Not Your Average Hummus

Wow! That’s all I know to say right now! I was a little hesitant last night to click “publish” but I’m so so glad that I did! I just finished reading through all of your comments and I can’t thank you all enough for the huge amount of support I feel right now! I love you guys SO much!

I think for now, I’m just gonna go with the flow and see where it goes….if I feel like posting every day one week and only a few days the next, so be it! Just know that I have absolutely NO intention on quitting blogging for a LONG time! I love it too much!

I have actually been excited all day today to get to this post tonight! I have a little something for you guys…

I made PB&J!

Wait…was that a little anticlimactic? Oh, I’m sorry. Let me try this…

I made PB&J HUMMUS!

Are you still there? I promise it’s absolutely delicious! Remember the disclaimer people!

It all started when I got a craving for one of my childhood favorites for dinner. It is practically impossible for me to sink my teeth into a PB&J without thoughts of bike riding, hide-n-seek, and Saturday morning cartoons. And while I’m totally not against indulging in childhood comfort food, a simple PB&J never really “sticks to my ribs” as my mama would say (Hi, Mom!).

So, how do you make a sandwich that’s filling for a five-year old work for a more grown-up sized hunger? You add beans!

Black Bean PB&J Hummus

Cranberry Bean PB&J Hummus*

*Don’t be lured into buying cranberry beans for a recipe thinking they are some sort of fancy new and exotic ingredient…they taste like plain.old.pintos! #imnotbitter #ihateyoufoodnetworkmagazine

PB&J Hummus: 

  • 1 cup cooked beans
  • 3 tablespoons creamy peanut butter
  • 2 tablespoons of your favorite jam or preserves
  • 1-2 tablespoons of water as needed to thin out mixture

Combine all ingredients into a food processor, Magic Bullet, or blender and give it a spin. You will have to stop a few times to scrape down the sides of your mixing vessel…hmm, I like that word…all of a sudden I feel like I’m making hummus on a submarine! 😉

But wait just a minute…this isn’t JUST for sandwiches…

It also makes for a fantastic dip for apple slices!

They are totally loving their dip in the “hummus hot tub” 😉

Let’s Be Honest

Hello lovelies! I just read through all the comments from yesterday’s post and WOW! You guys were some busy little bees yesterday!

I was pretty productive myself! For the first time in I don’t know how long, the day seemed to kind of stretch on and on. I actually can’t believe how I managed to do everything I did!

  • worked out
  • did laundry (well, sort of…folding is the bane of my existence)
  • prepped food for the week
  • washed dishes
  • typed up my first guest post (all to be revealed soon, my pretties)
  • typed up my OWN post
  • and cleared out my Google Reader!
Is it wrong to get THIS EXCITED over such an accomplishment??
My answer is NO! 😉

The best thing about catching up? Finding some amazing posts by some of my fellow bloggers that really made me think! One of the things I love most about reading blogs is getting the opportunity to learn more about myself. It’s not always about the recipes and the drool-worthy eats, it’s about LIFE!

A few of the posts that I can’t stop thinking about:

  • And an old post of Janetha’s on Spring Cleaning from the inside out (I’ve seriously read this post at least a dozen times by now.)
  • Elise’s post on Intuition and the struggle with intuitive eating.

I love these ladies for their honesty and openness and for helping me to realize there are some things I need to change…starting now!

I am officially joining Lindsay’s Fresh Approach and claiming dinner as my meal of the day with ZERO distractions! It’s really sad how my laptop and I seem to be connected at the hip…wait, do computer’s have hips?…eh, I digress. I also really want to stop depending on technology as my sole means of entertainment. Seriously, when is the last time I read a book?! Yeah, so much for those New Year’s Intentions, huh?

Just like Janetha, I need to do a little spring cleaning of my own, a little “dusting around the broccoli stalks” if you will. Along with the stress of the new house, my eating habits have been so unpredictable and sporadic. But over the past week or so, I’ve fallen back in love with running (nothing hardcore, just a couple of 5K’s) and since then I’ve been drinking a LOT more water and becoming more aware of the “fuel” I’m giving my body.

While reading Elise’s post, I felt as if she wrote it just for me. Over the last couple of months, I’ve been so proud to see KMB grow and welcome new readers! It really warms my heart to know that there are people out there who actually care what I have to say and understand (or at least tolerate) my quirks. I LOVE that I discovered this community. Blogging is honestly the first real hobby that I’ve ever had and I find so much joy in sharing and communicating with you guys via my little corner of the blogosphere!

But I’ll be honest, sometimes “It ain’t easy being green blogging!” I’m constantly trying to think of new and inventive recipes and struggling with the daylight (or lack thereof with all the rain we’ve been getting) so that I can have blog-worthy photos! It’s hard. Sometimes I don’t WANT to take pictures of my food. Sometimes, I don’t WANT to make my food look pretty. Sometimes I just want to EAT! 

Lately, I’ve only been taking pictures of my food when I feel like it. Forgive me if the recipes aren’t rolling out quite as quickly as they have in the past, but I want to keep this blog FUN…for me AND for you! I don’t want to feel like I’m under pressure to debut the next best dish in “x” amount of time…I want it to just come to me and I want to feel excited to share it, not obligated.

Hookay! So is this the longest post in history or what?! Hope you guys are still awake out there! And well, I couldn’t put you through all that crazy rambling without sharing at least ONE foodie pic:

My dinner tonight was a PERFECT combination of sweet and savory! Notice my sweet potato in the background? I finally got around to trying the banana/avocado combo!

Cinnamon Raisin Stacks of Goodness

Hey peoples! I hope you are all enjoying the last bit of your weekend! I can’t believe it’s already May! Wow, time has been flying lately…where did April go?

Usually on Sunday morning, I wake up with a plan…a pancake plan if you will. Because you guys know that a Sunday without celebrating Pancake Sunday just doesn’t happen in Casa de Broccoli! 😉

This morning, my plan was one that had already been executed by another genius mind…Kayla from Little Miss Healthify! This gal amazes me with her talent in the kitchen at such a young age. I only WISH I knew half of what she knows when I started college. Maybe I wouldn’t have had to subsist on pizza rolls and cold cereal…ah, but that’s a story for another day! Let’s get to the stacks!

I knew from the time I saw her post for these Cinnamon-Raisin Pancakes that I had to try them! I mean, how can one resist the classic combo of cinnamon and raisins?

I followed the recipe exactly, only subbing whole oats for about 1/4 of the oat flour and adding in 1 teaspoon of vanilla.

I layered my cakes with Sarena’s Coconut Cream (unsweetened) because let’s face it, I will NEVER get tired of that stuff!

And topped them with PB&Co. Cinnamon Raisin Swirl and unsweetened coconut

They ARE as good as they look…but don’t just trust me, try them for yourself!

Halfway through demolishing graciously savoring these cakes, I remembered this guy in the fridge!

Ohhhhhhhhh Myyyyyyyy Word!

No words. Nope…none!

Well, I’ve spent the majority of the day getting caught up on blogs and piddling around the house instead of going to the grocery store and finishing the laundry…and now it’s POURING outside! Hmm, suddenly clean clothes take surprising precedence over produce and almond milk! 😉
