And So It Begins…

Hey guys! Thank you all so so much for your sweet comments and congratulations about the new house! I am so excited/nervous/anxious that I don’t even know how I’m going to make it the next few weeks!

I realized something last night that I’m sure will keep me nice and distracted until Move Day…eating down some of my food hoardage in the kitchen! Up until this past week, I haven’t given any thought to the day where I would actually sell this house and move, so I’ve been buying groceries, cooking to my heart’s content, and refrigerating/freezing leftovers. Let’s just say that for the next few weeks, meals are going to have to get a little creative…and so begins the Clean out the Fridge Challenge!

I think I got off to a pretty good start with today’s breakfast and dinner.

Anyone for a sweet collard greens smoothie?

I think this bowl actually beats out the last green smoothie bowl I made using spinach. It was so sweet and creamy! I just kept adding things to the food processor and out came this magnificent bowl!

Sweet Collard Greens Smoothie Bowl: (serves 1)

  • 2 handfuls chopped raw collard greens
  • 1 cup unsweetened almond milk
  • 1/2 avocado
  • 1 medium banana
  • 1 scoop protein powder (I used a vanilla flavored whey)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon xanthan gum
  • 1/2 tablespoon chia seeds

Combine all ingredients and blend until creamy! I topped mine with some honey almond granola that I picked up on my last trip to Whole Foods and a plump and pretty steebie!

I was super busy after work today! I met with my realtor to talk about some things and give her my carpet/hardwood selections, dropped off my…ahem, overdue…library books, AND got to pick out my stainless steel appliances for the new house! The only thing that I’m lacking is a washer and dryer. Guess I’ll be stalking Craig’s List the next few weeks!

When I got home, a much-involved dinner menu was the LAST thing on my mind! I decided to take advantage of some leftovers and had a great tasting dinner in about 15 minutes!

BBQ Tuna Melt with Steamed Broccoli & Tomatoes

I took out a cooked tuna steak from the freezer a few days ago and let it thaw in the fridge. I cooked a batch of them up a few months ago (plain and simple pan fry with salt and pepper) and just froze them individually for when a quick dinner was needed.

All I did was top a piece of whole wheat sourdough bread with half of a tuna steak, sautéed red onion, Trader Joe’s all natural bbq sauce, and a slice of muenster cheese. Then I popped it under the broiler for a couple of minute until the cheese got melty and gooey!

Dinner was FANTASTIC! I’ve done similar dishes with chicken, but the tuna steak so much better and it went perfectly with the sweet and spicy sauce!

The broccoli I simply steamed and tossed with tomato wedges in balsamic vinegar and sprinkled with freshly ground black pepper.

Ya-um!

So I’m thinking this challenge may be sorta fun! Ha, yeah ask me how I feel the in 2 1/2 weeks when I’m eating mustard and crackers!

But ya know what is the best part about living in a house that’s no longer on the market? No more house staging! Every morning I would get up and get ready and then do the dishes, make the bed, sweep the floors, and be sure that EVERYTHING was in its appropriate place….I was tired before the day even started! Not anymore! This morning, I left cabinet doors open and dirty clothes on the floor…just because I could…then I picked them up as soon as I got home because I’m a bit of a clean freak! 😉

Do you make your bed every morning?
I never did before I put the house on the market, but now it’s a habit! I made it up this morning without even thinking about it!

  6. I have to make my bed every morning. If I don’t pull back nicely folded covers when I get into bed then I can’t sleep at night! No joke. It’s a problem 🙂

  7. “when I’m eating mustard and crackers” You say this like it’s a bad thing. 😉

I used to occasionally make the bed, but with Alex working a graveyard shift there is no point!!! 🙂

And collards in your smoothie?! I love you so…

  8. Namaste Gurl says:

Yum, looks delicious…. all your food, by the way 🙂
I love adding avocado into my smoothie, I also do unsweetened shredded coconut flakes, maca, spirulina, flax, hemp! I do one for a snack every afternoon and it makes me feel so good and wholesome.
    Have a good week!

  9. That smoothie looks amazing! Did you say you made that in a food processor?? I have a food processor but thought I needed a blender for smoothies….If you can process smoothies I will be a very happy person. 🙂

    • Yep yep! My magic bullet is not liking me right now…I think I over-stuffed it during my last blend sess! So I just threw everything in my food processor and kept my fingers crossed…worked like a dream! Only bad thing is that it’s SO much easier to clean the MB instead!

  10. Catherine says:

You should take a picture of your fridge today and then one right before the move. Then we can see how successful you were in cleaning it out 🙂

  11. Such pretty food!! And yes, I make my bed every morning… if I don’t I feel weird!

  16. Anastasia says:

I love the smoothie bowl you made.. yum! It looks so healthy and filling!

I don’t make my bed in the mornings, but get this.. I have to make it right *before* I go to bed or I can’t sleep! Haha, how weird is that?

  17. Kayla says:

I love that you’re making collard green monsters! I have two huge THINGS of collard greens that need to be used up so I am definitely going to have to do that!

Sometimes I make my bed. When I’m feeling especially “tidy” but usually….no. Like right now, it’s not!

  18. I’m a clean freak too but fixing my bed in the morning is something I don’t due during the week! Since I workout in the early morning before work, I usually have enough time to get myself ready and I’m outta there!

I usually fix it as soon as I get home from work tho! Usually…
    🙂

Love your clean out the fridge challenge lol And I never use to do my bed in the morning, ever. I swear my mom use to do it for me up until I was like 19. So sad haha but now I do it out of habit every morning. I can’t stand for it to be undone and my mom’s bed is never done. Go figure lol

  20. A collard green smoothie, huh? My southern blood is not too sure about that one – I think I’ll always prefer my greens simmered all day with a ham hock. 😉

So excited for you and your move Heather. Your new place is going to be perfect, and ALL yours. So nice!

Yes, I always make my bed, and do you know when that habit started? When we tried selling our house 2 years ago. Ha, now I can’t stand it unmade either.

    • Oh don’t let me fool you with this one…I would NEVER turn down some good ol’ southern cooked greens! 😉

Thank Heather…it IS going to be perfect! The perfect start to my new life!

  21. Mrs. Fish says:

I’m eating from the pantry/fridge too! I kinda like the challenge. 🙂

What an interesting combination for your morning smoothie! My husband and I will be moving to a different state in July so I am not far off from doing the same thing you are! Congratulations on the new house…so exciting! 🙂

  24. Your smoothie looks absolutely lovely. 🙂

I’m definitely a clean freak… about some things more than others, but overall, I like clean. I don’t really make my bed very often, no.. 😛 I just don’t have time in the morning, and I don’t see the point of doing it in the afternoon! Hahha.
