But today is not the day to talk about my fashion sense (or lack thereof). Today is the day to talk about FOOD! And since I’m finally correcting one of my recent contradicting confessions, this foodie is here to celebrate in style!

So let’s break out the party hats, tip our glasses to Jenn, our hostess with the MOSTEST, and get things shakin’…and if you’re not already feeling tipsy, you’ll have guessed by my post title where I’m going with this! 😉

With the start of this month, I kicked my seasonal denial to the curb, cracked open my first can of pumpkin, and got started on my summer glow winter tint. And while I am now PROUDLY sporting a pair of orange palms, pumpkin isn’t the ONLY one that is to blame thank for my four-week transformation.

Allow me to introduce you to Fifty Shades* of BETA CAROTENE…

Yogurt Bowl with Banana Persimmon & Granola

Greek yogurt (I promise it’s under there) topped with banana, persimmon goo* and Meghan’s cranberry granola mixed with cinnamon roasted chickpeas…oh and hemp seeds because well, I’m infatuated at the moment.

Yogurt with Peanut Butter Persimmon & Granola

Cottage cheese topped with peanut butter, persimmon goo, and more cranberry granola…and a few chia seeds because well, what the hell.

Peanut Butter & Persimmon Toast

Seedy toast topped with crunchy peanut butter, persimmon goo…and cinnamon because well, DUH I’m a food blogger!

Kabocha & Coconut Chobani

Roasted cinnamon kabocha squash with coconut-flavored Chobani…because well, food is more fun when dips are involved!

Egg in a Squash with Roasted Zucchini & Tomatoes

Butternut squash stuffed with kale and a DOUBLE YOLK egg…with a side of steamed zucchini and tomatoes because well, sometimes I like to pretend it’s still summer!

Tuna Melt Squash & Kale Chips

Butternut squash tuna melt (yes, I’m a genius) with a side of crispy kale chips…because well, I have finally mastered the art of NOT burning the damn things!

Pumpkin Yogurt with Granola & Goji Berries

Pumpkin Pie Yogurt topped with a new-to-me sprouted lentil granola (with goji berries and chocolate covered apple pieces…TJ Maxx score!), and puffed millet and hemp seeds…because well, I have decision-making problems.

Pumpkin Egg & Peanut Butter Sandwich with Chocolate Sauce

Pumpkin egg “puff” (pumpkin + egg + microwave) on cinnamon raisin toast with peanut butter…and healthy chocolate sauce because well, everything’s better with chocolate!

Pumpkin Yogurt with Trail Mix

Pumpkin Pie Yogurt topped with HOMEMADE trail mix: cinnamon and plain roasted chickpeas, soy nuts, peanuts, peanut butter chips, cinnamon chips, dried cranberries, and dried blueberries…because well, you know, I’m a genius! 😉

    Everything looks delicious as always and I am sooo jealous on the kabocha – I wasn’t able to find any in the last few weeks and my orange palms are disappearing slowly – gah!
    I love the microwave eggy thing – I just made one yesterday and I can not believe how easy it is and pretty it turnes out!

      Thanks, Fran! Yep, I actually had roasted the butternut at the beginning of the week during a little food prep. All I did was heat the oven to 350, filled it with the “stuffings” and let it cook until the egg was set or the cheese was melted…easy peasy! 😀

    Ive actually JUST started getting into the winter food mode, the weather here has finally turned colder. Ive been enjoying my fair share of orange as well! Although I must say, I am far more interested in soups and breads right now. I haven’t had it yet, but I am dreaming of a huge bowl of chili and corn bread, or sourdough, or ok, any kind of bread really. Give me them carbs!!

      Haha! Love it! And you know, I just started getting into soup mode last week…and now you’ve totally got me craving some chili in a bread bowl! Omg, I haven’t had a bread bowl in YEARS! I think I may have to make another trip to Panera soon! 🙂

    I’m actually a little sad after reading this because I literally do not have enough time in my day or space in my tummy to eat EVERYTHING HERE RIGHT NOW. Seriously. Persimmons are a crack-fruit for me, and I’ve never even thought of using them in a spreadable form!

      Why aren’t I a teacher? Umm, because I hate kids! Correction: I hate OTHER PEOPLE’S kids! Haha! And I know what you mean, my creativity is definitely a roller coaster of a ride, but I think that’s completely normal. I love when people post recipes like that and I’m immediately like “why didn’t I think of that?” That’s when you know I idolize you. But for real sistah everything looks amazing. But it didn’t really matter since you had me at The Magic School Bus picture!

  16. I have so many comments… I totally forgot about The Magic School Bus! MY little sister was obsessed. Your face in the bus… classic. One might say magical, even. 😉

    I’ve never gotten a double yolk. I think that’s bullshit and I’m lodging a complaint with my local chickens.

    Orange is the best. I eat it at nearly every meal (no kidding), yet I am NOT ORANGE! WTF?! At least I have my spray tan in 10 days…

      I’m really surprised you haven’t gotten at least a hint of a tint (haha, made a rhyme!)…I’ve seen the way you’ve been putting down sweet potatoes and squash! Haha! And if you can believe it, I got TWO double yolks from the SAME package last week…and I got them at Costco! 😯 I seriously feel like maybe I should play the lottery or something! Ha!

    I tried a persimmon once for the first time last year, and I didn’t really like it very much….I guess it wasn’t ripe enough, because it definitely didn’t resemble your “goo.” Oh well, I guess I’ll have to try persimmons again this year.

    I used to love the Magic School Bus, and the digestive system episode was one of my favorite episodes too! It’s funny because I am currently studying to become a dietitian, so I’ve learned about the digestive system in much more detail in my classes, but even when I was little I still loved learning about it!

      It depends on the variety of persimmon. Usually the Fuyu persimmons (short and squatty) don’t get “gooey” on the inside and are better for slicing or eating like an apple, but the Hachiya (resembles the shape of a Roma tomato) you ONLY want to eat when it’s soft and “squishy” on the inside. They’re considered astringent persimmons and have high levels of tannins in them…basically it will feel like you just shoved a handful of cotton balls in your mouth if you eat them before they’re ripe! Been there…done that! 😛

  20. This is my favorite post ever right now. Honestly, I am surprised that I haven’t turned orange yet with all of the beta carotene that I consume. My mom said that as a baby I actually did turn orange because I ate so much squash/carrot/sweet potato baby foods! 😉

    Butternut squash tuna melt…YES you’re beyond genius!!!!! I just used the last butternut squash in my pantry yesterday, but I’ll be making this as soon as I stock up again. One of my favorite meals is tuna and butternut squash salad, but warm tuna melt in a butternut squash sounds and looks sooooo much better.
    My favorite orange food is a kabocha squash. To be honest, I just tried it for the first time 2 weeks ago. I was in heaven and finished it all in one day (every time I walked into the kitchen it would call my name from the fridge). I haven’t been able to find it anywhere since. I’ve called around to every grocery store in a 1 hour radius like drug addict looking for a fix but everyone says they’re out of season now and won’t be getting more in. So, until next fall….

      Oh nooooo! That’s so sad! I did the same thing with figs just a couple of weeks ago. Last year they were available all the way into December, but this year, all the stores have already sold out…and now I’m drowning my sorrows in squash and sweet potatoes! Ha!

      And I have to admit, I had to give myself a little pat on the back with the tuna melt! I’ll be posting the recipe this Friday if you’re brave enough to try a little “strange but good” concoction! 😉

  24. I don’t have much of an orange tint yet. Sweet potatoes are probably my favorite orange food with butternut squash as a close second. All though clementines are always great too! That persimmon goo looks SO good! I have 2 sitting on my counter waiting to ripen. It’s been 2 freakin weeks!

      Oh I know, it takes FOREVER sometimes! Actually, the ones I got from my international market over a WEEK ago, started getting black spots on them before getting soft, so I just had to slice them up instead. And they were the Fuyus just like these! So weird!

So I just watched that ENTIRE episode of The Magic Schoolbus 😆 I was going to mention that one when I saw your first pic, so I basically did a little happy dance when I saw you throw it in there. But girl… I seriously can’t handle all the deliciousness in this post. I’m currently obSESSED with kabocha, and while I haven’t noticed an orange hue yet, that might be because I haven’t been comparing myself to any ‘normal’ people lately. But it’s too hard to stop! I’ve actually gotten a lot better in being more reasonable with my portions, but I can’t remember the last day I went without kabocha 😯

  32. That’s totally my favourite episode of The Magic School Bus too!!! Looking back it’s no wonder I decided to be a dietitian. But seriously I adore the Magic School Bus. A few summers ago my friends and I actually randomly started watching some episodes of it because we were bored one night haha.

    I’m loving all the orange foods in this post too! I’m pretty sure I’m getting my orange glow on already too. 😀

  33. Ahhhhhhh The Magic School bus! Love. Just love – one of my favourites as a kid. The best days in science class was when we got to watch an episode. Oh goodness, made my day. The human body was good, but my favourites were: the one in space, and the one where they were baked into a cake. Oh, childhood memories.
    And I’m pretty sure it’s a bit miraculous, but I’m not sporting the orange-palmed thing yet. Miraculous, because I’m pretty sure that squash in some form happens pretty much daily.

  37. Persimmon goo is back! I actually only had one hachiya persimmon this week (aka only one goo-worthy persimmon) and mostly had a bunch of fuyu from my mom’s friend’s tree. I typically just eat the fuyu like apples, but have you ever had a fuyu get soft enough for goo? Haha, okay that was possibly the weirdest question you have ever been asked (although maybe not…). And I so love the kabocha + yogurt combo!

      Actually, I was JUST talking to Melissa (Treats with a Twist) about that this weekend. I got some Fuyu’s in Cleveland that were already pretty soft and after a few days were goo-worthy, but the ones I picked up from my international market a little over a week ago are still pretty firm…it’s SO weird!

  39. So I’ve gotten a bit behind. What can I say? I had the Hubby home for a solid ten days and I needed to make the most of my time. You understand.
    I love that most of your orange glow isn’t even pumpkin related. That squash was ridiculous!! You’re making me wish I had one, and that never happens with squash. Sweet potatoes on the other hand… By the way, I noticed the blue cheese on that tuna melt. Salivating.
    I’m glad to see the granola going to good use. I whipped up a batch of Orange Cranberry yesterday so I need to share that recipe soon. I also gave the Breadsmith some photos of their bread in action (grilled cheese porn) so cross your fingers they hang them in the shop. Im hoping…

      Ohhhhh YAY!! Fingers crossed for sure! And wow, ten whole days with the hubby?! That’s awesome! Obviously I’m a little behind myself or I would probably know this…please forgive me, I’ve been working my ass of this week and thanks to some Benedryl, knocking out TEN HOURS of sleep yesterday! Hopefully I can get all caught up today…I miss you! 🙂
