Wait, did I mention that it’s gorgeous??Β Because IT IS GORGEOUS!

And that topping? That is a thing of brilliance right there, if I do say so myself! Vanilla Greek yogurt…cream cheese…almond milk…and even if you don’t have my prized cream cheese bakery emulsion (TJ Maxx score, but I have seen it at Wal-Mart too!) you’ll still want to slather that stuff all over every surface that’s appropriate to lick.

But hey, it’s Valentines Day…I’m not looking! πŸ˜‰

    1. When I first read this I thought it said Red Velvet mugshot and I was so confused- haha apparently I need another cup of coffee. This looks great and we finally purchased a microwave so I can try all of the mugCAKES I want!

      • kissmybroccoli says:

Hahaha! Too funny! Yay for getting a microwave! I swear I never realized how much I used mine until I had one break on me once! I’ll never let THAT happen again!

    2. I’m in love with everything about this, except the beets! I sort of hate them with a passion. Can they be substituted for anything? I think I’ll have to try it regardless though! πŸ™‚

      • kissmybroccoli says:

Thank you, Emma! The beets only lend a small amount of flavor to the cake…mainly, I just use them for color purposes, but I’m sure you could use something like grated carrot if you’re looking for a sub! πŸ˜‰

    3. Oooooh…I love mug cakes! This looks delicious! Ya know, I’ve actually never had red velvet cake before. Isn’t that crazy!?! Definitely need to change that and start with this mug cake!

    4. Kat says:

Beets AGAIN?! Girl, you know I don’t like how labor intensive those things are. Why oh WHY must you make everything look so freaking drool worthy! Although I suppose I could just make the frosting and PRETEND there’s a beet red velvet mug cake and eat the frosting with my finger…hmm…I think that might work… πŸ˜‰

    5. LMAO!!! You win, you win! I’m seriously sitting here laughing. Happy V-Day, my strange BEET good friend.

    6. This is so festive. And adorable. And I love it πŸ™‚ Happy Valentine’s Day, Heather!!

    7. Lyric says:

Wow you really BEET the competition for strange but good recipes… Hehe so puny. I have to admit beets are one of those things that really freak me out because I am really clumsy and I swear every time I try and use a beet my fingers, t-shirt and everything surrounding me gets stained. This recipe is tempting me to sacrifice those things however…

      • kissmybroccoli says:

Haha! I know exactly what you mean! Word to the wise: Ditch the white shirt before even THINKING about touching a beet! πŸ˜‰

    8. Ummmm yes. I added beets to my Vday recipe, too! They are a great hidden veg. I was actually contemplating adding the leftover ones to my mug cake last night but I didn’t feel like figuring out ratios, ahah. You cleared that up for me! happy Vday lady!

    9. You’ve always got the cutest mug cakes πŸ™‚

    10. The only thing I may leave out is the beetroot which I know you probably can’t taste and would defeat the purpose of it being a ‘red’ velvet cake but I really don’t like it.

What I do like though is everything else about this recipe, it looks delicious!!

      • kissmybroccoli says:

Aww, thank you, Jan! And hey, if you don’t like it, you don’t like it…can’t fault you there, but I’d love to know what you think if you try it! πŸ™‚

    11. Cassie says:

I WISH I HAD SEEN THIS YESTERDAY. Ugh I just made my standard pumpkin mug cake when I was craving dessert and wanted red velvet. There’s always tonight I guess….

    12. Now that is one elaborate and good looking mug cake, dear! Looks awesome! Happy belated Valentine’s Day from MOI to YOUUUUU <3

    13. Red Velvet it my weakness! I need this in my life. πŸ˜€

Ready in under 3 minutes? I think this will be my new obsession.
I blame you. Nah, I praise you!

    14. Eff my life.

As I am finishing off beets now, I am kicking myself for not starting with this post. I HAVE ALL THOSE INGREDIENTS (except for the icing) on hand!!! ARGH! I was complaining how I’m a fail at roasting beets because I wasn’t a fan but in a mugcake…ARGH.

      • kissmybroccoli says:

Really? How do you normally like them…or DO you like them? I love roasting because I think it brings out the natural sweetness…I just wish it didn’t take so damn long! Ha!

    15. As much as I love beets, I’ve actually never baked something sweet with them before. This looks so good though!

Hope you had a good Valentine’s Day! πŸ™‚

    16. I’m always so amazed to see red velvet cake recipes with beets as the color source. You are impressive. No beets at home now, but we have everything else. This looks so decadent…. And the “cheesecake emulsion” flavoring? I’ve never heard of that before so I’ll have to check it out. Happy Belated Valentine’s Day!

    17. I consumed more vegetables today than I have all week. Weird, but I’ll take it. I’ll also take some of this icing. I’ve got some surfaces I’d like to lick it off of….it is (was) Valentine’s Day after all. πŸ˜‰

    18. You know I love this!! It may be after Valentine’s day, but it is still delicious!
