French Toast Oats

What do you do when you have a MAJOR craving for French toast but there isn’t a single slice of bread to speak of in your kitchen? Or maybe you DO have bread, but you’re just entirely too lazy to drag out the skillet and too impatient to wait while drooling all over yourself for those little toasts to cook!

Remember when I mentioned a new oat recipe I wanted to share? Well, I’ve kid you not when I say that I’ve been working to perfect the ratios in this for months…but as of last week, I FINALLY got it and even though the words are not flowing as freely as I would like them too right now, I can’t wait any longer to share! So how about I just throw some adjectives your way?

Thick…CREAMY…warm…buttery…CUSTARDY!

The secret is in two ingredients…a WHOLE egg stirred in while cooking and the addition of butter extract…no exceptions! You can find butter extract/flavor in the baking section at most stores. I get this brand from Wal-Mart for only a couple of bucks. The strong flavor is incredible (a little goes a long way) and it is also one of my favorite ingredients to add to mug cakes and pancakes!

French Toast Oats

Prep Time: 3 minutes

Cook Time: 5-6 minutes

Ingredients (Serves 1)

  • 1/2 cup old-fashioned rolled oats
  • 3/4 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon butter extract
  • 1 large egg
  • Toppings: sliced banana, hemp seeds, and maple syrup

Instructions

1. Combine oats, milk, and extracts in a small pot and set over high heat.
2. Once boiling, crack egg into pot and stir vigorously with a whisk until smooth.
3. Reduce heat to medium and cook for 2-3 minutes or until oats have reached desired consistency.
4. Transfer to a bowl and top with fruit and/or nuts and don’t forget the pure maple syrup!

Strange But Good S2TT

After way too many weeks, I’m back and celebrating Friday with my Laura and my favorite bunch of foodies…where the eats are sometimes strange but ALWAYS good!

And yes, in case you didn’t notice, that IS my new scarf in the background! 😉

Am I the only one who grew up thinking flavored oatmeal was only possible if it came in a brown paper packet?
No offense Mom, but your “cafeteria lady porridge” was not what I had in mind!

What are your plans for the LAST weekend before Christmas?
I volunteered to work a shift on Saturday (cha-ching!), but before I go in, I’ll be celebrating Christmas early with my dad’s side of the family…and I’m getting together with the besties tonight! 😀

  2. I almost always add egg whites to my oatmeal, but for some reason the idea of adding a whole egg has always freaked me out. You’ve almost convinced me it’s not so scary though! Haha.

    This weekend I’m hopefully meeting up with some local bloggers if the weather cooperates, decorating the Christmas tree, and seeing a bunch of my high school friends for a group dinner!

      Oh girl, it makes SUCH a difference in the texture! If you like egg white oats, you’ll LOVE it with a whole egg…so creamy!

      I hope the weather worked out in your favor so you could have your meetup…I so wish there were more bloggers around me! Why can’t Canada be closer?!

    It’s been far too long since I’ve put a banana in mine. Love the custard texture. Mmmm… I’m hungry.

  4. Now I wish I had some butter extract at home! Must keep an eye out for that.
    I’m hopefully driving up to a blogger lunch tomorrow (but right now the forecast is calling for freezing rain so it’s not looking good….) and on Sunday, I’m going to my parents for dinner and a Christmas movie night.

  5. YUM! As far as I was concerned, oatmeal only came in packets and the oatmeal in the jar was used for baking. HAH!

  14. It took me way too many years to figure out that oatmeal that did not come in a packet was a thing—and that you could even make it in the microwave. Haha yeah…I was at least 22 or 23. I was totally missing out.

  16. You just needed an excuse to douse something in maple syrup. I completely understand. In fact, maybe I’ll add some to my beet juice. How’s that for strange? On second thought, I can’t pull the trigger on that one.
    I do not eat oats, although the Hubby does so I’ll have to tell him about this egg trick of yours. I finally convinced him to add some blueberries to his bowl of plain oats, and he thinks it’s just amazing, so a whole egg will be a mind blown moment for him. I’m going to pretend the idea was mine. You understand.

      Hahaha! I totally understand! And I also remember how mind-blowing it was the first time I added fresh fruit to a bowl of oatmeal…I was like, “OHMYGAAAAAAAAAAAWD, How have I never thought of this before?!!” Lol

    Whole eggs are my bag- I’m not sure if that made sense but I will retune I am sure and move on :). Totally loved packet oatmeal when I was young (actually I confess I still do- but this looks far superior :)!). I usually just make oatmeal with a splash of full cream milk and half a splash of thick jersey cream and brown sugar plus a sliced banana- this is looks far superior than that too (all though That should not be ashamed of itself- it
    is also pretty damn awesome) this week I am baking- creme de menthe bars- rum fruit cake with buttercream/lemon icing, and cookies- oh the cookies! Have a fantastic week my favourite red head in the world (not an understatement!) xo

  18. I LOVE adding whole eggs to oats….seriously, it amps the flavour and texture x 1000. You guys have flavoured extracts for everything- that is so awesome! Here, we only have the basics and even then they do jack all lol!

    Last night I had a Christmas pot luck where it was the most random non Christmas food ever- loved it. Hope your having a good one! 🙂

  20. Oh this sounds good. I frequently add egg whites to oats but I don’t think I have added a whole egg before. I love oatmeal though and am always up for new ideas for toppings and add ins. I have seen butter extract in quite a few recipies, it’s one I have yet to try.
