I know, I know…peaches aren’t exactly in season anymore…BUT when you find a 4-pack of peaches at the International market for a whopping TWO BUCKS (so you can finally make this) and then the next morning, you have some hungry blends standing in your kitchen on their SECOND cup of coffee while you’re busy raiding the fridge trying to decide what flavor pancakes you can whip up to seriously impress them all the while wondering why the HECK you didn’t at least an inkling of a plan before you woke up and you’reΒ sweating under all the FRIGGIN’ PRESSURE…

Oh I know, we’ll just throw some fallfestive leaves in there! Quick peach, pretend you’re a pumpkin! πŸ˜‰

Regardless of the season, I’m sharing these with you today because they were fan-freaking-tastic…and if you don’t believe me, I’ve got two lovely ladies well-versed in the fruit persuasion who can back me on this…proof AND proof!

Speaking of boosting my ego, can I just say how great it is to hear someone enjoying something that I’ve made? I mean seriously, it’s THE best…right up there with the feeling you get in your arms after you set down the 20 grocery bags you carried up the stairs from your garage because you insisted on not making two trips!

So umm, yeah…you should make these…because they kinda like make your eyes roll back into your head and you forget to breathe for a minute.

Light and fluffy and FILLED with juicy peaches (use frozen or canned if you still insist on hatin’). The coconut and almond flavors hidden within bring out the peach flavor even more. And covered in a sweet and creamy yogurt sauce, it will definitely take you to that special place…you know where Channing Tatum Tatum Channing carries all 20 of your grocery bags in for you…in one hand…while shirtless…and now I’ve got THIS song in my head! Hmm, can you tell I’m typing this up before my weekly visit with the man-friend? πŸ˜‰

Peaches & Cream Protein Pancakes (GF)

Prep Time: 5-10 minutes

Cook Time: 8-10 minutes

Ingredients (Serves 1)

  • 1/3 cup oat flour (ground from gluten-free rolled oats)
  • 1 Tablespoon coconut flour
  • 1/2 scoop vanilla protein powder (30g scoop)
  • 1/2 teaspoon baking powder
  • 1 large egg white
  • 2 Tablespoons peach-flavored Greek yogurt
  • 3 Tablespoon water (or milk)
  • 1/2 teaspoon coconut extract (optional)
  • 1/2 teaspoon almond extract
  • 1/4 cup diced peaches (fresh, frozen, or canned)
  • Toppings: thinned yogurt mixed with a bit of maple syrup, diced peaches, toasted almonds, and toasted coconut

Instructions

1. Heat a non-stick skillet or griddle to medium heat and coat with cooking spray.
2. In a medium-sized bowl combine dry ingredients and stir with a wire whisk to break up any lumps.
3. In a separate bowl, whisk egg white until frothy.
4. To the egg, add yogurt, water (or milk) and extracts and whisk well.
5. Add wet ingredients to dry ingredients and stir until just combined.
6. Fold in peaches.
7. Spoon batter onto skillet, forming three small-medium sized pancakes.
8. Cook for 4-5 minutes before flipping and cooking an additional 3-4 minutes.
9. Transfer to a plate and add toppings.
10. Enjoy while fantasizing about pecs…I mean PEACHES!!

  2. girl i totally wish i could make these! no peaches here though and i am really trying to eat in season! it’s what my body is craving naturally these days and it is wonderful! would be making these for my dad this morning (in season or not) IF i did have peaches on hand πŸ™‚

  6. I like starting my mornings with a little peaches and cream. I’m happy to have this song stuck in my head, and only wish I had these pancakes stuck in my belly too. Alright, scratch that last bit, it sounds awkward but I would like to try these special cakes.

    • P.S. I have peaches in my deep freezer so if all else fails, you can come back to Cleveland and I’ll make you the sandwich in the dead of winter, seasonality be damned.

  8. Cooking under pressure legit terrifies me. I’m impressed with how well yours turned out! I would have been a sweaty mess and my pancakes would have looked like that too!

    And who cares if it’s out of season! I like my berries in the middle of winter and ain’t nobody gonna change that!

  9. The weather is so cold at the moment so an influx of summer fruit is what we need. It’s nice to see something other than a pumpkin recipe at this time of year. They look beautiful.

      Thanks, Nikki! And oh I hear ya…my definition of cold may be different from most, but I just checked the weather for this week and saw that it’s only going to get up to 43 degrees (6 Celsius) on Tuesday! 😯 Noooooo!

    i love your recipes but can you tell me the nutritional value for your pancakes other than just the protein amounts, such as amount calories per serving carbs, fat,cholesterol ,sodium , sugar ,fiber . thanks for sharing your recipes.

      Thank you, Denise! I no longer include nutritional information on my recipes since I gave up calorie counting last year, but feel free to plug in the ingredients into this calculator and it will give you good idea of the stats!

      Right now, I’m making my way through a ginormous tub of Now Whey Protein Isolate (got a deal online a while back for a 5 pound tub and never realized it would take me THIS long to get through it…ha!). Isopure is another good brand…I know they have that one at GNC, but my favorite brand is Syntrax Nectar Whey…as far as I know, you can only buy it online, but they do have a pretty sweet deal on a variety pack here: http://www.netrition.com/syntrax_nectar_page.html

    Ok… One, just stumbled across your blog yesterday looking for new high protein recipes, from what I’ve seen so far I feel like I’ve been missing out for ages.

    Two, this recipe is AMAZING. Seriously, I’m in love. Like truly, madly, deeply, ‘what did I do without you in my life’ love. ‘I want to raise a little peach protein pancake family’ love. ‘Let’s run away together and live in a castle in France’ love.

    I tweaked it a little to have equal carbs and protein, added a little stevia and BAM, best pancakes ever. Fluffy and fresh and completely delish. They are so amazing you can do them minus syrup. I’ve tried them with a few different mix ins – substituting pineapple for the peaches makes them remind me (happily) of a piΓ±a colada FYI .

    This is easily my new favourite pancake base. I made a triple batch yesterday and froze them, so we’ll see how well they reheat.

    They are definitely happy place pancakes. Though my happy place involves Channing carrying around me instead of the groceries… does that count?

    Hi! I fell in love with this recipe as soon as I saw it and had very high hopes. The only change I made was swapping peaches for strawberries and peach yogurt for strawberry. I’ve made them twice now and both times they’ve turned out extremely dense and difficult to cook all the way through without burning. I added extra milk the second time but same result. Any ideas on what might be going wrong?

      I’m so sorry the recipe hasn’t turned out well for you. This is basically the standard recipe I use for all my protein pancakes. It could be the protein powder. I use a whey isolate powder (1/2 of a 30g scoop so 15g for the recipe). Just in case you’re using a vegan protein, I’ve never had any good luck with those. Also, whisking the egg white is important to incorporate more air into the batter. I really hope this helps! Please let me know if you have any more questions. πŸ™‚

    Can these be made ahead of time and then freeze without losing the effects of the protein? Can I blend up instant or steel oats for the oat flour?

      Of course! I make extra batches and freeze for later all the time. I would think you could use any oats to make the oat flour just be sure that it measures out to 1/3 of a cup. Let me know if you have any other questions. I’d love to hear what you think of them! πŸ™‚

    I was looking for a new recipe for protein pancakes when I came across your blog and these peaches pancakes look so good and then I was reading all you comments and they made me smile. Of course, then I totally forgot I was looking for protein pancake recipes because all I had on my mind was peaches! Ok, so now I really must get back to blending those oats to make my oat flour (and find some peaches). Thanks for sharing such a great recipe.
