WIAW: The Little Piggy Edition

You ever have those days when you have a practically insatiable appetite?

You know, the ones where you can honestly visualize yourself eating something without even bothering with cooking or preparation of any kind because you’re just so freakin’ hungry?

Veggie lovers think ripping up some kale straight out of the ground and going to town dirt and all. Meat heads, well…I won’t go there…we don’t want to scar our veggie loving friends, but you know what I mean. 😉

Well, THAT is the day I had on Monday.

And thanks to Jenn of Peas & Crayons and the ever famous What I Ate Wednesday, you guys get to see it all!

I started my rather chilly morning with a big cup of black coffee…
and a side of fluffy white robe 😉

Then, with thoughts of this past weekend still in my mind, I assembled a ham and pineapple omelet (4 egg whites) with a bit of mozzarella cheese melted to perfection!

I thought about having some toast or maybe an English muffin to go along with it, but I figured the stats were pretty good to keep me satisfied for a few hours before snacktime rolled around…I was wrong.

I got to work at 8:00 and by 8:30 I was chowing down on this beauty:

I went to the cafeteria looking for something…but I didn’t know what…until I spotted my long lost love, the self-serve waffle station!

I swear when they first started it up a couple of years ago, I had a waffle everyday for WEEKS!

I mixed a little cinnamon and some raisins into the batter and topped it with maple syrup, chopped pecans, and a sliced banana.

Hit.the.spot!

For a few hours anyway…

I don’t know what these are…and I can’t really remember how they got into my hand…all I know is that they ended up in my belly.

And then not long after it was lunchtime…and I was so happy…because I was STARVING!

Romaine, ham, pickle, mustard on whole wheat bread with a honeycrisp apple and more pickles.

Ham twice in one day? Hey, I told you I “pigged” out! 😉
(Sorry, couldn’t resist)

Luckily, lunch kept me satisfied for about 4 hours. On my way to the gym for yoga class, I snacked on some Greek yogurt.

 Not my favorite flavor, but not bad…plus it was on sale for 99 cents…SCORE!

I got home from yoga around 5:3o and started feeling hungry AGAIN. Having already made plans to meet a friend for dinner, I didn’t want to spoil my appetite, but in the end, I was just too tired (and lacked the willpower) to say no to a few of these:

Yes, that would be the same Ritz/almond butter/pumpkin butter combo from this weekend…I am officially addicted. All I can say is it’s a good thing I’m out of Ritz crackers now!

Afterwards, I got ready and headed over to Kori (my absolute favorite local sushi restaurant) to meet Lettie for dinner

Her roll is on the left wrapped in the cucumber and mine is on the right (it had eel in it, but that’s all I remember…well, other than it tasted fan-freakin-tastic!)

Miso soup was also involved…I swear I could have a bowl everyday and not get tired of it!

I left feeling quite full and thought, “Ugh, FINALLY!”

And then, about 2 hours later, this happened:

Yep, straight outta the container…because I’m classy like that. Luckily it’s not the BEST flavor in the world (too much chocolate and not enough pb in my opinion) so I didn’t go totally crazy, but I’ll have you know I jumped in bed with a quickness after that little snack before I found myself gnawing on the kitchen sink!

I seriously don’t know what got into me because today has NOT been that way at all! In fact, I actually waited until I got to work today to have breakfast (yes, I caved and got another waffle) and didn’t feel hungry again for nearly FIVE hours!

So weird how the body works sometimes!

A Thousand Words…And Then Some

Hey guys! I hope you all had a great weekend! I meant to get a post up on Friday, but things sort of got away from me and then before I knew it, BB was on my doorstep and I was whisked away to Kentucky where we stayed the weekend with some of his family.

Of course I can’t go ANYWHERE without taking a crap-ton of pics, so allow me to bring you up to speed with a thousand words and then some!

Psst! If you read the whole thing, I’ll reward you with a pancake recipe at the end! 😉

Fact: Whenever I take down Christmas decorations, I am guaranteed to break at least ONE thing and find cat hair on EVERYTHING!

63 degrees…in Tennessee…in JANUARY…well that can only mean one thing:

Time for a run! 🙂

Odd snack-ums for the day: 1/2 a can of tuna mixed with broccoli and mustard and Ritz crackers dipped in almond and pumpkin butter.

And no, I’m not pregnant…I just haven’t been to the grocery store in weeks! lol

I did get a little more creative for dinner (but only because I was feeding BB too)…

Allow me to introduce to you a mild stroke of genius I encountered:

Avocado + ham + pineapple ring + broiled mozzarella cheese + toasted wheat bread =

Pure and utter delight!

After dinner, BB and I were off to Kentucky where we spent the rest of the weekend with his aunt and her boyfriend. We arrived a bit late, so it wasn’t long before we were tucked away for the night, but first thing in the morning *ahem* near afternoon, our day was off to a rather great start!

I don’t normally run two days in a row, but I had the chance to run with BB for the first time Saturday morning and there was no way I was turning that down! I was a bit nervous at first, but it turned out to be a lot of fun and he showed me some warm-up moves I’ve never done before that I think helped me during the run.

His aunt went all out and made us a big brunch afterwards of scrambled eggs, bacon & sausage, hashbrowns, and biscuits…and I’m kicking myself for not getting a picture! Not sure if there is anything better after a run than sitting down to a plate of comfort food.

After we finished eating, we went into downtown Paducah and did a little sightseeing:

Who would have thought that Trolls are already considered “antiques”?! Ugh, I feel so old!

Next up was this cute little artsy store with all sorts of interesting gems:

I totally got a kick out of this one…notice what’s in the pot? Lol

Not a skirt…that is in fact an apron…and I totally want one!

They also had quite the array of metal art:

Isn’t the clock awesome?!

Next we hit up a little Mexican restaurant called Tribeca and we all ordered margaritas (my blue one was the prettiest) and shared a plate of overloaded nachos.

So what did my blue margarita taste like? Well, it’s kinda like when you ask a kid what flavor popsicle they want and they answer with “red” or “purple”…yep, my drink tasted…BLUE…and it was delicious! 😉

Dinner was back at the house (sorry, no pic)…bacon wrapped filet mignon from Omaha Steaks and a mix of veggies and french bread spread with this:

Um, where in God’s name has this stuff been all my life?!

After such great hospitality and not one but TWO fantastic meals prepared by BB’s aunt, when we woke up Sunday morning, I showed my appreciation the best way I know how:

Pancake Sunday Style!

I’ve had a hunch for a while, but after this weekend, I’m pretty sure I can make pancakes out of just about anything!

After spying some leftover pecan pie, I got an idea…a rather brilliant idea if I do say so myself!

Pecan Pie Stuffed Pancakes

Prep Time: 10 minutes

Cook Time: 15 minutes

Ingredients (Serves 4)

  • 2 cups all purpose flour
  • 1/2 cup quick cooking oats
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 eggs + 2 egg whites
  • 2 teaspoons vanilla extract
  • 4 tablespoons butter, melted
  • 1 1/2 cups milk
  • 2 slices pecan pie filling removed from crust and crumbled (or 1/2 cup chopped pecans + 2-3 tablespoons maple syrup)

Instructions

1. Heat a large skillet over medium heat and coat with cooking spray.
2. Combine the first four ingredients in a large bowl and stir together.
3. In a separate bowl, whisk eggs and egg whites. Add vanilla, butter, milk, and sugar and whisk until incorporated.
4. Add wet ingredients to dry ingredients and stir just until combined.
5. Fold in pecan pie filling (or pecans mixed with syrup).
6. Pour batter into skillet and cook 4-5 minutes before flipping.
7. Allow to cook 2-3 minutes on the opposite side before plating.

Served with a pat of butter and drizzled with sticky sweet maple syrup, this was almost like having dessert for breakfast! Soooooo good!

Not long after breakfast, BB and I made the trek back to Clarksville and enjoyed the rest of the night on the couch eating coconut milk “ice cream” out of the container and laughing hysterically while watching Bridesmaids. If you haven’t seen it, I totally recommend it!

WIAW: Bits & Pieces

Hey loves! Thank you all so much for the sweet comments on my NYE post. You guys totally have me blushing over here!

So, is it just me, or has this week been sort of crazy?

I swear I’ve been go-go-go since the 1st…so much so that I totally slacked and am just now getting my WIAW post up!

Oh yeah, time for the first What I Ate Wednesday of 2012!
As always, a big thank you to Jenn of Peas & Crayons for putting together our round-up of deliciousness each and every week!

So I noticed a theme with my eats yesterday…total randomness…a food “quilt” if you will.

But forget me trying to explain, I’ll just let the pictures do the talking:

Breakfast Numero Uno (6:00am)

Leftover biscuit and gravy from breakfast at Cracker Barrel with friends the day before.

Breakfast Numero Dos (8:00am)

A slice of leftover banana bread (recipe coming soon!)

And finally Breakfast Numero TRES (9:00am)

Navel orange and 1/2 caff Pumpkin Spice coffee x 2

Long story short, I woke up thinking I could make it to the gym for a workout around 6am, but since I stayed up WAY too late with some friends the night before (a New Year’s Eve encore of sorts) there was NO way that was going to happen…I should’ve went back to bed, but no silly me decided to stay up and watch 1/2 of Love Actually (haven’t finished it yet) and making random trips into the kitchen for things before finally deciding to get my butt in the shower and get ready for work!

Lunch (12:30pm)

My typical lazy girl fall back…peanut butter and banana sandwich + protein shake. I tried two new things this time though…Wild Squirrel’s Sneaky Cinnamon PB (holy cow, it’s even better than PB&Co’s Cinnamon Raisin Swirl) and a new flavor of Nectar protein powder…Crystal Sky. It kind of tasted like a Capri Sun, and therefore took me waaaaaaay back to the days of Lunchables, Mondos, and Fruit by the Foot. 🙂

Snack (4:30pm)

A nearly empty container of Sabra hummus and broccoli stalks/pieces…can you get anymore random than that?

Dinner (8:30pm)

After a terrible day at work, all I wanted was something quick and easy…cue cereal with peanut flour and some leftover fruit salad from this weekend’s holiday festivities with the fam and I was in bed by 8:45…yeah, one of those days!

Water count = 72 ounces

Not bad considering the day that I had. I had planned on going to the gym after work since I missed my morning workout, but you know, sometimes you just have to listen to your body…and that extra few hours of sleep was GREATLY appreciated when I woke up this morning!

Speaking of bed…I believe it’s calling my name right now!
