I do love my country, but honestly, this was just an attempt to lure you in with a catchy post title and then get you drooling in 100 words or less!

Berry Bruschetta

Prep Time: 15 minutes

Cook Time: 1 hour chill time

Keywords: raw appetizer snack vegetarian summer

Ingredients (2 cups)

  • 1/2 cup diced strawberries
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 1/2 cup blackberries
  • 3 Tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 4 cloves garlic, minced
  • 1/4 cup fresh basil chiffonade (leaves rolled up and cut into ribbons)
  • Toasted baguette and ricotta for serving

Instructions

1. Combine all the berries in a medium-sized bowl.
2. In a separate bowl, whisk together vinegar, honey, and garlic and then drizzle over berries.
3. Stir in basil, cover with plastic wrap and place in refrigerator for at least one hour to allow flavors to develop.
4. Serve on toasted baguette spread with fresh ricotta

  2. Hmm don’t make me choose! Probably blueberries or raspberries or strawberries (how’s that for choosing!).

    That looks delicious!! Berries aren’t really in season here at the moment which is annoying but seeing this is making me count down till they are back in season and not so pricey.

    I agree, strawberries are my fav! I love strawberries, blueberries, cherries, and raspberries in a spinach salad with chicken – but i’ve never even thought of using fruit for a bruschetta! Definitely going to try this for the next family gathering 🙂

  5. These are too cute! I may not be a ricotta fan, but I’m sure I could find an easy sub. Perhaps cream cheese, goat cheese with honey, or whatever else. Yum!

  6. This is the prettiest thing I’ve ever seen. For reals.

    Except, the basil turns this bruschetta into a nationalist statement for the country of Azerbaijan, whose flag colors are red, white, blue, and green. Yes, I Googled it. Yes, I’m a little shit.

    Also, please feed me ricotta and berries with a spoon.

      Ohhhh, I’ve never thought to do a peach caprese! Sounds delish! And I’m sorry to disappoint, but Publix made the ricotta for me! I really do want to try making it myself though…it’s just so hard to find the time since I’m always in Nashville with the man-friend on my days off! I may just have to make him sous chef one day soon! 😉

  14. Yum! Looks and sounds amazing! We’ve been loving berries lately and I just picked up a bunch of organic raspberries, blackberries and blueberries from Costco!

  15. This is such a unique use for summer berries! I seriously love them all, but if I had to choose a favourite it would have to be blueberries.

    I like pairing mangoes with feta for a sweet/savory bruschetta or salad!

  16. Blueberries! Hands down 😀 In fact, fresh blueberries are one of the main things that taste like summer to me… probably because when I was growing up, we’d only get the fresh ones around this time of the year. All other times it was frozen, which, while delicious, aren’t nearly as swoonworthy.

    I made strawberry bruschetta awhile back, and it was lick the plate good.

      Ohh, I didn’t think to add mint! I just picked up a little mint plant at the store the other day (because it was the same friggin’ price as a bag of it!..?!) so I’ll have give it a try!
