I was super excited when I saw that Jenn was going with the GREEN theme for
What I Ate Wednesday this month because I just happen to have a fantastically GREEN recipe for you today! But you’ll just have to keep reading for that!
Since it’s been a while since I’ve done a “real” WIAW post, I decided this weekend I would take a day and photograph every.single.morsel that went between my chompers…
So heeeeeeeere’s Johnny the eats!
With my last #strangebutgood fresh in my mind, I woke up Friday morning and knew EXACTLY what I wanted for breakfast…
Crispy PB & Pepper Omelette topped with tomatoes and CILANTRO with toast and spicy pepper honey!
A few hours later, I grabbed a little snack before heading to the gym…
A PERFECTLY ripe banana…Sorry, but no GREEN here…gotta have a little freckle action going on! 🙂
Once I got back home, I was STARVING…and well, since I went out and bought MINT leaves for the SOUL purpose of garnishing Sunday’s pancake plate, I decided to put some of the rest to good use…
LOOK, I made another waffle!! 😀
But not just any waffle…a MINT Chocolate Chip PROTEIN Waffle based off these pancakes from last summer! Filled with SPINACH and riddled with chocolate chips, this plate was the epitome of indulgent and healthy balance…and SO filling!
As I went on about the rest of my day, I grazed on some plump ripe grape tomatoes…
Hey, what goes better with GREEN than a little RED? 😉
I’m not sure what it is, but I’ve had the most intense craving for tomatoes lately! I mean seriously, I picked up this TWO POUND carton at Sam’s last week, and it only lasted me THREE DAYS! 😯
I’ll be honest, I was definitely feeling “funky” come the end of the night (bah winter weather) so instead of cooking, I decided to whip up a quick wrap for dinner…
Flatout wrap with no-salt added turkey meat, SPINACH, coleslaw mix, and the last of my cranberry honey mustard (I may or may not have shed a tear after my last bite) with a side of SNAP PEASÂ (love that crunch)!
And I washed it all down with a little new-to-me beverage…
Seriously, it’s been a LONG time since I’ve had a REAL Dr. Pepper, but from what I remember, the flavor is right on!
A couple of hours later, I got a mad craving for something sweet (I blame this girl and her February foodporn baking adventures), and well, this happened:
Half a container of Arctic Zero topped with PUFFINS, Wild Squirrel almond butter (review coming soon), and of course, some “healthy” chocolate sauce! 😉
I had planned on going to bed not long after this delectable little treat, especially since I was perfectly satisfied, but alas, I was attacked by the insomnia monster and ended up staying up until FOUR AM!!
A few snacks that happened in those wee hours (there I go with the leprechaun talk again!) of the morning?
I TOLD you my tomato cravings have been insane!
I finally ended the night…er, day? (rightfully) with a little green…
Glenny’s Crispy Wheat Cakes and more SNAP PEAS!
Annnnd well, there may have been a dip or two…or three into the infamous ginger chew bowl too! 😉
So there ya have it…my delicious GREEN eats for the day!
Oh, but don’t think for a MINUTE that I’d leave you hanging on that waffle recipe! 😉
Mint Chocolate Chip Protein Waffle

Prep Time: 5 minutes
Cook Time: 7-8 minutes
Keywords: waffle iron breakfast high protein spinach oats protein powder
Ingredients (Serves 1)
- 1/3 cup oat flour (ground from rolled oats)
- 1/2 scoop vanilla protein powder
- 1/2 teaspoon sodium-free baking powder
- 1/3 cup unsweetened almond milk
- 1 cup spinach, packed
- 5-7 mint leaves (or 1/8 teaspoon mint extract)
- 1/2 teaspoon vanilla extract
- 5-7 drops liquid Stevia (or other sweetener)
- 1 egg white
- 1 Tablespoon mini chocolate chips
Instructions
1. Preheat waffle iron and coat with non-stick cooking spray.
2. In a medium-sized bowl, add oat flour, protein powder, and baking powder and whisk to combine.
3. In a small blender, combine remaining ingredients (except chocolate chips) and blend until smooth.
4. Add wet ingredients to dry ingredients.
5. Transfer batter to waffle iron, sprinkle the top with chocolate chips, close lid and cook until done.
6. Serve drizzled with “healthy chocolate sauce” (cocoa powder + stevia + water to thin)
It’s magically delicious NUTRITIOUS!

Don’t judge but my latest memorable green[-turned-brown] eats have been avocado brownies. Avocados used to be a major fear food of mine so turning them into something I knew I’d enjoy – hello, brownies – was a sneaky way to overcome that fear.
Once I can finally get fresh spinach around here again – can you say deprivation?! – I’ll be incorporating it into just about every meal. And that waffle? Gaaah, I just had breakfast but it shockingly lacked greenery so I wouldn’t say no to one of those. Just to get my greens in, obviously ;).
Tomato cravings have been through the roof for months, too, and mushrooms dipped in salsa have been happening almost daily.
Oh girl, I saw your post and I’m SO proud of you for conquering your fears! And you get absolutely NO judgement from me…like I mentioned in my comment on your blog, avocado makes for some of the BEST baked goods! It’s just like using butter…only healthier! 😀
Mmm, I LOVE mushrooms with salsa! Actually, if I hadn’t eaten them all, I’d totally run in the kitchen and do that right now!
I SERIOUSLY need a waffle iron in my life. I can’t get over how green it is! You can bet that’s how I’ll be christening my new appliance once I’ve moved into my apartment and can buy one.
Mmkay, I’m gonna need you to come to my house here in michigan and prepare for me waffles and pancakes. I can’t keep salivating on my keyboard each morning at work. Aww, thank you Aparna! I take that as a HUGE compliment! I’m always trying to show people (ie, my PARENTS) that healthy food doesn’t have to taste bad! But seriously, I think if I could just blindfold them for a second, they’d eat…AND LIKE…just about anything! Lol

Haha, that title could have so many meanings. LOVE the look of those waffles. Chocolate mint is amazing and ten times better when it’s green! I had an insomnia monster situation last week too. I was up until almost 5, it was incredibly frustrating.
Ouch…no fun at all! Especially coming from a “day walker” like yourself! 😉 I’m kinda wondering how my sleep schedule is going to fare when I’m out of work after my surgery…hopefully it won’t be TOO hard to get back into the swing of things afterwards.

Happy GreenWedday! Hm, I am with you on the tomato craving. Actually, I eat them with every meal. I might turn red instead of green for this month. That waffle looks sooo good!! But really, stop. As Laura says, I have NO space NOR money for a waffle-iron! I don’t even have a pancake pan? Does that exist at all? I mean of course not here in lamy Switzerland. But maybe the genius Americans/Canadians did invent it. Then I could sneak one over the border when I am over in June, hehe. Happy WEDNESDAY!!

Yeah, I’m hoping with all the green eats, I’ll counteract the lovely orange glow I’m still sporting from my pumpkin obsession over the last few months…green and orange make brown right? Cause I’m totally going for “tan” not “oompa loompa”! Bahaha!

Oh my gosh, FINALLY someone who shares my waffle making agony!! This is only the FOURTH successful (read WHOLE) waffle to come out of my waffle iron…and I’ve had the thing for almost a year now! Squeee! That mint chocolate chip waffle is PERRRRFECT for St. Patty’s Day! Now, all I need is a waffle maker. Hrmphh. It’s been on my must-buy list for…oh, forever, so I shed a little tear inside every time I see a drool worthy recipe like this. I’m saving up my ha’pennies, and hopefully I’ll be able to make it happen soon! Until then, I’ll settle for that PB and pepper omelet, because THAT looks equally as amazing! I’ve never paired peanut butter with Mexican flavors, but guuurl, if it contains peanut butter, I’ll like it. And when it looks as good as this, I’ll LOVE it! 😀

Oh girl, I wasn’t too sure about the combo at first, but with the fruity salsa, the pb just WORKED! I had it for breakfast THREE times last week! Lol
I JUST got my waffle iron over the summer but after SEVERAL failed attempts I
threw it in the back of the cupboardconveniently tucked it behind the pots and pans until the other day when I got a wild hair and ended up with the most amazing pb and banana waffles…with chocolate sauce…and bacon…of course! 😉 Haha! If you are (sadly) without a waffle iron, you should try the pancake version that I made over the summer! I have to admit that I’m not a fan of mint and chocolate…. *Gasps of shock* I know, I know. I just never liked York Peppermint patties, or Andes Mints, or even Mint Chocolate Chip ice cream. It’s alright to be completely ashamed to call me a fellow food-lover. Haha. My whole family would be right there with you. They love everything mint and chocolate, especially those Girl Scout Thin Mints. Ya, I’ll never be one to steal a cookie from THAT box. Lol.
That said, your waffles look pretty darn delicious in all of their greenness. But that Arctic Zero topped with puffins would definitely be my thing 🙂
Haha, don’t worry…you’re not exiled just yet! I’m actually pretty picky when it comes to my chocolate/mint combos…I’m not a fan of peppermint patties and mint choc chip ice cream is not a fave, but HAND OVER that package of Andes mints! Lol
And the AZ with the cereal was seriously sooooo good! But not quite as delicious as my combo the other day…strawberry AZ with PB toast crunch…it was like eating PB&J!! Mmmmm!

I have been loving on anything mint lately, extra points if it’s green! You also rekindled my love for healthy chocolate sauce so I have been consuming an awful lot of that lately…;-).

I’m pretty sure we would come up with the most amazing late night munchies. I cannot even tell you how often the raw mushrooms come out (with mustard? with ketchup? with BOTH?!?!). Any previously roasted vegetable is fair game, too. Can we talk about the other night when I just went ahead and ate a whole, roasted, sweet potato at 3AM???

Ahhh! And THAT is why I love you! Here it is 1:30am…and I would KILL for some steamed spaghetti squash! Of course, my good ol’ gourd is sitting on the countertop UNCOOKED! I’ve got to bite the bullet and throw him in the oven tomorrow before he starts sproutin’! I messed up when I bought the poor dude…I usually microwave my squashies, but he’s too big and won’t fit!
