Not Your Average Chocolate Pancake!

Who out there is up for a Pancake Sunday ultimate chocolate trifecta?

Chocolate pancakes topped with chocolate mousse and chocolate chips!

Don’t you wanna just lick the screen?

Mmmm!

Now you guys should know by now that my food is anything but ordinary, so you shouldn’t be too surprised when I tell you that those pancakes are a variation of Lori’s Black Bean Pancake Stacks and they are topped with Heather’s Chocado Sauce which is actually just a blend of 1/2 an avocado, some water, cocoa powder and sweetener!

I was so excited to try out this recipe! I was all out of black beans so I followed Kate’s lead and subbed in 1/2 cup of cooked lentils, but other than that I followed Lori’s recipe to a tee. It produced four large but thin pancakes that I stacked alternating with a good spread of “chocolate mousse” on each layer.

It tasted just like I was eating a chocolate pudding cake! Pure melt in your mouth deliciousness! I’d invite you guys to try some, but I polished off the whole plate in record time and then licked the plate! Just kidding…or am I?? 😉

Well, I’m going to keep this post short and sweet! Not much on the agenda for the rest of the night except for some light reading and more green tea/Emergen-C guzzling!

    I just finished a book called ‘Lincoln’s Melancholy.’ It was about Lincoln’s life and how his depression affected his presidency. It took me forever, but it was really good!

  2. I checked out Clean Food a couple of months ago, realized I wanted to make just about every recipe and went ahead and bought the book from Amazon. Her new one, Clean Start, is fantastic too. As for a good non-food book, my book club just re-read The Red Tent. It is one of my all time favorites.

  3. Books? What are those. Hehe, just kidding. I’m currently reading Real Food For Mother & Baby, and I have a whole stack of books sitting on my desk waiting to be read.

    Your chocolate layered cake breakfast sounds divine Heather. I’ll be over next Sunday. Sound good?

    • Haha! You crack me up girlie! I know, I’ve seriously forgotten how to read in the last year or so! So hard to believe I used to average about 1 book a week when I was in school! Where did I find the time?

    I read Crazy Sexy Diet recently and liked it. For fiction, I’ve been trying to read Cutting for Stone, but can’t get into it.

    Ok I have to ask how do black bean pancakes taste? I’m a bit scared to try this recipe since i have a bit of a sweet tooth and can’t picture black beans being sweet.

    • I promise you…no beany taste at all! With the natural sweetness from the protein powder and then the stevia drops, they just tasted like lightly sweetened fluffy pancakes! Top em with maple syrup and your sweet tooth will never know the difference! 😉

  8. I just finished the Hunger Games series. Not food related, but good nonetheless. I was really taken aback with it at first but it was so well written I couldn’t stop until I was done. Can you recommend any good foodie books?

    These pancakes look amazing! When I read what was in them I blinked a few extra times. You know, this sounds so good and I am curious enough to try this! What a great way to get some much needed nutrition and some chocolate at the same time! I’m impressed.

    • I have heard SO much about that series! I’m really curious about it. I’ve heard that it’s one that’s hard to put down! So far I’ve read a few pages of In Defense of Food by Michael Polland and it seems pretty good, but I’ve been hearing a lot of good things about Intuitive Eating so I think I’m going to read that one first. I’ll let you know if I find any others tho.

      Try the pancakes girl, you won’t be disappointed!!

    Wow- black bean and lentil pancakes? Sounds different indeed, as pancakes are usually savory. I’ll have to give those a shot, as I love beans any time of day 🙂 I have yet to try Happy Herbivore’s black bean brownies, as well!

    I think you’ll enjoy Intuitive Eating. I read it and really enjoyed everything about it. It’s such a good message and one that everyone should read!

    Hmm, best book I’ve read lately is probably The Boy in the Striped Pyjamas…. so sad but such brilliant writing.
    I’m just finishing the latest Jilly Cooper as well, much as I hate to admit it 🙂

    • I’ve heard a million great things about that book. I really would like to read it and then see the movie…although I’m sure the book is better. It always is, isn’t it?

  22. Oh I really want to review Clean Food. I always review books before purchasing to make sure I will use them. You know sometimes they have ingredients that aren’t available in my area or difficult to find. Unfortuantely my library does not carry it:(
