I just had to share a few shots from Emilia’s and my trip to Pleasure Point the other day. Plus, it was…

My first time seeing the Pacific Ocean!

First, we made our way down the strip to the ocean front…

We spotted some surfers hoping to catch a wave…

While silently rooting them on…

Until one finally came!

One day, I’ll give it a go myself (it’s definitely on the bucket list)…though I’d prefer it to be in water that is above freezing! ๐Ÿ˜‰

We spotted sailboats in the distance…

Then, in the words of Julia Roberts,
we “copped a squat” and just watched the waves come in…

While I sipped on some perfectly roasted local coffee.

If you ever find yourself in Santa Cruz and in the mood for a good cup of Joe, I definitely recommend stopping at Verve!

And after our relaxing trip walking around downtown and enjoying the view, Emilia and I put together a delicious dinner…

San Jose Blogger Meet-Up

After my flight landed in San Jose on Saturday night, I had the pleasure of meeting up with some fantastic ladies for dinner. Emilia and I made plans a few days before my trip to meet up with Nicole and Natalie at a highly-rated vegetarian restaurant in downtown San Jose called the Vegetarian House.

Vegetarian House [is a restaurant] serving fresh organic cuisine with a wide range of flavors from all over the world.

I knew as soon as I opened the FIVE page menu that my tastebuds were surely in for a treat…though I’m sorry to say it cost us a little more patience than we had anticipated. After waiting for nearly 15 minutes, we were finally able to flag down a waiter JUST to take our drink order. Our round of waters (big surprise coming from a table of food bloggers, right? Save money on drinks and go for the food! ;)) came the table a good 10 minutes later.

Strike one, VH…strike ONE.

On the bright side, the four of us had PLENTY of time to look over the menu, forget about actually having to decide on what to order, talking about our lives, school, work, latest and greatest in cooking, baking, and eating, and then finally get back to the menu with a decision of indecision: when in doubt, order a smorgasbord of entrees to share!

The raw pad thai was the first thing that caught our eyes…never-mind the fact that there was a huge color picture of the dish in the first flap of the menu with the words “today’s special” written below…no, we’ll just call it fate.

A mountain of raw veggie goodness, scattered with slivered almonds and drizzled with a dressing that had the perfect proportions of citrus and ginger.

The next thing that we decided on was the quinoa sushi.
Oh yes, you heard read me write right, that would be sushi, with quinoa…

and carrot, mushrooms, onion, pickle, and avocado
with a delicious creamy sauce.

Besides being a bit fragile (there’s quite a bit of difference in the consistency of sushi rice and quinoa), these definitely hit the spot…I may or may not have swiped the last one when no one was looking! ๐Ÿ˜‰

Next up was what was called the “Joy Luck Deluxe”

Tofu, mushroom, carrot and soy protein sauteed in a seasoned brown sauce,
surrounded by steamed broccoli and carrot

Sadly, this dish was the biggest disappointment. The broccoli was perfectly steamed and tasted great, but both the texture and the flavor of the tofu and “soy protein” left something to be desired. Before ordering, we actually asked our waitress what the “soy protein” was exactly, but due to a bit of a language barrier, we were as sure of it’s origin after the question as before.

Strike two, VH…strike TWO.

Little did we know it would be the SPAM of their vegetarian menu…

Luckily we had a bowl Hot and Sour Soup and a side order of wild rice to make up for the flavor lacking faux-meat dish.

A little on the spicy side (just enough to get your sinuses going), I thought the soup was great! The flavors of cilantro and jalapenos seemed to permeate the every ounce of the broth making each bite warm and welcoming!

Unfortunately, we were all so hungry by the time the food FINALLY arrived that the only pic I have of our meeting is a shot of Nicole working her camera muscles! ๐Ÿ˜‰

When it came time for the check, I explained to our waitress that we simply wanted to take our bill and split it evenly four ways…well obviously, that was a bit much for her to wrap her head around at the end of a Saturday night because it took me explaining it FOUR more times, before she even looked like she understood me! Oh and that was before she dropped off the check and then disappeared for TEN minutes!

Strike three, VH…you’re OUT!

All in all, I’d say from a dinning perspective, the Vegetarian House had a great selection of entrees and a wide variety in flavors, but from a diner perspective, their waitstaff could use a little help. I was also a little disappointed in the fact that nearly every dish featured some form of faux-meat.

Perhaps it should be renamed the Tofu House?

Although I wasn’t pleased enough with the restaurant services to be singing it’s praises anytime in the near (or distant) future, I’m so happy to have met both Nicole and Natalie! I had a ย great time getting to know you ladies and would LOVE the chance to do it again before the end of my trip!

Do you always tip the same or does it depend on the service?
I am a firm believer that you shouldn’t positively reinforce bad behavior…whatever the case may be. I do my best to give the waiter/waitress a couple of chances, but honestly, I’d say the majority of the time, they start off at 20% and work their way down from there…although I have been known to leave more than that if I was EXTREMELY satisfied with my service!

Pancake Sunday: California Style

Hey hey from sunny …er, cloudy? California!

It’s a cool 70-something degrees here, but believe me, I welcome it with open arms…especially after our heat index of 115 the other day in good ol’ Tennessee!

I arrived in San Jose, CA last night around 7pm and I have to say it was the smoothest trip I could have ever asked for. I got through airport security in record time, boarded the flight AND got a window seat, and the plane actually took off a few minutes ahead of schedule! Woo hoo!

I swear I was humming this song the entire flight…

I was so excited to finally get in and meet Emilia for the first time! She’s just as beautiful in person as she comes across in her blog. As I imagined, or should I say, as is the case with most blogger meet-ups, we hit it off right from the beginning…talking all about the trip, the activities we have planned for the week, and all the yummy creations we intend on whipping up in the kitchen…

This morning we woke up early and went for a run along the beach. It was a bit chillier than what I’m used to, but of course after a couple of miles, I was so engrossed in conversation and the occasional glance over at the ocean that I didn’t even feel it.

Once in from the run, we unloaded just about everything from the pantry, cupboards, and refrigerator and started on breakfast! Emilia decided on a delicious combo of fruits and veggies and manned the juicer while I dove head first into her collection of gluten-free flours and set to work on…

Pancakes of course!

Triple Berry Coconut Pancakes: (serves 2)

  • 1/2 cup brown rice flour
  • 1/2 cup millet flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1 flax egg (1 Tablespoon ground flax + 3 Tablespoons water)
  • 2 Tablespoons coconut oil, melted
  • 1 cup unsweetened vanilla almond milk
  • 2 teaspoons vanilla extract
  • 1 cup of mixed berries (I used chopped strawberries, blueberries, & raspberries)

1. Heat a non-stick skillet over medium-high heat and coat with cooking spray.
2. Prepare flax egg and allow to set while you prepare the pancake batter.
3. Combine flours, baking powder, and cinnamon in a medium-sized bowl.
4. In a separate bowl, stir together the coconut oil, almond milk, extract, and flax egg.
5. Add wet ingredients to dry ingredients and stir until all the flour is incorporated.
6. Add the berries.
7. Spoon out the batter into prepared skillet (ours made 6 pancakes total) and allow to cook for 4-5 minutes per side*

*The batter will not bubble like most gluten-containing batters. Just look for the edges to start to crisp before flipping them.ย

Topped with fresh berries, coconut shreds and maple syrup, of course!

And I may have dipped into Emilia’s coconut peanut butter stash after the “photo shoot”

I LOVE experimenting with gluten-free flours! I couldn’t believe how well these cakes turned out…a little on the fragile side…but as long as you talk sweet to them as you take out your spatula, they seem to do really well! ๐Ÿ˜‰

I didn’t add any sweetener to the batter, but both Emilia and I thought they were perfect for our tastes due to the natural sweetness of the berries, but if you prefer your cakes a little sweeter, I’d suggest adding 1/2-1 Tablespoon of sugar or a packet of Stevia to the batter.

The perfect blend of sweet and tart, crisp and smooth!

Well, I’m off! We have plans to attend a raw foods class at Whole Foods today and afterwards, we’re going to take a stroll up the beach! Pictures to come, of course!
