Hope you all had a FANTASTIC weekend. Mine was full of holiday dinners and mucho time spent with family and friends…gotta love this time of year! 🙂
So I’ve got a little something that’s guaranteed to perk up your Monday, but first things first…let me tell you about a cookbook that I’ve been enjoying for the last couple of months.
Toward the end of summer, I was contacted to review a “hot off the press” vegan cookbook written by Christy Morgan, a vegan macrobiotic chef and cooking instructor. If you want to learn more about Christy, check out her blog The Blissful Chef.
I’ll be honest, when I first received the cookbook, I was a bit overwhelmed…but in a good way. Out of the 175 recipes in the book, I wanted to make, oh…about 100 of them! There were SO many fantastic recipes to try covering many different cooking aspects that I was curious about…gluten-free, raw, and ethnic flavors…all made into nourishing vegan meals.
I loved the way the recipes were organized too.
Each section was divided seasonally to help make the most of the freshest ingredients.
When I finally narrowed down the recipes, I decided on about 5-6 to try first. One of them being the Millet-Black Bean Burgers
I’ve always loved playing around with different combos for homemade veggie burgers and I knew millet made a good filler from making my Edamame-Millet Burgers, so I was excited to try a version incorporating so many more veggies and textures.
The recipe is a large one, but they freeze really well…perfect for making lunches during the week!
Mine came out a little crumbly…I think I should’ve added a bit more of the liquid from the beans…but after adding a little oil and sqooshing (that is totally a word btw) them a bit, the fried up well in my skillet.
The texture and flavor of these vegan burgers is incredible…sure to satisfy any lover of burgers…vegan or not!
And of course, since I tried a savory recipe, I had to have a little balance and dabble with the sweet stuff!
I’m not a huge dessert person (I find that the more sweets I eat, the more sweets I want…and since I can’t say no, I usually end up with quite the tummy ache) so I figured this pumpkin hot chocolate would be perfect for me…
Plus, it has pumpkin in it…how could you go wrong there?
Well, the answer is…you can’t!
Unbelievable! Pumpkin spicy and perfectly chocolately!
I swear you guys, it was just like a decadent dessert…only in liquid form. Mmm!

My favorite vegetarian meal is a portobello mushroom sandwich (or burger, but it uses a portobello mushroom instead of meat).
This probably sounds lame (my husband and I are recently transitioning into a vegan lifestyle so a lot of this is new to me, which is why I would love this cookbook!) but my favorite thing these days is just a veggie sandwich piled with hot peppers. I haven’t gotten too elaborate in the kitchen yet but I will get more comfortable with it as we complete the transition and experiment more with cooking!
Oh my gosh that sounds like the perfect dessert. The pumpkin probably makes it a little less sweet and sugary, which is great for avoiding that sugar coma and the continuous desire to eat more sweets.
I love vegetarian pumpkin chili, especially during the holidays!
I love my mom’s vegan split pea soup. so warming and filling and delicious with homemade bread!

I don’t know if I could pick one favorite vegan meal, but have you heard of Terry Walters (http://terrywalters.net/)? I have her Clean Start cookbook, and my most memorable vegan meal was her polenta pizza with kale and maitake topping. It was more work than I usually put into my meals (hello, college kid), but so fun to show my family how creative vegan cooking can be! I would LOVE the chance to try some of theses recipes as well — thanks for the chance!
Veggie chili is one of my favorite veg meals for sure!!! This cookbook sounds delightful, love the pumpkin hot chocolate!
My favorite these days is a vegan French onion soup.
4 large onions
12 cups of veg stock (I often freeze)
soy sauce (or tamari)
ground mustard seeds (or powder)
salt + gound pepper
and a few pieces of hard/stale bread or toast for the bottom
My favorite vegetarian meal so far has been the Beans and Greens in Complete Idiots Guide to Plant Based Nutrition. I am a new vegetarian, and looking for good easy meals all the time!!! This cookbook sounds great!!!

i made a version of these tempeh tacos that were amazing. i LOVE tempeh (have you made tempeh bacon? because you should) so tacos. tempeh? yes please.

I love vegan pad thai. It’s one of the best things to make for a student like me, especially during exam time!! I’ve seen this cookbook reviewed on a few other sites with nothing but positive things said about it, and I hope I can use it for the Holidays!! 🙂

My favorite soup is Black Bean Soup with Kale and Rice from the “Vegan on the Cheap” cookbook by Robin Robertson. It is made in a crockpot so super easy and yummy!
My fav vegan meal is Isa Chandra’s Chickpeas Romesco (from veganomicon) served with green quinoa – yum!

My favorite vegan/vegetarian meal is Chelsey’s “Creamy” Rotini. I’ve made it 3 times so far and I even made it for my Grandma when she came down. She loved it! My favorite vegan meal is a new one….vegetable pot pie! Never having found a recipe that was tasty or satisfying, I set out creating my own. A little of this, a bit of that, plus lots of colorful veggies. I will say that nutritional yeast seems to be the secret to all things vegan! Now I don’t know how to top myself! Ha!

I love how her recipe book is broken up into Seasons! What a great concept! Living in the Northeast, I definitely eat/crave different foods based on the weather. My current favorite dish is Sweet Potato Enchiladas (http://allamericanvegetarian.blogspot.com/2011/10/sweet-potato-enchiladas.html). Surprisingly delicious combination of ingredients. My favourite vegan dish at the moment – white bean and black bean soup from Vegetarian Magic by John Nowakowski. You make each soup seperately then put some of each soup on each side of a wide bowl and it is visually very nice and it is very tasty and healthy.
my favorite vegan thing to have right now is the whole foods vegan curry chicken salad, i put it in wraps or make sandwiches with jalapeno, daiya, tomato, and sprouts. sooo yummy!

I’m a plain and boring eater BUT I really just like plain baked tofu, trader joe’s original hummus, spinach, and tomato on arnold’s healthy multigrain bread –I’m pretty sure it isn’t considered vegan because I don’t think the bread is, but it is vegetarian =)
