A “Me Day” V-Day!

Happy Valentine’s Day to all my sweetheart readers out there!

I hope you are all getting your fill of chocolatey sweets today…in the name of the holiday, of course! 😉

I started my day off with a little chocolate covered love from Katie in the form of a bowl of Voluminous Oats that was appropriately drizzled with some rich chocolate goodness!

In the bowl:

  • 1/2 cup oats
  • 1 cup unsweetened almond milk
  • 1 cup water
  • 1/2 teaspoon almond extract
  • a handful of chopped fresh steebies

To make my voluminous bowl a little creamier, once the oats were warmed up this morning, I processed them in my Magic Bullet until pink and pretty! Then I topped them with vanilla almond granola, MaraNatha Dark Chocolate Almond Butter, and a few steebie hearts! <3

I’ve never been much of a V-Day celebrator, but it’s always fun to have an excuse to play with my food! 😉

As a “single lady” (cue Beyonce if you will), today also gives me an excuse to sit around on the couch looking like this…

Now, if you’ll excuse me, I think I’m going to work on getting the chocolate out from under my nails give myself a manicure and cuddle up with my “date” for the night!

Not Your Average Chocolate Pancake!

Who out there is up for a Pancake Sunday ultimate chocolate trifecta?

Chocolate pancakes topped with chocolate mousse and chocolate chips!

Don’t you wanna just lick the screen?

Mmmm!

Now you guys should know by now that my food is anything but ordinary, so you shouldn’t be too surprised when I tell you that those pancakes are a variation of Lori’s Black Bean Pancake Stacks and they are topped with Heather’s Chocado Sauce which is actually just a blend of 1/2 an avocado, some water, cocoa powder and sweetener!

I was so excited to try out this recipe! I was all out of black beans so I followed Kate’s lead and subbed in 1/2 cup of cooked lentils, but other than that I followed Lori’s recipe to a tee. It produced four large but thin pancakes that I stacked alternating with a good spread of “chocolate mousse” on each layer.

It tasted just like I was eating a chocolate pudding cake! Pure melt in your mouth deliciousness! I’d invite you guys to try some, but I polished off the whole plate in record time and then licked the plate! Just kidding…or am I?? 😉

Well, I’m going to keep this post short and sweet! Not much on the agenda for the rest of the night except for some light reading and more green tea/Emergen-C guzzling!

Knock Knock!

“Who’s there?”

“Postman!”

“Postman who?”

“No, seriously…it’s your postman. Couldja open the door?”

“Oh, um…yeah, ok.” (How embarrassing) 😉

Another day spent on the mend. I’ve kept up with the regular regimen and I’m feeling like I’m making progress, but just not quite back to 100% yet. Though, I have to say that today was a definite improvement from yesterday! Wanna know why?

Well…

First off, my morning started with a bowl of chocolate covered strawberries!

Kashi Go Lean, steebies, and dark chocolate crack almond butter

I’m sorry Nutella, but there’s a new kid in town!

Then, I got a surprise visit from a dear friend with a get well package just for moi!

Amy’s organic soups, bread mix, and animal crackers (she knows me too well)

Annnnnd a BEAUTIFUL bouquet of fresh flowers!

Just when I thought my day couldn’t get any better, the mailman brought this by:

TJ’s Peanut Flour sent straight from Heaven Amazon!!!

My Angel Christin, from Purple Bird Blog, heard my peanut flour woes and took it upon herself to ship these straight to my doorstep!

My love, my precccccccccccious! Muhahaha!

Annnnnnnnnnd then!! Ok, so actually this came in yesterday, but let’s pretend that it came in today for the excitement purposes of today’s post!

At the beginning of last month, I won a fantastic giveaway from the lovely Priyanka over at The Healthy Diary…a $35 gift certificate to CSN Stores. I, being the most indecisive person alive, took a whole month to figure out what to use it on. They were all sold out of my dream appliance, so I thought really hard and finally decided on this:

I’ve wanted one of these babies for a while! Even before Janetha & Marshall started cranking out drool-worthy bowls of stuff like this!

Of course, the only thing that could’ve made this day better would have been a miraculous recovery from this cold/sinus funk, but eh, you can’t have it all, right?

Well, I’m off to bed to dream of vanilla + peanut flour fro-yo topped with animal crackers and dark chocolate almond butter!
