Happy {Pancake} Sunday lovies!
I hope you are all doing well and enjoying your time off before the week starts (with or without us) tomorrow. Ugh, I seriously need to find a way to make a decent living off flipping pancakes and snapping 100+ pictures of them…ahh, but that’s a whole other post entirely.
When I woke up this morning craving pancakes (seriously, it’s like my body just KNOWS it’s overdue for syrupy cakey goodness) and started looking through the pantry for ingredients, I realized I’ve never actually posted a basic pancake recipe.
After eyeing the Honeycrisp apples in the fruit basket, it took me all of about 5 minutes to decide what to make:

Whole Wheat Pancakes with “Baked” Apple Topping: (serves 1)
Vegan AND Sugar Free!
- 1/3 cup whole wheat pastry flour
- 1 tablespoon wheat germ (optional)*
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1 modified flax egg (1/2 tablespoon ground flax + 1 1/2 tablespoons warm water)
- 1 teaspoon vanilla
- 1/2 tablespoon butter, melted (I used Earth Balance vegan spread)
- 1/3 cup + 1 tablespoon milk* (I used Almond Breeze unsweetened vanilla)
1. Heat a non-stick skillet over medium heat and coat with cooking spray.
2. Prepare flax egg and allow to set.
3. Whisk together the flour, wheat germ, baking powder, and cinnamon in a medium-sized bowl.
4. In a separate bowl, combine flax egg, vanilla, butter, and milk.
5. Add wet ingredients to dry, stir until all flour is distributed.
6. Pour batter into greased skillet (I made 4 silver dollar pancakes) and allow to cook about 2-3 minutes per side or until crisp and brown.
*If omitting the wheat germ, also omit the extra 1 tablespoon of milk
“Baked” Apple Topping:
- 1 medium sized sweet apple, diced with peel (I used a Honeycrisp)
- water
- 1/2 teaspoon cinnamon
1. Place diced apple pieces in a microwave-safe bowl and add just enough water to cover the bottom of the bowl.
2. Cover top of bowl with plastic wrap, leaving a small vent on one side to allow steam to escape.
3. Cook on high for approximately 1 minute, drain, and sprinkle with ground cinnamon.

Cinnamon-Maple Walnut Syrup
(1 tablespoon walnut butter + 2 tablespoons maple syrup + 1/2 teaspoon cinnamon)

As always, these pancakes look wonderful! I make a similar “baked” apple topping for my oatmeal sometimes – except I add in some maple syrup too.

I think you would be amazing at that! Have you been to The Pancake Pantry in Nashville? I’ve been there once before and had the sweet potato pancakes (so long ago)! That plate looks like a perfect plate of fall flavors! That’s how you celebrate a beautiful fall morning!

Ohhh man those pancakes look EPIC. I’m love love loving honey crisps. I Got some from the store and they are MASSIVE but I’m not complaining 😉 I’ve been eating mine with almond butter but I bet they’d be delicious over pancakes!
I know what you mean! It’s like “the season of the mutated honeycrisps”!! Every time I’ve been to the store, I have to dig for the “smaller” ones aka, the ones that are ONLY the size of my hand instead of my HEAD! Haha!
