Sexy Eggs and Molten Lava Java

Guess time flies when you’re getting drunk on peanut butter and skipping through aisles of food props 😉

But I digress…

Alright, let’s party!

After I woke up from my night shift on Monday morning, I had a serious craving for eggs…but more specifically I wanted

Warm…

runny…

drippy…

#yolkporn!

That would be a spinach Flat Out wrap slathered in nooch sauce (just nutritional yeast thinned with a bit of water) and then stuffed to the brim with arugula, alfalfa sprouts, tomatoes, and of course two of the most provocative eggs the farmer’s market could provide! 😉

After I used the wrap to mop up each and every bit of that warm yellow goodness, I headed off to the gym.

As far as my workout went…for our food AND fitness theme, I’ve been loving the elliptical even more than usual these days. I always just jump on, hit manual, and get swinging, but lately I’ve been experimenting with the customizable HIIT workout programs. Oh yes, I said customizable!

Which is apparently code for “kick your own ass” 😉

I was DRENCHED after this workout and it was only 2o minutes long…even my forearms were sweating! LOL

Once I got back home, I whipped myself up a little snack to refuel my tired muscles before heading into work for another shift.

Now, I know air popped popcorn is no well kept secret or anything, but I swear I just wasn’t doing it right in the past…for this batch, I drizzled a bit of melted coconut oil overtop, put it in a bowl with some cocoa powder and cinnamon and…

Shook the hell out of it!

Oh my god, soooooooooooooooooooooooo good!

I also made myself a little chocolate frosty…which is just an extra thick protein shake (more ice, less water), but don’t you think calling it a “frosty” makes it so much more appealing?

And I may or may not have made it even MORE delicious by combing the two:

C’mon, you guys already know that I’m weird…

Are you really surprised?

Dinner was packed up and ready to go in a matter of minutes thanks to a bit of pre-chopping I did after coming home from the farmer’s market on Saturday.

Arugula salad with sprouts (that are hiding under there somewhere), zucchini, red bell pepper, okra, lox, and crumbled feta cheese along with a cup of fresh strawberries and a lemon for squeezing over my salad.

Citrus and seafood were meant to be together!

And since I skipped out on my daily cup when I first woke up, I took advantage of the turn-in-your-empty-bag-for-free-coffee thing at Starbux!

If only I had known they had the brew set to “hot molten lava”…I didn’t even get to take a sip until after it cooled down…an hour later!

Snackage throughout my shift (along with my FitMixer aminos that I had pre-workout) were a tasty mix:

I’m totally digging these Gnu Cinnamon Raisin Bars…a tad bit sweet for me, but just the right size and FULL of fiber that I was surprised to find had no…ahem, consequences!

After my shift and BEFORE I face planted into my pillow, I kept it simple with a quick bowl of cereal:

Brown rice crisps mixed with Trader Joe’s pecan praline granola topped with bloobies!

Mmm, how can something so simple taste so good?

A Weekend of #Winning

Happy Monday friends!
I hope you all had a fabulous weekend!

Since I had Saturday all to myself, I decided it would be the perfect day to make a little trip to Nashville for farmer’s marketing and seeing my boyfriend, Joe.

Unfortunately, fifteen minutes after I got on the road, Hurricane Helga came barreling through my land-locked state. After having to make a stop to put air in my tires (in the pour down) AND then sitting in traffic for what felt like an eternity, I finally took it as a sign, turned around, and headed home.

So what on Earth happened to produce this look of sheer intoxicating thrill?

I’ll get to that in a minute.

When I was about halfway home, the clouds suddenly parted, the sun came out (and it got hotter than Hades), but more importantly, I found myself nearing an exit where fun could possibly ensue.

If only I had known what fun awaited me…

First, I made a stop at one of my favorite scrub shops. It’s been YEARS since I’ve done some good hard scrub shopping so I dove right in! After two hours and SEVERAL tops and bottoms later, I finally had four new outfits!

It’s hard to tell in the pic, but out of the bottoms, I ended up with two blacks, one navy, and one olive green.

Obviously, after that intense round of shopping (and I swear getting into and out of that many clothes constitutes as some sort of workout), I was famished! I did a quick search on my phone and was reminded of a Thai place I had seen before and had wanted to try called Thai Phooket.

I swear by the looks of the outside, you wouldn’t be surprised to find stray dogs and cats hanging out in their freezers, but let me tell you, the food was absolutely AMAZING!

This was my first real Thai food experience and they had SO much to choose from, but after the first bite of my pineapple curry, I knew I had made the right choice!

With stir-fried veggies and tofu and a side of steamed jasmine rice!

Just take a look at that hunk of pineapple!

And now, I am officially addicted to Thai food and can’t wait to go back!

Once I finished up with lunch and packed up some leftovers (yay!) I headed out to see what else I could get into. A few minutes later I found myself standing in the parking lot of an Old Time Pottery store.

Now I’ve seen this place before, but I don’t know, I thought they only sold…you know “old-looking” pottery 😉

Boy was I wrong!

Kitchen supplies, placemats, decorative pillows, bakeware! It didn’t take me long to load my arms up and stagger back up to the front to grab a shopping cart buggy!

And that was before I even made it to the back of the store…

The food blogger’s Mecca!

In minutes I was practically skipping up and down the aisles surrounding myself with aisles upon aisle of pristine white plates, crystal glasses, and ceramics galore.

Hmm, maybe it was a good thing that BB missed this 😉

They had everything…

Coffee mugs printed with nothing but truth…

And…well, some that were just a little weird :-/

Glassware in every possible shape and size…

And decor that catered to the eclectic creepy sort of crowd.

You know, because I’ve always wanted to fill my home with patriotic-colored roosters, trollish owl statues, and three foot tall giraffes.

Miraculously, I made my way out of the store without clearing the entire shelf of crystal cat figurines! 😉

And even managed to keep it under $100!

All in all, I’d say it was a pretty good day of “retail therapy” though my wallet and I are looking forward to BB coming home next weekend!

PB&J Coconut Pancakes

Happy Pancake Sunday loves!

Since I love you guys so much, I can’t bear to keep  you waiting anymore for my latest recipe. If you follow me on Instagram or Twitter (giveaway entry alert…click HERE!), you’ve probably caught a glimpse of the peanut butter and blueberry filled mornings I’ve been having lately…

Mmmm!

Since I’ve been tracking my calories, I’ve been taking it easy on the high calorie nut butters lately, but the other day, I had a MAD craving for PB&J and there was no resisting it! But I didn’t want just the standard sandwich, so I decided to throw a few things in a bowl and try my hand at my own version of coconut flatbread.

I’ve made coconut flatbread in the past and it came out incredible, but since I knew I wanted to LOAD it up with peanut butter, I thought I’d change things up a bit and take out the egg yolks.

I know…

*gasp*

Don’t worry my little yellow puddles of deliciousness, you’re still near and dear to my heart!

For the first version, I used about half the recipe and made myself the little blueberry PB&J mess you see on the left…but the next day, I doubled it and well…

They accidentally turned into pancakes!

Believe me, I use the term “accidentally” very, very lightly!

Topped with a bit of thinned chocolate coconut peanut butter and some of my homemade blueberry fruit puree and all my (breakfast) dreams came true!

I had every intention of making them AGAIN today to celebrate Pancake Sunday…

But this morning was a bit different.

You see, during a late night marathon of Gossip Girl, I got a little wild and woke up with the worst hangover. I know, I know…it’s just so unlike me…especially when I’m alone. I guess I was just missing BB…and also totally caught up in the ongoing shift of power between B and S.

The culprit?

Not that I’m condoning this sort of behavior, but if you dip a spoon in peanut butter (especially if it’s Cookie Nookie) and THEN in granola…oh God, just don’t!

You won’t be able to stop!

Maybe I should consider getting a sponsor…*

Unlike others who firmly believe in the “hair of the dog” approach, I didn’t even want to LOOK at peanut butter (so sad) this morning, so…

 I created a PB&J-less stack:

Clean, fresh, and 100% delicious!

But here’s the recipe for the one that started it all!

PB&J Coconut Pancakes

by Heather Powers

Prep Time: 5 minutes

Cook Time: 10-20 minutes

Keywords: fry breakfast gluten-free high protein soy-free vegetarian no sugar added paleo coconut flour egg whites almond milk Pancake Sunday pancakes

Ingredients (Serves 1)

  • 1/4 cup coconut flour
  • 3-4 egg whites (1/2 cup)
  • 1/2 cup unsweetened almond milk
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 5-7 drops liquid stevia or other sweetener (optional)
  • Your favorite jam and peanut butter + a bit of water

Instructions

1. Preheat a non-stick skillet or griddle to medium heat and coat with a bit of coconut oil or non-stick cooking spray.
2. Combine all ingredients in a blender*
3. Spoon batter into skillet making 2-3 pancakes and allow to cook for 8-10 minutes per side (longer time needed for bigger cakes)
4. Layer with jam or homemade fruit puree’
5. Whisk water and peanut butter together until you get your desired consistency and then drizzle on top!

*I think the blender works best for these ingredients. You can whisk it by hand, but it takes a little “elbow grease” to work out the lumps!

Nutritional Stats: 331 calories, 11g fat, 35g carbs, 24g protein

*In all seriousness, I just want to say this: We all make mistakes. We will occasionally falter. And heck, sometimes overindulge on peanut butter and granola until we have a tummy ache, but it’s ALL about you’re outlook….

Nobody is perfect, but each day is new!

Just do me a favor and remember that.
