What the heck, three days into March and I’m already talking like a leprechaun?!
Anywho!…Each week, I donned a little brown uniform, complete with a skirt, vest, and a sash FULL of patches painstakingly sewn on by my mother.
I was a “Brownie”
Along with my fellow scouts, I did my best to be honest and fair, friendly and helpful, considerate and caring…
Until it came time to earn that badge for cookie-selling.
Then, all bets were off!
The troop masters were sure to teach us well.
Stare them down
Politely introduce yourself.
Reel them in with those sad puppy dog eyes
Tell them about our mission to do good.
Prey on their weakness for sugary delights
Ask them if they’d like to contribute to our cause.
Little did I know that those deeds would come back to haunt me in my adult years….ha, and some people don’t believe in karma!
Every year, it’s the same story. I come out of the grocery store and get totally blind-sighted. It’s almost like she knows, but I can’t do it, I can’t let her get to me…because while some of you may be able to practice restraint around such sugary treats, over the years, I seem to have developed a little problem…
And well, as much as I’d LOVE to stand there and convince myself that my favorite green box of crack goodness is calorie free and that a serving size is an entire SLEEVE, it is most definitely NOT!

So this year, I decided to make amends…
To right myself with the cookie gods…
Ok, I’m lying…I really just wanted an excuse to slather something else in
Healthy Chocolate Sauce. 😉
Thick, fluffy, melt-in-your-mouth, not exactly* laced with crack cookies PANCAKES!

Thin Mint Cookie Pancakes

Prep Time: 10 minutes
Cook Time: 8-10 minutes
Keywords: fry breakfast high fiber high protein GLUTEN-FREE GRAIN-FREE VEGAN vegetarian buckwheat flour cocoa powder Pancake Sunday
Ingredients (Serves 1)
- 2/3 cup unsweetened almond milk
- 2 teaspoons apple cider vinegar
- 1/4 cup buckwheat flour, ground from groats
- 3 Tablespoons (30g) hemp protein powder (optional)*
- 2 Tablespoons unsweetened cocoa powder (I used Hershey’s Special Dark)
- 1/2 teaspoon sodium-free baking powder
- 1/8 teaspoon xanthan gum
- 1/4 cup unsweetened applesauce
- 1/2 teaspoon mint extract
- 5-7 drops liquid vanilla stevia (I used NuNaturals)
*If omitting, reduce almond milk to 1/3 and vinegar to 1 teaspoon.
Instructions
1. Preheat a non-stick skillet or griddle to medium heat and coat with cooking spray.
2. Combine almond milk and vinegar and allow to set for 5 minutes.
3. In a bowl, combine flour, cocoa powder, protein powder, baking powder, and xanthan gum, stir with a wire whisk.
4. To the almond milk/vinegar mixture, add applesauce, mint extract, and stevia and stir well.
5. Add wet ingredients to dry ingredients and stir until combined.
6. Spoon batter onto skillet, forming FIVE medium-sized pancakes, and cook for 4-5 minutes per side (batter will not bubble).
7. Plate and top with several servings of Healthy Chocolate Sauce! 😉
**Edited to add: Any protein powder would work for this so long as it weighs the same. And for those of you out there who AREN’T gluten-challenged, oat flour would be PERFECT (it has the same fluffiness that fresh buckwheat flour has)!

I actually used to LOVE selling girl scout cookies. I remember walking around door to door with my sister. This will age me a bit, but that was before the girls set up outside of grocery stores (or at least no one did that in our area at the time). Tagalongs were me favorites! Peanut butter and chocolate heaven. Since none of us can have girl scout cookies now, I think it’s time for me to start making some gluten/dairy free clones. Tony and Max would go crazy over these pancakes! Thin mints are their favorites!

Don’t worry about aging yourself, we never set up outside of grocery stores either when I was a scout. And for all our school fundraisers, we still went door-to-door too! And seriously, you’re the Non-Dairy QUEEN! I’m surprised that you haven’t already made your own GS cookies! You could totally do it!
When did you say you’d start your delivery service?! Not just for breakfast but lunch, dinner and snacks, too, that is. Though, yes, mostly pancakes ;).
Seeing as girl scouts around here don’t sell cookies – laaaame, Germany – I have no favourite but thin mints sound good. And there’s always peppermint chocolate as a replacement, I guess.

And don’t worry about the questions…actually, I should have included it in the post, but I forgot…brown rice protein powder can be a little tricky since it’s finer and ends up weighing more per scoop, but if you try it, just be sure to watch the amount of milk you use…you might not have to go with the full 2/3 cup. And oat flour would be perfect (I love how light and fluffy it is…just like the fresh ground buckwheat flour!)

I just squeeled with JOY!!! It makes me sad that Girl Scout cookies are so unhealthy… but they are also not gluten free! I mean… I don’t mind to splurge every now and then, but I can’t compromise the gluten. So… wanna make me some gluten free samoas??

I was a Brownie back in the day too. I actually stayed in the program until I was a Ranger when I was 17. Haha yeah I’m a dork. But really I just liked the cookies. 😉 Here in Canada we only have 2 kinds: the thin mint kind and chocolate or vanilla sandwich cookies. The thin mint kind are the best! But it’s kind of lame that we don’t get the variety you guys have.
What?! No Tagalongs? No Do-si-dos? No SAMOAS?! Total blasphemy! You should really consider writing to your government officials about this! 😉 Lol
Aww, I probably would have stayed with the scouts at least until middle school, but my parents decided to move and we never looked into transferring to another troop.

I almost fell out of my chair when I saw the Thin Mints actually had crack in them. I suspected as much and you completely confirmed my suspicions. Bad girls scouts bad, and have you seen the boxes lately. They are half the size they used to be and double the price. Again I say bad girl scouts bad.
These pancakes on the other hand look ridiculous. Chocolate and mint together equals match made in heaven. I have no idea how you come up with this stuff. I bow before you Pancake Queen.

OMG, I’m drooling all over my desk at work. I ran out of cocoa powder a while back and keep forgetting to buy more. This is definitely a good reason for it!

Oh My goodness Heather. This recipe is un-freaking-believable!. It has got to be because of the crack. Please make this for me.
So, about a year and half ago (or some time when I lived in Austin…it is all becoming a bit blurred) I made Thin Mint Brownies. They were in NO WAY healthier, just, you know, delicious. I actually am not a huge cookie person, because I like soft and chewy treats (hence I turned the flavor into brownies), so a chocolate mint pancake? I might be able to handle that.
Favorite girl scout cookie? I think I like Tagalongs. But I don’t know…there is something to be said for the good, old fashioned shortbread. And I mean, those new(ish) lemon ones are fantabulous. And Samoas? Frozen? Have you ever tried those??? Oh, and let’s not forget the straight up peanut butter cookies (as opposed to patties). Do they even still make them?
OK, maybe I’m a liiiiittle bit of a cookie person after all.
I’m definitely more of a chewy treat kind of gal myself…brownies, blondies, slightly underdone cookies? *swoon* Thin Mints are one of the few exceptions…especially if they’re frozen! Ohh, I’ve never tried a frozen Samoa…WHY did you have to tell me that?! And the only peanut butter ones I’ve ever seen are the Doe-si-dos…which, even with my PB obsession, I’m not a huge fan of…I know, shocker!
Girl. Your pancakes are INSANE. I love that they’re so healthy but indulgent looking! I can’t believe that chocolate sauce is just cocoa powder + water + stevia?! How do you get it to look so perfectly glossy? Love.

Yeah, the hemp protein powder is still kind of new to me…I’ve realized it’s not easy working with vegan protein powder…completely different thank using whey protein. You could always leave out the cocoa powder…if you’re ok with the earthy flavor of the powder, but so far, I haven’t experimented enough with it to see what else would work well. Sorry, love!
