Oh ma’ darlin…
Oh ma’ darrrrrrrrrrrrrrrrlin Clementine!
You were lost all over summer…
Now it’s winter…
And your MINE! 😉
I don’t know about you guys, but once I spotted those little “cuties” in the produce section at the grocery store a few weeks ago, I haven’t been able to get enough!
It only makes since that I found a way to pop them into some pancakes, right?
So what goes well with citrus?
Chocolate CARROTS of course!
Hmm, straight from pan-COOKIES to veggie-CAKES?…I guess I HAVE always been to one extreme or the other! 😉
And you know what else goes well with citrus?
Almonds!
Extract, butter, slivered nuts…it’s ALL good!
But you wanna know the best part about these ‘cakes?
I made them gluten-free! 😀

Hello Mr. Beta Carotene!
These were by far the BEST carrot pancakes I’ve ever made!
Perfectly moi-…NOT DRY in the least!
FULL of zingy citrus flavor!
And would you just look at how THICK they are?!
I’ve made them twice in TWO days and still can’t get enough!
Seriously, you need these in your life!
What’s your favorite winter fruit?
I love pomegranates but persimmons are my FAVORITE!
girl. you are a pancake MASTER!
if you looked up the word NOM NOM NOM this would be under its definition.’
seriously, i need a pancake ebook from you!
I love clementines too – I’ve been eating at least 1-2 per day lately! I’m definitely going to be trying these. 😀
Clementines are easily my favourite winter fruit! I never would have thought to combine them with carrot, these look so good!
Oh my, clementine. These pancakes look fabulous.
Does a Pancake-Queen-Master-Genius-Award exist? If so, you’ll be the one and only winner!!! I love pears too. Pear Pancakes? Happy Sunday girl!!
Awww, thanks Lucie! And consider the pears duly noted! Hmm, the wheels are already turning! 😉
You know I’m on board with anything that could potentially make me turn orange (that doesn’t involve getting spray painted naked in a room of women… that sucked).
I really like that you left the carrot shreds in the cakes. Texture to the max!! Now, when are you coming to make me these? 😉
Natural tanning TOTALLY trumps the embarrassing chemical kind…especially when you can get it by eating something this delicious! 😉 And I’ll talk to the boy, but I’m pretty sure we’re making the trip the last weekend of the month! Yay! I get to see my Lauraaaaaaaaaa! 😀
OMG – WANT!! I can’t believe how thick they are!!!!
I know, right? I couldn’t believe it myself! And I am SUCH a sucker for thick and hearty pancakes! 😀
OOOOOOOOOOOOOOOOMMMMMMMMMMMMMMMMGGGGGGGGGGGGGGG. YUUUUUUUUUUUUUUUUUUUUUUUUUUUUUUUUUUUUUUUM. That is all.
Hahaha! So glad to see they get your approval! 😉
Such a good idea! My mum puts orange zest in carrot cake but I never thought of adding it to pancakes!
I’m drooling! These sound perfect. Plus, like Laura said… it will keep my orange tint going strong. 😉
Haha! Love it! And yep…just checked…I STILL have oompa loompa hands! Lol
Wow this looks really really GOOD!
Fabulous as always. I really need to buy some of these other flours so I can start making some of your pancakes. I love the use of carrots and clementines. Tasty and beautiful.
Aww, thank you Meghan! And just fyi, for these, you could totally use any kind of flour…so get on it! 😉
Girl, I dont know how you do it.. but DAMNNN you impress me day after day with all these pancake recipes!!
Haha! Thanks girlie! You’re totally making me blush right now! 😉
Love that these are gluten-free AND involve one of my favorite winter fruits!
I made these this morning – they were amazingggg! Definitely hit the spot after my work out 😀
Aww, yay!!! I’m SO glad you liked them! And oh yeah, there is NOTHING like a plate of pancakes after a good sweat sesh! Woo hoo! 😀
I’m still working my way through the Band Fruit Fundraiser oranges and tangerines (which are delicious in waffles, so I can easily see these pancakes). I think I’ll try them in a pancake next.
Thanks for the inspiration!
