I don’t know about you guys, but there is just something about the combo of warm chocolate chip cookies you can get at in a Christmas cookie gift box and a cold glass of milk around the holidays…
Especially if they are soft,
chewy,
and COVERED in syrup!
Yep, because you know how I roll…I eat my cookies for BREAKFAST!
Chocolate Chip Cookie Protein Pancakes
Prep Time: 5 minutes
Cook Time: 10 minutes

Ingredients (Serves 1)
- 1/3 cup whole wheat pastry flour
- 1 Tablespoon coconut flour
- 1 scoop (30 grams) vanilla protein powder (or another tablespoon of coconut flour)
- 1/2 teaspoon sodium-free baking powder
- 1 egg white
- 1/2 cup unsweetened almond milk
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon butter extract (optional)
- 2 Tablespoons mini chocolate chips, divided.
Instructions
1. Heat a non-stick skillet to medium heat and coat with cooking spray.
2. Combine flours, protein powder, and baking powder in a medium-sized bowl.
3. Whisk egg white until light and frothy.
4. Combine egg white, milk, and extract(s).
5. Add wet ingredients to dry ingredients and stir until flour is incorporated.
6. Fold in 1 tablespoon of chocolate chips into batter.
7. Spoon batter onto skillet, forming 3 medium-sized pancakes.
8. Cook 5-6 minutes per side or until golden brown with crisp edges.
9. Plate and top with the other tablespoon of chocolate chips (or more…what the heck, it’s the holidays!) and drizzle with maple syrup.
Nutrition facts* with 2 tablespoons chips but without syrup:
*If you want to lower the calories a bit, try using a lower calorie flour like oat flour (oats ground into flour using a food processor)…that way you don’t have to skimp on the chocolate! π
But seriously, what’s a calorie when you’ve got a plate of these babies

Yea, those look amazing! You cannot go wrong with a chocolate chip cookie (or in this case, chocolate chip cookie pancake). While I never turn down a cookie, I think I prefer chewy chocolate chip cookies best!

How do you get your pancakes to look so pretty? Mine are always tasty, but a mess. Do you do multiple ones per pan or just one?

I never had much luck cooking them all in one pan…before I got my electric griddle, I used to use a separate skillet for each cake just to give myself plenty of room to maneuver around the cakes without bumping into the others. The last thing you want is to flip your pancake over onto another one…not that I would know or anything…just figuring! π

Mmm I wish this post had been up earlier this morning so that I could have made these for breakfast! Chocolate chip cookies are my all time favourite cookie – especially when they’re chewy and just slightly crunchy.
Mmmmm… I love fancy flavors, but at the end of the day the classic chocolate chip is my favorite. Same with cookies. I like them just a little underdone in the center.

YUM! I love Christmas cookies. I plan to do some baking this week but since one of our neighbors dropped some cookies off this afternoon, I was able to enjoy cookies a bit early. π

I like chocolate chip cookies to be chewy…chewier the better.
Actually, let’s go ahead and say GOOOOOEY.
I also prefer them not to be buttery, but milder, made with shortening or oil. Just in case you were wondering. π
Oh yeah, my favorite is when they’re actually almost raw in the center…served straight from the oven…with a bowl of ice cream…and a side of Lactaid! π
I want some ooey gooey chocolate chips right now. I haven’t had an appetite all weekend, but these sound amazing right now!
