Orange You Glad I Made Muffins?

Oh my gosh, I am SO SO excited to get this post up tonight!

After several hours of kitchen experimentation, I present you with this:

Ain’t he cute?

But before I get into any details…I have to get into some details!

Not making much sense? Don’t worry, I will!

See, a few months back, I was contacted by the lovely people over at NuNaturals
(shout out for one of our awesome Blend Retreat contributors…whoo!)
about trying two of their newest products:

I was immediately intrigued!

Little did I know that in a few days THIS is what would show up at my door:

More Stevia than you can shake a sugar-free stick at!

Not to be confused with Pixi Sticks, or any sort of limb coming from a tree that inspires nineties country music! 😉

 But any who…onto the sweet stuff!

As soon as my “loot” arrived, I got to work seeing what magic it could make out of my meals…

Remember these guys?

Yep, my bottle of lemon Stevia saved the day when, after a trip to the store for ingredients to make lemon poppy seed pancakes, I forgot the frickin’ lemons!

So what else did I try?

There’s just something about the combo of lemon and blueberries!

And this breakfast of OIAJ (oats in a jar) definitely did NOT disappoint! The lemon Stevia sweetened my oats just enough and gave a nice crisp, buttery lemon flavor that paired SO well with the tart frozen blueberries!

But as fantastic as both the pancakes and the oats were, the star of tonight’s post are these beauties:

Soft and flakey, orange and creamy, these muffins just scream SUMMER!

And guess what…they’re vegan AND gluten-free!

Orange Creamsicle Protein Muffins

Prep Time: 10-15 minutes

Cook Time: 22-24 minutes

Ingredients (6 regular-sized muffins)

  • 1/2 cup brown rice flour
  • 1/8 cup coconut flour
  • 1 scoop vanilla plant-based protein powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon xanthan gum
  • 1 tablespoon chia seeds
  • 1 cup milk
  • 1 1/2 tablespoons coconut oil
  • 1/8 cup agave syrup
  • 20 drops Orange NuStevia
  • zest of one orange (about 1-2 teaspoons)

Instructions

1. Preheat oven to 350F and line a muffin tin with foil liners (or coat pan with a generous amount of non-stick spray)
2. In a medium-sized bowl combine flours, protein powder, baking powder, salt, xanthan gum, and chia seeds and stir together.
3. In a separate bowl, add milk, oil, agave, stevia, and orange zest and stir to combine.
4. Add wet ingredients to dry ingredients and stir until all the flour is incorporated.
5. Spoon batter into muffin liners filling 3/4 of the way full.
5. Bake for 22-24 minutes or until the tops are slightly browned.
6. Once done, transfer to a wire rack and allow to cool for 10 minutes.
7. Enjoy alone with a glass of milk or coffee, or crumble over your favorite yogurt for a protein packed breakfast!

Mmm, mmm, MMM!

Even though I’m not a huge sweets person and rarely ever sweeten my foods, I do occasionally get a craving for something more. I found the NuNaturals liquid Stevia drops to be the perfect way to give just enough sweetness to satisfy my momentary sweet tooth.

I just can’t believe it took me so long to try baking with it!

Call me a procrastinator…or call me genius…I DO think I perform best under a bit of pressure…but I DID in fact wait until the last week of the month to knock out one of my main goals for June…

    Those look so good -I knew when I saw the orange and the stevia out on your counter (on IG) that you were doing something orangey! They look so good!
    Ice cold watermelon (seeded, red or yellow meat) is my fave summer treat -eaten outside. All fruit tastes better outside for some reason!

    Those muffins look so good!! My favorite summer treat has to be a good old fashion ice cream cone but with a recent purchase of an ice cream maker I have been making homemade frozen yogurt, those NuNaturals would be a great flavor addition! 🙂

  7. funny, i was just about to make orange muffins today because i had a bunch of oranges sitting around..and now i have a recipe- i just might have to tweak it a little because i don’t have orange stevia. hmm my favorite summer treat is homade avocado chocolate fudge pops! mm-mmm, and good for me too 🙂

    I think one of the best Summer snacks is some fresh, chilled fruit. Melons are really good in the Summer and we have amazing peaches in Colorado. Other than fresh fruit, I love Sorbet when it’s really lot. I love fruit if you couldn’t tell haha.

    My favorite summer treat is frozen yogurt – being lactose intolerant steers me away from real ice cream, so the frozen yogurt is the next best thing – SO YUMMY! 🙂

My favorite summer treat is a smoothie in a bowl; now for a flavor? hmmm right now I’m loving my banana cream whey with matcha powder, weird; yes, but very tasty (with frozen bananas, almond milk, espresso powder and ice!)

    My perennial summer favorites are fresh pineapple, mango, and watermelon. But my NEW summer fave was inspired by a little ice pop maker I picked up at Ikea: http://www.ikea.com/us/en/catalog/products/80208478/

    I brew up a couple of cups of green tea, sweeten lightly with orange blossom honey (you could use orange stevia, too!), and freeze. Then, I have a handy cold treat for those nights when I don’t have any calories left in my bank.

    Honestly summer is my absolutely favorite season of the year when it comes to food. It is a hard pick because I just LOVE all the summer fruits, especially the berries AND DO MY BEST TO HAVE SOME EVERYDAY. So whether it is in muffins, on top of cereal or yogurt , in pies a la mode or in a big frosty smoothie. But then a big peach or nectarine dripping juice always “sends me to the moon”. So many choices, so little time!

    I am very interested in the NuNaturals, as I am a diabetic and looking for a natural sugar substitutes I can use in baking and cooking. I will keep my fingers crossed on the contest. Meanwhile I am writing down muffin recipe for the future.

    fresh homemade salsa’s peach & roasted pineapple is one of my fav’s it’s sweet enough if you leave hot peppers out to even use on toast. a snack of toast with cream cheese and fresh peach & roasted pineapple salsa yummm

    My favorite summer treat has to be fresh salads made from veggies out of the garden. I know it’s not really a “treat” but it is just way too hot during the summer to be eating much of anything else. And, believe it or not, I’m not a big ice cream fan!

    I love the taste of mangos with blueberries and blackberries. I just throw all that in a bowl and eat away. Makes a great snack, an addition to breakfast or a simple dessert after lunch or dinner.

    In the summer my favorite treat is fresh fruit, you know, the kind when you buy it fresh from the farmers market and its still warm from outside and you can literally taste the sunshine:D mmmmm….

    also watermelon, roasted dandies marshmellows, and recently soy yogurt flavored up and stuck in the freezer to make froyo, topped with fruit and granola. yum:)

    I love frozen yogurt with fresh fruit during the Summer. I would be the happiest gal if I could win! I wanted to order a lemon Nunaturals stevia but the total price was like $24 with shipping. Way too expensive for my budget as a mother of 2 and a husband still in school.     Hi, this is an awesome site (I just found you through Pinterest..yay!!) My fav summer treat is cantelope blueberry fruit salad, with sweet chili powder and sprigs of mint..chilled to perfection. Leftovers get tossed in a blender the next morning with frozen blueberries for a delightful breakfast smoothie with a kick! Thanks for the giveaway, too!
