Kitchen Blunders & Peanut Butter

Hey guys!

I hope you all had a marvelous weekend!

I got up this morning with a BRILLIANT idea for celebrating Pancake Sunday…

Why so brilliant?

Because this morning’s stack was going to be inspired by these:

Orange Creamsicle Protein Muffin turned pancake!

At least THAT was the plan…

Unfortunately, my idea didn’t exactly pan out…I blame the new protein powder I chose to use, but that’s besides the point.

For those of you who think I never make mistakes in the kitchen…

Oh…

I…

Most certainly…

Do!

But you know what?

There’s nothing that a little peanut butter can’t fix!

Ohhhhhhh yeah!

And almond butter does a pretty good job too…

But you’ll just have to wait till tomorrow for that one! πŸ˜‰

Weekend highlights!
I scored a massive 5 pounds of okra for only FIVE DOLLARS at the farmers market, did some experimenting in the kitchen (as you can see), and had a GREAT workout at Bodypump yesterday! I’m SO sore today…and totally loving it!

    Your poor pancakes! But, I have to say, I’ve definitely had worse-looking things come out of my kitchen. I spent my first semester of college living off of microwaveable meals, cereal, and sandwiches because my cooking skills were so bad. haha.
    Oh, and I couldn’t agree more…there is NOTHING that nut butters can’t fix. I swear they were a gift from God. (:

      Really? Me too! When I first got out on my own, I didn’t even know how to cook an egg! Lol Funny how far I’ve come!

      And yes, I imagine Heaven to be a magical place FULL of gallons and gallons of uniquely flavored nut butters and every dippable you can think of! And the best part…you never get full…oh yes, Heaven indeed! πŸ˜‰

  2. My last kitchen blunder actually involved okra and lots of good okra from the farmer’s market. I tried making succotash on the fly. It ended up more like slimy corn/tomato/okra mush. I was so mad for ruining all that great okra!

    Those almond butter granola bars look fantastic. Can’t wait to hear more about them.

    Ha Ha Ha, those poor pancakes. With all that peanut butter on top, they still look delicious though! My last blunder was roasting veggies last weekend. Totally burnt half of them. Nothing some ketchup couldn’t fix though πŸ™‚

      Haha, nice! Ketchup does have a knack for covering up the bitter taste of “well done” eats! πŸ˜‰

  4. I have never tried okra before… but I see it in your salads all the time. I always blunder with protein pancakes… in fact all pancakes I make just end up a disaster… I give up. I just don’t have your pancake prowess πŸ™

      Awww! πŸ™ You know what they say: If at first you don’t succeed… I’m telling you, I used to be the worst pancake flipper around, but with practice (and a LOT of patience) I got there!

      Raw okra is where it’s at! I went years and years only thinking you could eat it fried, then started cleaning up my diet and never even thought about it…until that one magical day at the farmer’s market! πŸ˜‰ You gotta try it!

    My last kitchen blunder involved bok choy… I tried sauteing it in a pan with sesame oil and soy sauce, but it just got limp and gross. It was pretty inedible!

  6. My last kitchen blunder was this dip I made for our housewarming party. It was the monster cookie dip made with Biscoff which sounded like a great idea. And it worked well the first day we had it. But the it just hardened and became a brick!

  7. I almost ALWAYS blunder in the kitchen, because I’m just a whirlwind when I get in there! I always put in a wrong amount of ingredient or put in the wrong ingredient all together! {see: accidentally putting in 1/2 c of salt instead of sugar}
    Those granola bars do NOT look like blunders at all, and I cannot WAIT for that recipe!

  9. I once wanted to roast bell pepper and forgot to take it out of the oven. Let me just say,it was slightly BLACK… And dusty… *cough* *cough*
    THAT was a case even peanut butter couldn’t fix anymore! πŸ˜‰

    My latest kitchen blunder was my GF protein bread that looks like meatloaf. It tastes good. But it could use improvement!

    hahaha i just caught myself up and i’m officially obsessed with your egg in a jar! its pretty freaking genius if you ask me – slam some avo on top and its good to go!

    i agree that protein powders can make or break a good pancake!

      Oh if I had only had some avocado at the time…then we REALLY would have been in business! Avocado and eggs were just meant to be!!

    We totally need to plan a meet up asap!! I actually thought of you while I was there. It was a last minute decision to go down, or I would have messaged you for a meet up!
    I LOVE okra… I eat it at least once a week!! Jealous…

      I totally understand! I make last minute trips all the time and then think, “Ugh, I should’ve called Heather (www.heathereatsalmondbutter.com). I’m sure we’ll work something out soon! Maybe you can come over and help me eat all this okra! Lol

    mmmm okra!! The granola bar looks yummy(: I just made one with almond cookie butter and bananas too. Anyways, my latest culinary flop? Haha well I tried to make those single lady cookies you see everywhere and somehow I ended up putting in WAY too much milk so I sort of had cookie soup. It kinda worked though because I just put it in a pan, made a mega cookie and cooked it for almost an hour; lol, I just did it low and slow.
