Oops I did it again…

And I don’t mean any of Britney’s paparazzi-loving escapades.

Nope, I did this:

Wanna know what happened?

So do I!

All I know is that yesterday afternoon while I was at work, I squatted down to the floor to pick up a pen I had dropped and I felt a stabbing pain just to the medial side of my right knee….so bad it knocked me over! The same thing happened again at home last night, but as long as the knee was in a normal position, it didn’t bother me. Then this morning I did something to put all my weight on my right leg and it buckled!

I spent any free time I had at work today like this:

And although the swelling has gone down a bit, to be on the safe side, I’m now sporting one of these:

You know, I hear knee braces are on their way up in the fashion industry…yep, right up there with scrunchies and head gear!

On the bright side, it seems the stars were aligned ever so slightly or maybe the gods pitied my accident-prone existence because:

A.) We had a nice slower-paced day at work.
Good for rest….good for ice…and I actually got to leave a little early today so I ran by Sam’s Club on my way home (because that’s what foodies do when they need cheering up…they go grocery shopping) and restocked my supply of produce!

Woo hoo! Time for more brussel sprouts and pineapple bowls!

B.) I came home to a surprise in my mailbox.

Not only did my two favorite magazines show up on the SAME day, but I was actually excited for the first time to see the “junk mail” newspaper in my box.

Why, you ask?

BAM!

I’ve been saying we needed a Panera Bread for years…at long last, I will finally have Focaccia Asiago bread and Chicken Tortilla Soup only a 15 minute drive away from my house.

And finally…C.) I found a surprise package waiting for me on my doorstep!

I came home to the sweetest package from one of my favorite bloggers:

I sent her a few things I knew she would love about a week ago, and she sent me the best “thank you gift”. Can I get a heck yeah for Peanut Honey Pretzel Luna Bars?! I’ve been looking EVERYWHERE for this flavor!

And seriously, how cute are these thank you cards?

Debbie, you’re the best! And you have to tell me where you got these!

Fresh produce and mail…what can I saw, I’m easy to please πŸ˜‰

So, I may be the world’s record holder for accidental self-inflicted injuries like
throwing out my backΒ while getting a book out of a bookcase and I messing up my knee by picking a pen up off the floor, but I have a plan…

If Jimmy Kimmel can do it, so can I!

Falling Off the Wagon

Hey guys!

So, it’s good to know I’m not the only one around here who could use a little motivation in the food prepping department. Maybe all us procrastinators should start a support group. For each week we prep, we get a shiny new tupperware container…the really nice ones…like vintage mint!

I’m open to group name suggestions! πŸ˜‰

But of course, as you all know, there are bound to be times of weakness…

Like when I woke up this morning and realized that unlike yesterday where half my meals were already prepped, I had no idea what to make for breakfast, what to pack for lunch, and oh yeah, I woke up 20 minutes late!

Buttttttt before I get into all of that, let’s pop up our little party banner and see how I ended up doing on this week’s What I Ate Wednesday veggie challenge!

Ok, now where was I?

Oh yeah, I suck, I suck, I suck…AND I’m in need of a QUICK breakfast!

Coffee [duh] x 2 and a bowl of microwaved egg white oats!

This was my first time making egg white oats in the microwave…remind me never to do that again. The consistency was somewhere between sponge and styrofoam, but alas there was no time for alternative meals so I threw in a tablespoon of coconut flour to thicken things up, topped it with strawberry jam and a dab of cocoa almond spread and called it a meal!

Then I turned to the fridge and started throwing things into my lunchbox:

Carrots with mustard/yogurt dip (1/4 cup plain Greek yogurt + 2 teaspoons of spicy mustard) made for a nice morning snack.

And then…then there was lunch:

This is what you get when you randomly start tossing leftovers into a bowl…that would be wild rice, roasted brussels and cauliflower, diced ham, pineapple, and avocado.

And it was incredible!

I swear I always stumble upon the best combos when I’m not even thinking…who would have thought brussel sprouts and pineapple would go together?

As I was on my way to the gym after work, I reached in my lunch bag and was grateful I’d thrown in an orange as an afterthought.

Recycled pic, yes…but you get the point!

After finishing a GREAT workout at the gym (LiveFit Phase 1 Day 9), I was in desperate need of refueling:

Vanilla Bean Nectar whey mixed with water, ice, and 1/2 a banana…the perfect recovery shake!

And would you just check out those gorgeous specks!Β 

A little more than an hour later though and I was ready for some REAL food…but what to eat?

I decided to go easy on the leftovers so I have something for my lunches for the rest of the week, but to be honest with you, I was halfway through making this meal before I knew what I was doing.

A salmon fillet went into the grill pan…multiple vegetables were taken out of the fridge only to be put back in…what to eat, what to eat, what to eat?!

Luckily, in the end, it all came together:

And I must say, I even impressed MYSELF with the presentation! πŸ™‚

I massaged fresh lemon juice into a couple of handfuls of kale, sprinkled on a little pepper, topped it with the grilled salmon filet and some dried cranberries and served it alongside a cold sweet potato with an avocado “fan” (I swear the avocado totally did that on it’s own)!

Oh, and that drizzle on the salmon?

This mustard was MEANT for salmon!

I have to say I did a pretty rocking job on the fruits AND veggies today…even through my crazy rush of a morning which will NOT happen again since I’ve already increased the volume on my alarm clock, prepped the coffee pot AND packed my lunch for tomorrow!

That’s right, just dust the dirt off and jump back on that wagon!

Tomorrow is another day…and that’s one day closer to my minted tupperware! πŸ˜‰

Take Me To Tupperville

I hope you guys had a fantastic Easter Sunday!

After I finished caressing all my jars of nut butter, promising never to abandon them again, BB and I met my family at my grandmother’s house in Nashville for a picture perfect plate of comfort food!

I provided the steamed asparagus and (mandatory, as far as I’m concerned) deviled eggs!

But you know what the best part is?

LEFTOVERS!!

There wasn’t much food left after my family nibbled and noshed through the afternoon, but I did manage to smuggle a ziploc bag of ham home with me!

Once I got home with my ham haul, I felt a spark…

Let me just say right now that I am the world’s WORST at planning ahead for mealtimes…mixing up a batch of overnight oats before bed (ok, usually I’m already in bed when I think about it and have to get up) is as far as it goes with me. Which is why I can’t understand how I INSIST on buying a bag of dried beans nearly every time I go to the store thinking,

“I’m gonna switch to dried beans…no more canned ones for me”

Fast forward a week or so after I’ve looooong forgotten about that bag of beans and run to the store to stock up on Kroger’s organic low-sodium cans.

So about that spark…

All in just under an hour, sweet potatoes were roasted, rice was cooked, fruits and vegetables were sliced, dips were mixed…

And then I had a little tupperware city in the middle of my fridge:

I shall call it Tupperville! πŸ˜‰

Oh and I also roasted up those golden beets I picked up forever ago from the farmer’s market.

Aren’t they gorgeous?…like little slices of sunshine!

Who know’s, maybe after more than a year of reading this girl’s blog, something finally rubbed off on me…I think we could ALL take a few lessons from Elise…

So, where are those beans, you ask?

Hush your mouth…we’re taking baby steps here, people!

When I got up this morning, I realized that I didn’t have to rush around the kitchen trying to figure out what to pack for lunch while throwing back chugs of coffee and bites of breakfast. I actually had time to sit down for an extra 20 minutes and savor my coffee and my meal and I have to say…

I could get used to this!
