Oh yes, the “Figalicious”-ness continues…

Fig Walnut Bleu Cheese Omelet - Recipage

So this recipe may not be ALL that strange, BUT my degree of obsession with this flavor combo may be…I’ll let you be the judge! Just please, please, PLEASE give this a try. If you’re a fan of sweet and tangy and you like figs, it will NOT disappoint!

And well, if you don’t like it…I’m sorry, but you must be

FIGGIN’ CRAZY!

Fig, Walnut, & Bleu Cheese Omelet

Prep Time: 5 minutes

Cook Time: 10 minutes

Ingredients (Serves 1)

  • 3 egg whites (or two whole eggs)
  • 2 Tablespoons chopped fresh parsley
  • 1/3 cup diced sweet onion
  • 3-4 fresh figs, chopped, halved
  • 2 Tablespoons crumbled bleu cheese, halved
  • 1 Tablespoon crushed toasted walnuts
  • drizzle of honey

Instructions

1. Heat oil in non-stick skillet over medium-high heat
2. Add onions and half of the chopped figs and saute until onions are tender (3-4 minutes).
3. Transfer mixture to a small bowl, wipe out skillet, and coat thoroughly with non-stick spray.
4. Whisk egg whites, parsley, salt and pepper in a small bowl.
5. Pour egg mixture into skillet, swirling it around to coat the sides of the pan.
6. Cover and cook for 2-3 minutes or until egg is partially set.
7. Uncover and add sautéed onions and figs and bleu cheese one side of the omelet, then fold other side overtop.
8. Recover and cook for 2-3 minutes.
9. Transfer to a plate and top with the remaining chopped fig, cheese, and walnuts (To toast walnuts quickly: spread on a plate and microwave for 2 1/2 minutes or until fragrant).
10. Drizzle with honey and ENJOY!

Because the sweetness of the figgin’ honey balances out the tanginess of the figgin’ bleu cheese figgin’ perfectly!

  1. I just had figs for the first time a few summers ago. I really did like them but I wasn’t sure what to do with them! I should have known you would have an idea 😉

      Haha! Oh I’ve got more than one! 😉 I’m pretty much on a quest right now to find something that DOESN’T go well with figs! Lol

      Oh they are SO good! Pretty mild tasting on their own, but if you pair them with something that brings out their natural sweetness, they’re perfect! And I love the texture…all squishy and juicy! 😀

      Feta and eggs were meant to be!

  3. Such a DELICIOUS combo here!! I love aaaaalll the ingredients! Fresh figs are SO tasty and I am a bleu cheese lover too. Not to mention my love for omelettes. Here in Switzerlamd it is very common to have red or white wine with a cheese platter (and we have some figgin’ heavenly cheese here) together with grapes, nuts, cranberries and peaches. Even better on top of a mountain on the patio of a cute chalet with the view over the alps. So Swiss! 🙂

  4. Well then. I know what’s going on my grocery list this weekend. I really want this on pizza. Or maybe in a quinoa salad…

    • I want it on a pizza, too! I’m stalking a fig tree a few blocks away. While I walking my dog (really, that’s why I’m in the alley) I can keep one foot on the street at all times and still reach up into the tree . . .

      Heather, this looks delicious and I’m going to have to try both the goat cheese I was contemplating and blue cheese when I get figs . . . um, from the store of course.

      Oh yeah! I’ve been dreaming of whipping up a pizza with this…just gotta remember to pull the dang dough out of the freezer! Lol And a quinoa salad…oh that would be great! 🙂

  5. mmmm i would love this, sweetie 🙂 i haven’t even bought figs yet this year. so awful of me, i know. but, i saw a whole lot of them at superstore (our grocery store) a few days ago, so i think i will be going today and grabbing them! obviously i’d make your recipe <3

  6. Can you believe that I have never tried a fig? Or at least not that I know of…. I should probably work on changing that ASAP!

      Haha! I only discovered my love for them last summer actually! I’d tried them before, but only by themselves and wasn’t really impressed. The trick is to pair them with something that helps bring out the natural sweetness like a tart cheese or a drizzle of honey! Peanut butter and coconut butter are great too! But really, what DOESN’T taste better with a little nut butter on top? 😉

  7. I love figs with blue cheese (and with goat cheese, and mozzarella, and brie!). One of my other favourite foods to pair with cheese is apples. I always eat a lot of that combo in the fall!

    This looks so figgin good! I’ve never cooked with figs before but I need to start.

      Oh YES!! I had quince paste for the first time when I visited Laura in Atlanta…so damn good! But I’m the worst at wine pairing…I need to find a good place around here that will do it for me…and serve in flights…because I get bored easily! Ha!

      Haha! What can I say, I’m not gonna pass up a chance for a good euphemism when I see it! 😉 And seriously, you MUST try a fresh fig before they’re out of season! On their own, they’re pretty mild tasting, but with the right pairing (cheese, honey, or peanut butter is another winner), they’re the best! Definitely one of my most favorite fruits! 😀
