How The Crock-pot Saved Potluck

Happy Friday foodies!

What’s the best thing about having a mini-vacation end on a Wednesday? Only having to work 2 days before it’s time to relax again! Didn’t hurt that we ended the workweek with a birthday potluck! The theme was Soups & Sandwiches…seems like we can’t get enough soup at these things. Must be due to this:

View from my back porch this morning. Sadly, my snowshoes were not needed 🙁

My plan was to go the grocery store on my way home from work last night to grab some stuff, but with the roads getting icy and slick, I decided to just go shopping in my freezer instead. Therein lay the ingredients for this!

Southwestern Chicken & Black Bean Soup: (Serves 8-10)

  • 1 pound cooked shredded chicken
  • 2 cans black beans, drained
  • 2 cans diced tomatoes
  • 1 large orange bell pepper, diced (frozen)
  • 1 medium onion, diced (frozen)
  • 2 cups corn (frozen)
  • 2 cups low-sodium chicken broth
  • 1 1/2 tablespoons cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • salt & pepper to taste

Combine all ingredients in a slow cooker and set to low for 4-6 hours.

Garnishes: shredded cheddar cheese, plain greek yogurt, and cilantro.

Can’t get any easier than that right? Well how about the chicken I had was frozen, so I popped it in the crock and went to bed, woke up and VOILA! soup-ready chicken!

And for a peek of what it looks like under the toppings:

The perfect soup to thaw you out on a cold winter day!

I absolutely love cooking the crock-pot, especially in the winter. Who doesn’t like to just throw ingredients in a pot and come back hours later to a good home-cooked dinner? Or in my case, work for 4 hours and go to the break room for a home-cooked lunch!

Tell me, what is one of your favorite crock-pot recipes?
Now that I have my new baby crock-pot and can keep servings to a more manageable amount (I tend to get carried away with my bigger one), I plan on slow cooking more in the future!

  1. I made an amazing yellow curry sweet potato, white potato, and kale stew in my crockpot back before I started blogging… I should reproduce it for the blog because it was amazing!!! Just a bunch of stuff thrown in too… my favorite kind of recipe! 🙂

  2. I’m planning on getting a baby crockpot when I move out too. It would be so nice to come home to a meal!

  3. I love my dad’s beans!! 🙂

  4. OH MY GOSH that looks so good! i have never made anything in a crockpot.. i dont thnk we even have one 🙁 but i wud defs eat that!

  5. That looks like a keeper of a crockpot recipe!

My hands down favorite recipe in the crockpot is Tricia Yearwood’s Mac and Cheese. We use our 3 1/2 qt crockpot a lot, since there are only two of us.

I love cooking a bunch of chicken breasts in ours. It’s perfect to shred and freeze! Makes weeknight meals a snap!

  6. That is just the cutest soup bowl! Love it!!

Oh my gracious, I love my crockpot! I use it all the time! Two of our favorite crockpot recipes are:

“Bambi” chili (I know the name is awful, Christopher named it):

Buffalo Sammies: <– if we weren't already married the first time I made this for Christopher, he would've gotten down on one knee and proposed on the spot. They are pretty fabulously excellent. 😉

  7. OMG… fave recipes are in the crockpot! It makes meats so tender! love it!
I’ve made a similar recipe to this one and I love it! BUT my all time fave (and I miss it b/c the red wine doesn’t cook off and I’m preggo and can’t eat it…boo!) is..

Omg that looks so amazing! Makes me want to run out and buy a crockpot! (is it weird I don’t own one?) haha 🙂

    • Not weird, I just bought mine a little over a year ago. I try to leave it out on the counter so I don’t forget to use it though. Sadly, this is the first time it’s been used in months!

  9. We have an ancient crock pot that hasn’t been touched in at least a decade, if not two! Not sure why. I don’t use Greek yogurt in savory dishes enough.

  10. I love it when I can go shopping in my own kitchen and come up with something unplanned that’s actually good! My favorite crockpot dish is “Hoppin’ John” (blackeyed peas, collard greens, rice, veggies, and spices).
