Almond Butter Granola Bars

Sorry guys, but I just couldn’t help but tease you a little yesterday!

As promised I have a recipe for you today. But not just any recipe…this would actually be my first ever attempt at making my own homemade granola bars!

It’s no secret around here that I haveย a bit of an addiction to snack bars…

#proof that a hoarder CAN in fact be organized…despite the portrait painted on
prime time television.

Weekend project:ย Over the door shoe organizer turned snack bar holder! Feel free stand in utter awe of my genius-ness and then steal it for yourself! ๐Ÿ˜‰

Unfortunately, there aren’t many bars out there that meet 100% of my expectations in the nutritional department. Alas, they can’t all be Simply Bars! ๐Ÿ˜‰ I try to ignore the fact that some of the tastiest selections (here’s looking at you Luna) also have a pretty lengthy ingredient list with at least three different types of sugar.

So, I got in the kitchen on Saturday determined to make an all natural, low sugar but FULL of flavor snack bar!

It started with homemade almond butter…
Just almonds and a food processor…and maybe a little coconut oil at the end if you’re impatient like me! ๐Ÿ˜‰

And ended with pure deliciousness!

Almond Butter Granola Bars

Prep Time: 10-15 minutes

Cook Time: 25-30 minutes

Ingredients (12-15 bars)

  • 2 cups rolled oats
  • 1/4 cup coconut flour
  • 1 1/2 teaspoons cinnamon
  • 1 flax egg (1 Tablespoon flax + 3 Tablespoons water)
  • 1 cup sliced peaches (fresh or thawed from frozen)*, pureed
  • 1/3 cup creamy almond butter
  • 1 teaspoon almond extract
  • 1 teaspoon maple extract
  • 1/8 cup pure maple syrup
  • 10-12 drops liquid vanilla stevia (or more depending on taste)

Instructions

1. Preheat oven to 350F.
2. Prepare flax “egg” in a small bowl and allow to set.
3. In a medium-sized bowl, combine oats, flour, and cinnamon.
4. Puree peaches in a blender until smooth then add to a bowl with almond butter, maple syrup, extracts, and flax egg and stir to combine.
5. Add wet ingredients to your oat and flour mixture.
6. Transfer onto a cookie sheet lined with parchment paper and bake for 25-30 minutes or until edges start to crisp and turn brown.
7. Remove from oven and allow to cool on pan for 10 minutes before slicing.
8. Store in an airtight container for 2-3 days or wrap tightly in plastic wrap and freeze.

Notes:
You can really used any mild flavored fruit for the fruit puree. I was out of applesauce, so just used what I had on hand and it worked just fine. Pumpkin puree would also work.

If you don’t have maple extract (which I HIGHLY recommend. It’s fabulous ย in oats!) then you can sub in vanilla extract instead…they just won’t be as maple-y! ๐Ÿ˜‰

And finally, if want to sub in regular flour for the coconut, I think it would work, just fine, but I would maybe increase it to 1/2 cup to compensate for the high absorption of the coconut flour.

Soft and chewy, and a little crumbly, these babies were calling my name from the kitchen counter all day yesterday. I did my best to save enough to photograph, but after that…

All bets were off!

And heck, with stats like these,
there is NO reason I can’t go back for seconds…or thirds! ๐Ÿ˜‰

Kitchen Blunders & Peanut Butter

Hey guys!

I hope you all had a marvelous weekend!

I got up this morning with a BRILLIANT idea for celebrating Pancake Sunday…

Why so brilliant?

Because this morning’s stack was going to be inspired by these:

Orange Creamsicle Protein Muffin turned pancake!

At least THAT was the plan…

Unfortunately, my idea didn’t exactly pan out…I blame the new protein powder I chose to use, but that’s besides the point.

For those of you who think I never make mistakes in the kitchen…

Oh…

I…

Most certainly…

Do!

But you know what?

There’s nothing that a little peanut butter can’t fix!

Ohhhhhhh yeah!

And almond butter does a pretty good job too…

But you’ll just have to wait till tomorrow for that one! ๐Ÿ˜‰

Weekend highlights!
I scored a massive 5 pounds of okra for only FIVE DOLLARS at the farmers market, did some experimenting in the kitchen (as you can see), and had a GREAT workout at Bodypump yesterday! I’m SO sore today…and totally loving it!

This or That?

Hey guys!

Well, we finally made it to Friday!

And you know what’s a good idea for a post on a Friday?

The kind that you don’t really have to think about…I mean, the kind that are FUN…and that you don’t have to think about! ๐Ÿ˜‰

So I did a little research (aka Googling) and found a couple crap-ton of “This or That” type quizzes…I couldn’t decide on which one to go with…though the one that asked me if I preferred weed or liquor almost had me! In the end, I decided to piece a few together and make my own…because random quizzes are more fun when you know what’s coming!

1. Coke or Pepsi?
I haven’t had a soda in YEARS but when I used to drink it, I was a Cherry Coke Zero girl all the way!

2. Caramel Apple or Cotton Candy?
Caramel apple…Ohh, my mom used to make them from scratch when I was a kid and I would stand at the kitchen counter drooling all over myself until they finished cooling. I might have stolen a few swipes of caramel with my finger while waiting. Shhh!)

4. Salt or Pepper?
I’m really sensitive to salty foods…most people’s definition of salty is inedible to me…I’d much rather have pepper…and lots of it!

5. Pudding or Yogurt?

When have you EVER seen pudding on this blog?!

6. American or Provolone Cheese?

Gouda Baby!

7. Cookies or Brownies?

ย ย Whether they’re from my one “Smart” Cookie, a Nerdy Birdy, or The Broccoli Kitchen…I can’t help myself…I’m a total cookie monster!

8. Pretzels or Chips?

Popchips…in my own little way of course! ๐Ÿ˜‰

9. Cake or Pie?
Cake…although I’d rather just have a cookie! ๐Ÿ˜‰

10. Oatmeal or Cereal?

YOU CAN’T MAKE ME CHOOOOOOOSE!

11. Mexican or Japanese?
Mexican…I can appreciate a country who incorporates cheese into 95% of their dishes!

12. Chinese or Italian?
Chinese, but more importantly…SUSHI!

13. Surf or Turf?

LOVE seafood! And although I’ve yet to eat any of my own catches, that is one of my things on my bucket list…to do everything…from hook to plate!

14. Pizza or Pasta?

My favorite food for as long as I can remember!

15. Mustard or Ketchup?
One thing I did grow out of…I used to be ketchup obsessed, but now, hand over the mustard!…brown, spicy, honey, dijon…I love ’em all!

16. Sandwich or Wrap?

What’s a sandwich? ๐Ÿ˜‰

17. Apples or Oranges?
Apples (Honeycrisps FTW!)…I actually had an orange the other day and then remembered why I don’t really like them when I was hungry again like 30 minutes later!

18. Strawberries or Raspberries?

Strawberries…and of course, fresh picked is even better!

19. Blackberries or Blueberries?

Confession: I’m bloob-obsessed! One of the only reasons I tolerate summer!

20. Rice or Noodles?
If I’m going carby, I’ll admit, the first thing I want is bread…warm toasty bread…oh, and give me somethin’ to dip it in would ya? But if I had to choose…I’d go with noodles…because I like to slurp! ๐Ÿ˜‰

21. Spicy or Mild?
Mild…I’ve never been one to suffer through my food. I like spice for flavor…not pain!

22. Salad or Soup?

Salad…piled high with LOTS of color!

23. Soup or Stew?
I definitely like to CHEW my food and as much as I detest Rachel Ray (good recipes, annoying voice), I have to say I like her idea of “stoups”!

24. Salted or Sweet Popcorn?

Mmm…definitely sweet!

25. Cauliflower or Broccoli?

Really?

26. Onion Rings or French Fries?
If I’m gonna have something fried, make it a nice big basket of fried pickles…with some ranch dressing…hey, sometimes, you just have to go all out! ๐Ÿ˜‰

27. Burger or Hot Dog?

I’ll take a burger any way I can get it…beef burger with melted cheese and salsa, a pork burger slathered with homemade tzatziki, a millet-bean burger over greens…or heck, even veggie burger stuffed in a hot dog bun!

28. Popsicle or Ice Cream?

Why in the world would I waste my time trying to eat a popsicle before it drips all the way down my arm, when I can dive spoon-first into a bowl of sweet creamy FRO-YO?!

29. Coffee or Tea?
I like my Sketchersย tea, but I lovvvvvvvvve my Prada backpack coffee!
Can I hear it from my 10 Things I Hate About You lovers?!

30. Chocolate or Vanilla?
VANILLA…not a chocolate person at all…unless it’s dark…and there’s peanut butter involved!

Well, unless it looks like this…that’s no fun!

31. Sausage or Bacon?
I’ve always loved me some bacon, but for some reason lately, I can’t even stand to look at it! Hmm, are all you vegheads wearing off on me?

32. Peanut butter or almond butter?

My heart will ALWAYS belong to the peanut!

33. Salty or Sweet?
Both! Preferably together!

34. Fried or Scrambled Eggs?

I can’t even imagine a life without runny yolks!

35. Waffles or Pancakes?

Now THAT is funny!
