Happy WAFFLE Day!

Pina Colada Waffles via www.kissmybroccoliblog.com

Or you know, just Wednesday…but go with me on this one…it deserves a bit of dramatism, becaaaaaaaauseย I made WAFFLES!!

BoomshakaWAFFAlaka!

If you’ve been around for a while, you know of my battles with Willy the Wafflemaker. If you’re new to these parts, let me just say theย he and I have a very give and takeย relationship…as in I give everything I’ve got and in return, he takes all my confidence.

Waffle Fail Chopsticks

But I’ll be darned if I let him take my BREAKFAST!

Yeah, you know that little bit of anxiety all us foodies get when cracking open an avocado…just praaaaaaying that we got a good one? Well, I get that same feeling whenever I lift the lid of my waffle iron. So obviously, when Kodiak Cakes, a company that makes all-natural breakfast and dessert mixes, contacted me asking about doing a review on their flapjack and waffle mix, I totally FLIPPED! ๐Ÿ˜‰

Kodiak Cakes Waffle Mix

I actually tried their whole wheat mix for the first time a few years ago and fell in love immediately with one of my favorite recipes,ย Easy Protein Pancakes! I still can’t believe a just-add-water mix can taste like it was made from scratch! Since I still wasn’t back to my pancake groove when these babies arrived, I decided it was time to muster up some courage and whip up a waffle! And much to my wonderment, it went well it came out FANTASTICALLY! ๐Ÿ˜‰

I know, I know…I was just singing pumpkin praises yesterday, but when you still have half a pineapple to eat just days before you leave for vacation, it’s perfectly acceptable to slide back into a summer for a moment…plus, this is just my way of celebrating a certain someone who will be honeymooning at the beach this time next week! Congratulations, Melissa! I made you a waffle…but I eated it! ๐Ÿ˜‰

  4. Lately, I’ve been reallllly craving a wafflewich. Take two waffles, stuff some cheese, potatoes, and other delicious things between them, then press it all together in a delicious waffle sandwich. I know you’d approve ;).

    • kissmybroccoli says:

You had me at cheese! Gosh, it’s been forever since I’ve had a wafflewich, though my last one was a thing of beauty…pumpkin waffles, bacon, and chocolate sauce! Hashtag mouthgasm! ๐Ÿ˜‰

I hear so many people raving about it AND i haven’t had waffles in about as long as i hadn’t had pancakes until i made yours! oops! i would top my pancakes with melted raspberries because i love raspberries muahahahaha or else i would do pumpkin because it seems as though i am a bit addicted these days ๐Ÿ˜‰

  9. i usually just do some FROG jam or some kind of preserves with a little maple syrup. not a risk taker!

  10. Carolyn says:

    PB or AB to top!

  11. Eric says:

    • kissmybroccoli says:

Haha!! I saw the same waffle fail pic on Janetha’s Instagram the other day and I was like, “Finally, I’m not alone!” We should obviously start a support group of some kind… ๐Ÿ˜‰

  15. Khushboo says:

Haha I love that comment about cutting into an avocado- SO true!! The same goes for squash- I’m always praying its extra orange on the inside! These waffles sound insane- how am I only JUST hearing that rum extract exists??

    • kissmybroccoli says:

Omg girl, there are SO many extracts/emulsions out there that I never knew of until recently! Rum, butter, coconut, lavender…I even scored one at TJ Maxx a few weeks ago that’s cream freakin’ cheese! ๐Ÿ˜ฏ

  16. Emily says:

I love using peanut butter thinned out with almond milk, or a protein powder glaze on top! ๐Ÿ™‚

  17. Ohh girrllll~don’t do this to me! I seriously kind of want to get a waffle maker now–and this feeling has been slowly building up, haha. I love Kodiak cakes as they have such a perfect texture!

    • kissmybroccoli says:

It took me something like two years before I finally broke down and got myself a waffle iron…and I have to say, even with the waffle fails, it was the best $20 ever spent! ๐Ÿ˜€ And I couldn’t agree more….I’ve tried a lot of different mixes in the past, but none of them came out as fluffy/crispy as the Kodiak mix!

  18. sue says:

love adding maple syrup and some sort of nut butter to my waffels!

  19. Krystle says:

My favorite toppings are definitely chocolate and peanut butter!

  20. Ellyn says:

I have always wanted to try this mix ever since it became popular in blog world, but my stingy college student ways have prevented me from making the purchase ha. That waffle looks delish!

  21. SWEET MOTHER! I just checked the list of places to buy these beauties, and apparently Canada is on board! YES! I’ve been hearing amazing things, but keep forgetting to pick up a box when I’m down in the States. Putting that on a PostIt so that I don’t make the same mistake again. Best pancake topping? Always, always maple syrup ๐Ÿ˜€

  22. Dolly says:

Nothing better than waffles or pancakes on a Sunday morning ๐Ÿ˜‰

  23. Carly says:

    mmm chocolate chips(:

  24. I am so boring!!! Syrup & cinnamon! ๐Ÿ™‚

  25. Emily says:

    Applesauce!

  26. Lindsay says:

i wish those were GF> i’m so friggin envious. they look glorious!

    • kissmybroccoli says:

Hmmm, I wonder if that’s something they would look into…especially with all the blog-love these things get! I promise that if I ever get the hang of making them ALL by myself, I’ll whip you up the fluffiest gluten-free waffle you’ve ever seen! ๐Ÿ˜‰

  27. My favorite pancake/waffle toppings are chocolate chips and/or nut butter!

  28. Rum extract? Wouldn’t plain ol rum be fine too? Or would that set the waffle maker on fire? ๐Ÿ˜‰ I battle with my waffle maker too, but I think mine is the cheap Target $8 cousin of Willy, so even more disastrous possibilities.

I haven’t had a good waffle in a looooooooooong time.

    • kissmybroccoli says:

Hahaha! Now THAT would be a waffle winner for sure! And yeah, I got Willy on clearance…maybe that’s his problem! He’s got abandonment issues! Ha!

  29. I’m cryinggggg I need a waffle maker!!! I feel like it would be such a great investment ๐Ÿ™‚

  30. Kaylin says:

Favorite topping is this blueberry bourbon syrup my mom makes. ๐Ÿ™‚

  31. We must have been on a waffle vibe- I made a batch two nights ago to suffice a craving.

Pina colada waffle is the best excuse to get some booze early in the a-m- love it!

Although I am yet to name my waffle maker…

  32. Rachel says:

I JUST bought a waffle maker last weekend and I am loving it!!!

  33. Ingredients I can pronounce and cabana boys; sign me up please.

These waffles look fantastic. I love the use of pineapple and rum extract! You are a kitchen genius and even though I just finished the last of my pizza, I now want breakfast. Waffles to be exact. These waffles.

  34. Carlie says:

One of my favorite waffle toppings is a banana (smashed & melted in the microwave) mixed with some yogurt and peanut flour!

  35. dang chickadee, that looks awesome!! I’m very late to the waffle game as I just got a maker about a month ago. My kids LOVE the waffles I’ve been churning out, but they also sit there and stare at me because it only makes one at a time. The pressure!!

The rum extract sounds gooood in this. I love me some rum. I mean, extracts. ๐Ÿ˜‰

  36. Summer says:

I would LOVE to try these! Sounds so yummy! ๐Ÿ˜€

  37. Ashley says:

I love waffles topped with nut butter, fresh fruit, and pure maple syrup!

  38. I just tried my first box of Kodiak Cakes mix a few weeks ago and I loved it – I was so shocked at how good it tasted for a healthy boxed mix! I haven’t tried it as waffles yet, but I’ll have to do that next.

  39. Katie says:

I have been dying to try this mix! I LOVE putting bacon, PB, banana, and some maple syrup on top ๐Ÿ™‚ YUM.

  40. Nausheen says:

My favorite toppings are fresh fruit and a whole lot of maple syrup!

  41. Emily says:

Peanut butter/almond butter or fruit and a sprinkle of powdered sugar are definitely my favorite toppings! But, I’m not going to lie, I don’t think I’ve ever met a waffle & topping combo that I didn’t like!

  42. Jill says:

Uhm, omg, at least now I know what i’m going to make for breakfast. Those look so freaking good.

  43. Jill says:

And I keep it simple with berries and a bit of syrup!

  44. Ellie F. says:

maple syrup all the way. also melted coconut butter or almond butter or peanut butter or sunflower butter…I could go on and on hahaha.

  45. They don’t have them in Australia #SadFace!!

These look all kinds of delicious anyway! Plus it allowed me to sing to you via twitter ๐Ÿ™‚

    • kissmybroccoli says:

Aww, bummer!! But I did enjoy the song…even if my Twitter page ate it! Not sure why, but tweets keep disappearing lately! ๐Ÿ˜ฏ

      • I was wondering why my hilarious tweet didn’t get a response from you ๐Ÿ˜‰ hehe

Maybe you have gremlins in your twitter. Or it could be time for a password change in case the spambots have gotten to you.

        • kissmybroccoli says:

Hmm, I just changed my password about a month ago, but you never know…ok, off to think of a spinoff of my current one so I don’t forget it! #storyofmylife Lol

  46. Ashley P says:

My favorite toppings are peanut butter and banana slices!

  47. Keira says:

Healthy me likes to put blueberries and greek yogurt. Not so healthy me is all about the chocolate chips and whip cream and strawberries.

  48. Julia says:

awwww, Willy the waffle iron pumps out some seriously awesome waffles! Love your pina colada idea! Seriously mouth-watering!!

  49. I *love* these mixes, but it’s been forever since I’ve had them! I love putting mashed fruit on waffles or maple nut butter sauce on pancakes (mix maple syrup, a teaspoon of nut butter and milk of choice to a syrupy consistency).

  50. Kat says:

Crap on a cracker did I SERIOUSLY miss waffle day?! Noooooooooo
Guess I’ll just have to make up for it today ๐Ÿ™‚

    • kissmybroccoli says:

Well, according to Google, I think we both missed it…August 24, 2013…which was ALSO national peach pie day! ๐Ÿ˜ฏ I swear there are so many food holidays! It’s hard to keep them all straight!

  51. Not really a topping, but chocolate chips in pancakes/waffles are the best, and of course topped with syrup.

  52. Well, I must say that I’m quite glad to know that I’m not the only one who must fight the waffle iron to get my fair share of breakfast. My waffles used to always resemble a pile of twigs. Thankfully, my mom got me some waffle plates for my panini press, and now I can make waffles that actually look like waffles!!!
I love the tropical twist! Anything tropical is a win in my book ๐Ÿ™‚ Now I just need a sunny, tropical beach to eat these waffles on… that’s only a flight away, totally worth it for one breakfast ๐Ÿ˜‰

  53. Nicole M. says:

My favorite pancake and waffle topping is to heat up frozen blueberries with vanilla, chia seeds, and a bit of cinnamon, a big dollop of greek yogurt, and a drizzle of almond butter. Holy yum!

  54. Jennifer Lyle says:

Love kodiak pancakes topped with peanut butter and egg yolk! Yummmmm ๐Ÿ™‚

  55. Carla says:

ive never made homemade waffles so i dont have a favorite recipe but this would go a long way in helping!

  56. I love waffles but I always forget about making them, as I think they take too much time. My waffle machine is not the greatest and I get frustrated with it, too, thus it stays in my pantry most of the time!

I’ve heard of Kodiak pancake/waffle mix but haven’t tried it yet. I’ll have to get a package the next time I head to the store. Peanut butter and honey is the best topping!

    • kissmybroccoli says:

Aww, they don’t take so long…dust off that waffle iron, girlie! And seriously, I’ve tried a lot of pancake/waffle mixes, but none have been able to hold a candle to the Kodiak brand! The consistency is perfect! ๐Ÿ™‚

  57. Greek yogurt with waffles is AMAZING! Usually I get the fruit-on-the-bottom kind (like 0% cups of Chobani) and skim just the yogurt off without mixing. It’s not as sweet, so it’s like cream cheese almost, but fruity flavored ๐Ÿ™‚ And still pretty thick like cream cheese! Then I take the remaining “fruit” at the bottom of the cup, add water, heat it up a little so it’s like warm fruit syrup and drizzle it on top. Yum! And of course toasted walnuts or almond slivers on top. It makes all the difference.

  58. Lisa says:

My favorite topping is peanut butter!

  59. Mary says:

Favorite waffle and pancake topping… Sunbutter mixed with cottage cheese and jelly!!! So, so good! ๐Ÿ˜‰ on days I’m feeling less cottage cheesy, I opt for just plain sun butter or white chocolate peanut butter (PB&J Co)!

  60. Jeanne says:

I love bananas and pb..never gets old!
