I’m Dreaming of…a Giveaway Winner!

First off, I just have to say you guys are the best! Thank you all so much for all the sweet comments on Broccoli Babe’s introduction yesterday…who knows, maybe this weekend, I’ll let him know about his debut! ๐Ÿ˜‰

So what were you kiddos up to this weekend?

I planned to put up my Christmas tree on Saturday afternoon with the help of BB, but unfortunately this past weekend was one of my few on-call weekends and I ended up having to go in to the hospital for about 8 hours. It kinda sucked, but I could barely hear those negative thoughts in my head for all the “cha-ching-ing” going on!

We’ll just call it my little Christmas bonus! ๐Ÿ˜‰

So since Saturday’s plan flopped, hall decking was going to commence Sunday after those delicious put-anyone-in-the-Christmas-spirit pancakes

baaaaaaaaaaaaaaaa-ut…

It started raining.

And then it rained some more.

As you may or may not know, here in Tennessee, we have WET Christmases.

And by then, BB and I had made rather attractive looking dents in the couch while watching movies and looking up stand-up comedy skits on You Tube. Sunday laziness took over and to tell you the truth, I didn’t mind one bit!

But today, I knew what I had to do!

O artificial Christmas tree, o artificial Christmas tree, I love your pre-lit branches!

With Pandora playing the best of Frank, Dean, and Bing, I got to know my inner elf as I started prancing around the room opening up boxes and unwrapping ornaments.

Only briefly halted when I encountered this:

Seriously? Why do we even save these things from year to year??

Tangled hooks, tangled hooks, tangled all the waaaaaay!

Luckily, I was able to carefully untangle shake the hell out of them until I had enough to cover my stash of ornaments.

Silver balls, silver balls, it’s Christmastiiiiiiiime in my living roooooooooom!

But anywho…

before I butcher to many more Christmas carols…

Wow, what IS in this eggnog?!…

Gingerbread Cookie Pancakes & Some News

Guyyyyyyyyyyyys!!!!

You know when you have that friend that goes out and finds herself a boyfriend and then totally ignores all of her friends after that?

Well, I am totally guilty of being THAT girl for the past few days!

The REAL question is…how much did you guys miss me??

But no seriously, I guess since I went “Facebook public” with it the other day, I guess it’s the perfect time to introduce to you guys who’s responsible for whisking me away from the blog the last few days.

*I promise he’s not another nut butter*! ๐Ÿ˜‰

I shall call him Broccoli Rabe Babe ๐Ÿ˜‰

Sorry ladies, but sadly BB doesn’t have any brothers ๐Ÿ˜‰

And just in time for Pancake Sunday, I walked into the kitchen this morning with motivation to make some pancakes for my vegetable-lovin’ man.

But not just any pancakes…

With the weather getting colder, and the neighborhood full of houses decked with icicle lights, I knew it was time for a good solid recipe that screamed Christmas!

Gingerbread Cookie Pancakes

Prep Time: 5 minutes

Cook Time: 8-10 minutes

Ingredients (Serves 2)*

  • 1 cup whole wheat pastry flour
  • 1 teaspoon sodium-free baking powder
  • 1 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 3/4 cup unsweetened almond milk
  • 1 egg (or 2 egg whites), whisked
  • 2 tablespoons butter, melted
  • 2 teaspoons vanilla extract
  • 2 tablespoons molasses
  • 1 tablespoon brown sugar

Instructions

1. Heat a non-stick skillet to medium heat and coat with cooking spray.
2. In a medium-sized bowl, combine flour, leavening ingredients, and spices and mix with a wire whisk to blend together evenly.
3. In a separate bowl, combine milk, egg, butter, vanilla, molasses, and brown sugar and whisk until smooth.
4. Add wet ingredients to dry ingredients and stir just until flour is incorporated.
5. Spoon batter onto skillet using an 1/8 cup measuring cup to form 12 “cookie-sized” pancakes.
6. Cook 4-5 minutes per side or until golden brown with crisp edges.

I swear the Christmas sprinkles just APPEARED after I plated these plump cakes of gingery goodness!


And then some crazy penguins showed up…


As you can see, we had plenty of cakes to have a party! ๐Ÿ˜‰

A Day of Deliciousness

I have to say that today was a pretty delicious day…

It all started with my standard cup of coffee (Starbucks Christmas Blend FTW!) with a side of fuzzy robe sleeve…a must with the freezing temperatures we’ve had lately :-/

I didn’t really have time to make anything elaborate for breakfast this morning, but I was super excited to try a new cereal that I picked up at Target last night.

Anybody tried Kashi’s Golden Goodness?

It’s fantastic! Perfectly sweet, full of fiber, 7 grams of protein…AND a serving size is 1 1/4 cups which is perfect if you have a little fat kid inside you like me that HAS to have volume when it comes to breakfast! ๐Ÿ˜‰

I added a sliced banana, cinnamon, and some unsweetened almond milk and it kept me full for about 3 1/2 hours…not bad for cereal!

My snack came in the form of some glorious (and almost forgotten) pumpkin pudding.

I haven’t made this little treat since back in March and had forgotten all about it until I finally got some peanut flour back into my possession last week.

Instead of following Gabriela’s original recipe (I was too lazy to look it up), I mixed 1/2 cup pumpkin, 1/4 cup peanut flour, 1/8 cup almond milk, a sprinkle of cinnamon and topped it with some pumpkin spice almonds.

‘Twas delicious!

Lunch made use of some of the turkey meat leftover from Thanksgiving. I was out of cranberry sauce to add to my sandwich (which is amazing!) so I chose some red pepper preserves as a substitute. There was also some of TJ’s sweet hot mustard, spinach, and a slice of provolone cheese.

And for “dessert” I had a SUPER ripe and SUPER sweet persimmon

After I got home from the gym and before I got started on dinner, I snacked on some broccoli and homemade Greek yogurt dip.

Greek yogurt + packet of dehydrated vegetable dip mix =

Y-U-M!

I had my friend Sherri over for dinner and since I know Olive Garden is one of her favorite places to eat, I decided to create a little Soup, Salad, and Breadstick action at home…only the multigrain loaf was on sale at the store and the breadsticks were not ๐Ÿ˜‰

The soup was a recipe for White Bean and Mushroom Stew from the latest issue of Whole Living (my new favorite magazine…thank God I found out my mom just bought me a subscription for Christmas! ;)) and it turned out perfect! I was supposed to puree the tomatoes before adding them, but I prefer my soups more on the chunky side so I decided to leave them be.

The salad was FAR better than any OG salad I’ve ever eaten and it was chocked full of REAL greens…none of that silly iceberg nonsense!

Now as I sit here typing this up, I am enjoying some evidence of my roadtrip to Whole Foods this weekend…Liz’s favorite: Cookies & Cream Arctic Zero!

Oh and that’s not the lighting…it IS actually gray colored “ice cream”!
A little weird, but super tasty!

Not my best day, but definitely better than last week!
