WIAW: Chipotle Ain’t Got Nuthin On Me!

Hey everybody! I want to just take a minute to say thank you again to all the sweet comments and congratulations regarding my first house purchase! I’m excited to begin this new chapter of my life and so glad that I get to share it with all of you!

Today will mark the official first day of the Clean Out the Fridge/Pantry Challenge and of course with it being Wednesday, you get to see EVERYTHING!

I stopped by the store today on my way home and picked up a few fresh veggies & fruits…challenge or no challenge, I cannot and will not go without my staples!

  • green leaf lettuce
  • tomatoes
  • avocados
  • 1 lime
  • kale
  • bananas
  • 1 bag of baby gala apples (I mean seriously, they are so tiny!)

The first 4 items went in to making dinner…more on that in a bit. I had to get some kale after drooling over seeing Elise’s creamed kale recipe the other day and nanners & apples because let’s face it…life without one or both is frightening! 😕

Alright, without further adieu, I present to you What I Ate Wednesday!

Breakfast (6:15am)
Savory Oat Bran + 1/2 caff coffee

Smoky Cheeze Oat Bran: (serves 1)

  • 1/2 cup oat bran
  • 2 cups water
  • 1 1/2 tablespoons nooch
  • 1/2 teaspoon smoked paprika
  • 1/8 teaspoon garlic powder
  • scallions
  • 1 egg, cooked to your liking

1. Combine oat bran, water, nooch, smoked paprika, and garlic and cook over medium           heat for about 3-4 minutes (oat bran cooks SUPER fast!)
2. Transfer to a bowl, top with egg, scallions, and more smoked paprika!

 

When it comes to savory breakfast grains, oat bran is by far my favorite! The addition of the nooch gave it a perfectly salty and cheesy taste that went nicely with the smokiness of the paprika!

Morning Snack (9:30am)
New-to-me Jocalat flavor….SOOOOOO good!

And a new-to-me tea!

Lunch (12:30pm)
BBQ tuna salad + 1 clementine & diced pineapple

What’s in the salad?

  • collard greens
  • button mushrooms
  • sweet mini peppers
  • tomatoes
  • roasted red onion
  • shredded cheese
  • sliced tuna steak
  • Trader Joe’s natural bbq sauce

Afternoon/Pre-workout Snack (4:15pm)
2 medjool dates stuffed with TJ’s Valencia crunchy PB

And now, for dinner! I went to Chipotle for the first time a few weeks ago. I swear I have been dreaming about the burrito bowl I devoured enjoyed there everyday  since then! Tonight, I was on a mission…

Mission complete!

Dinner (7:00pm)
Chipot-nay Burrito Bowl topped with
guacamole, plain Greek yogurt, & chipotle salsa

This was so easy to throw together! And you know what the best part was? I didn’t have to pay $1.75 extra for my guacamole!

Layered Up!

  • green leaf lettuce
  • cilantro lime rice
  • black beans with red onions
  • diced tomatoes
  • guac, sour cream Greek yogurt, salsa, and more cilantro

All I did for the rice was heat up a package of TJ’s fully cooked brown rice (pantry staple) and added the juice of half a lime, and about 1/4 cup of cilantro. For the beans, I sauteed 1/2 cup red onion and then added 1 can of low sodium black beans, and added some kick with 1 teaspoon adobo sauce (from canned chipotle peppers), garlic, black pepper, and Mrs. Dash chipotle seasoning.

Everything was spot on except for the rice which seemed like it was missing something. I totally agree with Christin…that stuff is laced with crack!

Over the course of the day, I consumed 40 ounces of water and 32 ounces of tea. I’m currently getting in touch with my narcoleptic self while sipping some lovely chamomile tea!

And now, I’m hungry again! Hang on…

So there ya have it! Today’s meals definitely made a dent on the supply of foodage in my kitch! 16 more days of this and I may be in pretty good shape!

And So It Begins…

Hey guys! Thank you all so so much for your sweet comments and congratulations about the new house! I am so excited/nervous/anxious that I don’t even know how I’m going to make it the next few weeks!

I realized something last night that I’m sure will keep me nice and distracted until Move Day…eating down some of my food hoardage in the kitchen! Up until this past week, I haven’t given any thought to the day where I would actually sell this house and move, so I’ve been buying groceries, cooking to my heart’s content, and refrigerating/freezing leftovers. Let’s just say that for the next few weeks, meals are going to have to get a little creative…and so begins the Clean out the Fridge Challenge!

I think I got off to a pretty good start with today’s breakfast and dinner.

Anyone for a sweet collard greens smoothie?

I think this bowl actually beats out the last green smoothie bowl I made using spinach. It was so sweet and creamy! I just kept adding things to the food processor and out came this magnificent bowl!

Sweet Collard Greens Smoothie Bowl: (serves 1)

  • 2 handfuls chopped raw collard greens
  • 1 cup unsweetened almond milk
  • 1/2 avocado
  • 1 medium banana
  • 1 scoop protein powder (I used a vanilla flavored whey)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon xanthan gum
  • 1/2 tablespoon chia seeds

Combine all ingredients and blend until creamy! I topped mine with some honey almond granola that I picked up on my last trip to Whole Foods and a plump and pretty steebie!

I was super busy after work today! I met with my realtor to talk about some things and give her my carpet/hardwood selections, dropped off my…ahem, overdue…library books, AND got to pick out my stainless steel appliances for the new house! The only thing that I’m lacking is a washer and dryer. Guess I’ll be stalking Craig’s List the next few weeks!

When I got home, a much-involved dinner menu was the LAST thing on my mind! I decided to take advantage of some leftovers and had a great tasting dinner in about 15 minutes!

BBQ Tuna Melt with Steamed Broccoli & Tomatoes

I took out a cooked tuna steak from the freezer a few days ago and let it thaw in the fridge. I cooked a batch of them up a few months ago (plain and simple pan fry with salt and pepper) and just froze them individually for when a quick dinner was needed.

All I did was top a piece of whole wheat sourdough bread with half of a tuna steak, sautéed red onion, Trader Joe’s all natural bbq sauce, and a slice of muenster cheese. Then I popped it under the broiler for a couple of minute until the cheese got melty and gooey!

Dinner was FANTASTIC! I’ve done similar dishes with chicken, but the tuna steak so much better and it went perfectly with the sweet and spicy sauce!

The broccoli I simply steamed and tossed with tomato wedges in balsamic vinegar and sprinkled with freshly ground black pepper.

Ya-um!

So I’m thinking this challenge may be sorta fun! Ha, yeah ask me how I feel the in 2 1/2 weeks when I’m eating mustard and crackers!

But ya know what is the best part about living in a house that’s no longer on the market? No more house staging! Every morning I would get up and get ready and then do the dishes, make the bed, sweep the floors, and be sure that EVERYTHING was in its appropriate place….I was tired before the day even started! Not anymore! This morning, I left cabinet doors open and dirty clothes on the floor…just because I could…then I picked them up as soon as I got home because I’m a bit of a clean freak! 😉

I never did before I put the house on the market, but now it’s a habit! I made it up this morning without even thinking about it!

Ok, so I was trying to figure out the best way to share my super incredible, awesomely fantastic (adjective overload) news with you. Since a picture is worth a thousand words, and it really is a whole lot quicker to see rather than read them all (trust me, I could get wordy with this…I mean c’mon, I just used 4 words to describe “news”!) why don’t we just start out with a picture intro?

Obviously this is meant to be me and my strong, yet oddly shaped, biceps muscles! 😉

Haha! I know you are all super impressed with my artistic ability! Can you believe I’ve never had one day of professional training??

I’M MOVING!!

Ok, ok…so what’s the big deal? It’s not like I’ve never moved before! The reason that I am thisfreakinexcited is:

I’M BUYING MY FIRST HOUSE!

Wooooooooooooooooooooooooooooooooo Hooooooooooooooooooooooooooooooooo!

AND THE KITCHEN IS HUGE!

Check…it…OUT!

A tad bit of history: The house I currently live in (originally purchased by my ex) has been on the market for almost a whole year! There have been a couple of handfuls of showings, but nothing promising. Just last week, after I’d pretty much given up all hope and figured I wouldn’t have any more interest at least until Spring, there was a showing….and the person LOVED it…and made an offer the very next day!

I’ve leisurely looked at some houses before, but obviously there was a huge need to shop fast so my realtor and I hit the pavement! Out of the batch of houses the agent gathered up for me, I narrowed it down to this one, but really, how much considering is needed with a 9×20 kitchen?!

I made an offer last night and it was accepted late this afternoon! I close at the end of the month! Ahhhhhhh!

So….who out there owns a truck and wants to help me move?? I guarantee a killer workout and some on the house recovery fuel, because what’s a moving day without a little of this:

Alright, I’m off to bust out some Carlton moves look through carpet/hardwood samples while I munch on some Puffins straight from the box because I’m classy like that!
