Strawberry & Goat Cheese Pancakes

Good morning everybody! I hope you are all enjoying the middle of your long weekend! Sadly, I have to work tomorrow…so think of me while you’re out barbecuing it up with the fam, mmmkay?

It didn’t take me long to come up with a recipe for this Pancake Sunday after admiring those plump juicy strawberries I came home yesterday from the farmer’s market. Who could turn down a warm and tender pancake stuffed with fresh sweet-tart strawberries and creamy bits of goat cheese?

Not this girl!

Strawberry & Goat Cheese Pancakes: (serves 1)

  • 1/4 cup spelt flour (any flour would do, this was just the one I grabbed)
  • 2 tablespoons toasted wheat germ
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla
  • 1 medium egg
  • 1/8 cup diced strawberries
  • ~1 ounce of crumbled goat cheese
1. Pre-heat non-stick skillet to medium heat and coat with cooking spray.
2. Combine dry ingredients in a small bowl and stir together to break up any clumps.
3. In a separate bowl, whisk together the milk, vanilla, and egg.
4. Add the dry ingredients to the wet and stir until just combined.
5. Stir in strawberries.
6. Pour batter in pre-heated skillet (I made 4 “mini” cakes) and allow to cook for 3-4             minutes (shorter time for smaller cakes)
7. Just before flipping, top cakes with crumbled goat cheese 8. Cook for 2-3 minutes on         other side before serving with more strawberries and goat cheese.

These cakes are only sweetened with the natural sweetness of the strawberries. For normal taste buds, you might want to add 1/2-1 teaspoon of sugar or some stevia to the batter. I thought they were fine as is, but I’m not exactly what you call “normal” now am I?

Don’t answer that! 😉

The best part about these, other than that occasional “surprise” of goat cheese, is that they have a crisp exterior while staying nice and…er, dewy inside! Yes, dewy…I like that!

And they’re pink! What’s not to love about that?

  1. These look amazing! You know I love pancakes loaded with strawberries on top! I guess if I really needed a cheese sub, I would do with Daiya, but really I can live without it. Tony is working all weekend, so I’m cleaning and getting some work done myself. Hopefully that means we will get some play time soon. Have a great day Heather!

    I really should get on the pancake sunday bandwagon. seriously.
    I have never liked goat cheese. But I keep trying it in hope I will. I love feta though. I can’t give up my dairy….non dairy cheese just isn’t the same.
    can I come to YOUR farmers market? mmmmm

    • I wasn’t a fan of goat cheese the first time I tried it either! I think around the third or fourth, I found one that I liked and now I LOVE it! And I totally agree…I don’t mind playing around with Daiya every once in a while, but it will never hold a candle to the real thing!

  7. Goat cheese infused pancakes?! Holy balls woman, whyyyyyyyyyy do we have to live so far away!? Goat cheese is the most magical cheese of all time, and I love it paired with the sweetness of fruit! Favorite place within four walls… um… TJ’s??

    • You got it girlie! Of course after I stopped at WF and practically carved out my kidney to give the cashier, TJ’s ended up being a quick in-and-out sort of visit! Boo!

      Goat cheese is pretty frickin magical isn’t it? We seriously need to find a place that’s halfway between us and meet up one day for realz!

    i love this combo. I made a strawberry and goat cheese omelete before. The sweet and savory flavors blend so nice. Favorite non dairy cheese? I’d say almond cheese or daiya. That stuff melts great!

    • I tried the “cheddar” almond cheese once…it melted really well but I didn’t think it had much of a taste…well, before I sprinkled the heck out of my grilled cheese with smoked paprika anyway! 😉

  11. Pancakes definitely taste the best on Sundays! Not that they don’t taste just as good on other days…they just feel extra special on Sundays 🙂 These look great! I love strawberries and goat cheese. Such a great combo!

    Oh my goodness, why have I never thought to add goat cheese to pancakes?? This recipe is seriously brilliant. I was just about to say I haven’t had pancakes in so long then remembered I literally just ate some while out to breakfast, oops! Can’t wait to pick up some fresh strawbs at the Farmers’ Market this summer.

    I’ve never met a cheese I didn’t like. Personal favs include brie, mozzarella, muenster and of course goat cheese!

    • Ahhh, my dream! I would LOVE to do more with photography one day! I’ve been thinking about looking into some workshops to get a little more “know how” behind my “just pick up and shoot’ method! Haha!

    Hmm favorite cheese? I’m not actually a big cheese fan. Can I be annoying and say Nutritional Yeast? Hehe

    • Ok, I’ll have to find it in my heart to forgive you for not being a big fan of cheese…you definitely brought your cool points back up though with your love of the nooch! It’s funny, I really didn’t like nutritional yeast the first time I tried it, but now, I can’t seem to go one day without it!

      Toast + goat cheese + honey…you HAVE to try it!

    Ahh, my love for pancakes knows no bounds! And including goats’ cheese is a great idea. When I ate cheese I was a massive brie fan, and I love some of the crumbly local ones we have in the UK – white Cheshire is a good one. But I honestly don’t miss cheese much most of the time, and although I eat vegan 95% of the time, if I REALLY crave something, or I’m somewhere special and want to try it, I feel I could have it every once in a while if it came up. So I’m not saying goodbye to brie for good just yet, haha.

    • I like the way you think Anna! One of the reasons that I don’t personally believe in giving myself a label based on the foods that I eat is that I don’t want to feel restricted from anything. Like you said, if I’m somewhere special and there is a once in a lifetime opportunity to try something, I don’t want to miss it!

      I’ve only tried brie once and wasn’t much of a fan…and that’s saying something since I pretty much love any cheese that crosses my lips. I had it chilled, but I think I need to try it warm before I make my final decision…maybe baked in one of those pastries with jam! Now THAT sounds good!

I’ve just recently started getting into goat cheese and I think including them in a pancake would be amazing. my favorite cheese would have to be the rich, creamy, fattening brieeee cheese 😀

    • Hello Allison! Thank you so much! I only discovered goat cheese about a year ago and since then, I’ve been putting it in just about everything I eat! I’ve always loved how cheese can take the taste factor in a dish up a few notches!
