WIAW: The Dairy Edition

Good morning peoples! Hope everyone is having a great week so far. Thanks for the advice yesterday on entering into the “forbidden territory” at the gym. I think I’ll try to work out in the morning on most weeks…I’d say all, but when I have to be at work at 6:30am, I know there is NO way I’m getting up THAT early!

I’m trying out my first fitness class tonight with a friend of mine. We tried to get into the Bodypump class last night but it filled up QUICK! So we’re going pop a tent outside the room get there super early for the Total Body Conditioning class tonight! Wish me luck!

Anywho! It’s Wednesday and I know what you came here for. Do you know what you came here for?…to drool over my food of course!

Breakfast (6:00am)
Greek yogurt, chia seeds, black cherries, and this granola

Looking all purdy before I ran out of time and had to throw it in some tupperware and take it to work…

along with coffee on the go-go!

Snack (9:30am)
A good, but not life altering Luna Bar
…the Chocolate Peppermint Stick flavor owns my soul!

Lunch (12:30pm)
Whole wheat pasta topped with cottage cheese, hummus, sundried tomatoes, and zucchini with some (unpictured) nooch for sprinkling
and for dessert, a JAAAuicy peach and a dark chocolate Adora disk

Served cold because I’m hardcore like that…
aka too lazy to go back to the break-room to use the microwave

But you know what? Cold pasta rocks! I’ve been having the same thing for lunch all week just with different veggies!

See, this is why I don’t plan meals…didn’t I just cook up a big batch of tofu for my “lunches” this week??

Pre-workout Snack (4:00pm)
Beauty and the beast 😉

Dinner (7:30pm)
Cheesy spinach eggs and buttered toast with
cinnamon and raspberry rhubarb sauce

I’m going to be so sad when that sauce is gone!

Oh, and sorry I’m not sorry for posting breakfast for dinner for the um-teenth time!


There was also water involved in the course of the day…though not enough. I’ve been slacking again in the water department! Where’s Adam Sandler when you need him??

Definitely the Wedding Singer! Gotta love his “love” song! Lol!

  2. Ooo I love cold pasta dishes. Actually, I prefer most of my dishes cold – I even let my oats cool off before I eat them. I dunno what it is, but food just tastes better when it’s not hot. And speaking of oats, that’ll probably be my best meal of the day (it’s first thing in the morning so I haven’t eaten anything yet :P)

    And I’m definitely with you on the Wedding Singer. Fave Adam Sandler movie for sure.

    Gosh all your eats look sooo yummy. And hummus and cottage cheese sounds like a match made in heaven for me – they are teo of my most favorite foods.

    Best thing I ate today was my snack plate lunch – veggies, hummus, crackers and cheese 🙂

  5. i love all of your eats! dates are so addicting.. with pecans its just like pecan pie!
    cottage cheese is the best savory style, and i was eating the sauce by the spoonful yesterday haha 🙂 i’m so glad your enjoying it !

      Oh yeah, definitely sneaking a small spoonful here and a small spoonful there…just checking to make sure it’s still good you know! Haha!

      WHY am I wasting my time with dates and almonds when I can be having “pecan pie”?!?! I’m on this!

    I am a firm believer that anything involving chocolate and coconut should be life changing. Lunabar fail!

    My favorite Adam Sandler movie is Mr. Deeds – but that’s only because it was actually shot in my town! Crazy, right? Unfortunately I never got to meet him but a lot of my friends were actually restaurants in some of the sense. Cool beans, huh!?

    Yummy meals as always!! My favorit this week must be your breakfast! Looks amazing!

    Cheesy eggs are one of my favorite meals EVER. I haven’t had them in far too long. Now I’m totally planning to have them at some point today. Yum.

  11. I had breakfast for lunch yesterday (sour dough french toast and some prosciutto for protein) and thought of you and your breakfast for dinner WIAW posts 🙂 Breakfast is so good you should be able to eat it anytime!

    We love breakfast for dinner at least once per week! Sometimes I eat dinner for breakfast (aka leftovers)! Who says you have to follow the ‘rules’ and only eat certain foods at certain times of the day?!

  14. I don’t know why but I’ve always been afraid when it came to the Chocolate Peppermint Stick Luna Bar flavor… I’m weird when it comes to mint..

    I actually liked the choc dipped coconut one, so I must try the peppermint one since it’s your favorite! I’ll pick it up on Monday on my next grocery shopping day! 🙂

    I think my best eat of the day so far is the chocolate protein shake I made this morning. It was gooooood 🙂

    LOVE cold pasta, too! And cold pizza! It’s a whole other food group.

    And I’m the same way with meal prep–I made a big batch of quinoa salad “for my lunches” this week and I’ve only had it once! Oops. I just go with what I’m craving!

    Way to be on the breakfast for dinner 🙂

    Oh yum. I love my pasta cold. I never thought to put hummus on it. Another great thing is cold brown rice with the zucchinis and tomatoes with herbs (and olive oil).

    I gave up on getting into classes at the Y, but I’m also not patient enough/on time enough to show up early and wait, haha.

    Chocolate peppermint luna bars are BY FAR the best flavor. Best thing I ate today was toast slathered in almond butter.

  21. I love breakfast for dinner. I can’t get enough eggs scrambled, poached, fried, boiled. Love them every which way with veggies and toast 🙂 Let’s see, the best thing so far today had to be a slice of my cherry cake.

    I’m loving that huge date. Seriously it’s like 2 fingers wide mmmmmm
    I *almost* had breakfast for dinner tonight. I had spaghetti squash with cinnamon and yogurt on the side. That’s sort of breakfasty right? It was sort of rather dessert because I had a salad while I waited for what seemed like an hour for the sketti squash to cook.
    You’ll hate me but I actually dislike Adam Sandler. Too crude for me!

  25. I’m not going to lie- I really hate Adam Sandler 🙂 I do however love the peppermint Luna bars! I haven’t had one in ages, but even thinking of them reminds me of middle school, when I used to eat them all the time!

  26. I swear I had that *exact* salad for lunch minus the pasta– doesn’t hummus go SO well with greens and herbs? Oh, and nooch too 🙂
