes -_-;;

      Oh my gosh, ME TOO!! I swear in the last month, I’ve averaged a dish a WEEK! πŸ™

      I had SO many ideas running through my head for a plain yogurt based recipe and was so sad/nervous once I found out that there wasn’t a plain to work with! I’m just glad it all worked out in the end!

      And I’m not sure what it is, but every time I make tuna salad, I end up making tuna melts! We never even had them when I was growing up…guess it just gives me an excuse to eat cheese! Lol

  12. That dish closet is like a food blogger’s version of heaven!!! I always get so frustrated when I don’t have the perfect dish for plating my recipe… but I bet I wouldn’t ever have that problem if I had that closet!

    And I love the recipe you came up with – I’m a big fan of incorporating fruit into savoury meals.

      Sweet and savory (next to sweet and SALTY) is my favorite combo when it comes to creating recipes! I really want to learn more about Moroccan food since I know they incorporate a lot of fruit in their dishes!

  17. I love the idea of adding pineapple yogurt to a savoury dish! Seriously clever lady. And I’m not quite sure what I would make in a kitchen like that, but I would definitely have fun playing around in it!
