Special Delivery!

Thanks so much for all the sweet comments about my bread baking adventure yesterday! Hopefully I will be able to make my next loaf this weekend. I know I’ll probably be out by then. Between my sister and I, we have already consumed half of it!

Breakfast this morning was muy delicioso…and of course, it included bread!

It was hard to get up and go back to work today (I need to do a little research on just how I can get paid to sit at home and bake all day). Of course the day drug along as slowly as possible and then, when it was quitting time, I got to drive home in this:

Annnnnnd, it only took my FOUR tries to get up my driveway!

Yeah, I was pretty much burning rubber just so I could get into the garage. What? You expect me to park in the driveway and get out in this blizzard?? I don’t think so!

After getting in, I noticed there was a package waiting for me on the doorstep! A couple of weeks ago Christin and I decided to do a little foodie swap. Trader Joe’s loot in exchange for some local Texas finds! I was so excited to open it…I mean seriously…it was like Christmas all over again!

Hello Barney Buttah! I’ve wanted to try you for so long!

Woo-hoo! Fruit leathers and Z bars!

Ahh, she knows me so well! See? Pumpkin spiced pecans!

I’ve decided before cracking into this bad boy, I must first purchase a cowboy hat and boots! 😉

And last, but surely not least:

And then, 2 minutes 30 seconds later:

Oh my gosh! Words can not even begin to describe these! I’ve only had kale chips once before and apparently I went about it all wrong because mine ended up tasting like grass clippings 🙁 Not these! They tasted like…well, they tasted like I need to go make some of my own…like a friggin truckload! Christin, you are amazing!

After oogling over all my new foodie prezzies, I did a little blog reading. Seems Katie thought today was a perfect day for a stir-fry. I thought so too!

Not quite recipe ready, but here’s what’s in the bowl:

  • Buckwheat soba noodles drizzled with toasted sesame oil
  • Sweet mini peppers
  • Sugar snap peas
  • Edamame
  • Scallions
  • Water chestnuts (thanks reminding me about these little gems, Katie!)

My sauce still needs a little work, but I combined fresh orange juice, orange zest, and grated ginger. Super tasty, just needs a little something.

Well, I’m off here folks. Gonna go round up supplies to make some of those snow shoes that look like tennis rackets…might be needing them to make it to work in the morning!

What is one of your favorite things that you would give as a foodie gift?
Mine would have to be TJ’s Valencia Crunchy PB with Flaxseeds…hope I didn’t ruin the surprise for ya Christin!

Meet My New Friend

Hello ladies and gents! Hope you have all had a healthy and happy hump day! Ahh, alliteration, I love you so!

So, I’d like to introduce you to my new friend! Everybody, meet Mr. Yeast! Mr. Yeast…everybody!

I cannot even begin to tell you how long I have been afraid of this mysterious little jar of bacteria. Just the word “yeast” would make me shudder. Whenever I saw a recipe that listed yeast as an ingredient, I would immediately turn the page, denying myself whatever foodie goodness lay within because I felt that baking with yeast was just not something a self-taught home cook like me could handle. There is much to be blamed for my ever-present perfectionism.

Then things started to change. Over the last couple of weeks, Allie, over at Live Laugh Eat, has been documenting a food journey of sorts as she learns all there is to know about baking bread. Some lessons she has learned through research…others merely through trial and error, but after a post the other day speaking about all things yeast, I realized that this tiny little jar was nothing to be afraid of! His secrets were revealed and I was on a mission…for homemade bread!

I wanted to start off as easy as possible. The least amount of steps with the least amount of ingredients. I figured it would give me a lesser chance of messing something up! 😉 How do you like my sense of optimism?

A quick Google search led my to the King Arthur Flour website where I found a classic (yet simple) recipe.

Classic 100% Whole Wheat Bread: (makes 1 loaf)
Taken from King Arthur Flour website

  • 1 to 1 1/4 cups lukewarm water*
  • 1/4 cup vegetable oil
  • 1/4 cup honey, molasses, or maple syrup
  • 3 1/2 cups King Arthur Premium 100% Whole Wheat Flour
  • 2 1/2 teaspoons instant yeast, or 1 packet active dry yeast dissolved in 2 tablespoons of the water in the recipe
  • 1/4 cup nonfat dried milk
  • 1 1/4 teaspoons salt

*Use the greater amount in winter or in a dry climate; the lesser amount in summer or a humid climate.

The steps were are pretty straight forward. My reactions are in red. Let it be known that I am NOT a patient person:

1. Combine all ingredients in a large bowl and stir until dough starts to pull away from the edges.
“Oh wow, this is easy peasy!”
2. Knead dough on greased surface with greased hands for 6-8 minutes.
“Ooookay, don’t think I’ve worked with greasy dough before. Usually the recipe says a floured surface”…Heather, stop! You are not making cookies!
3. Place in bowl covered with a towel and allow to rise 1-2 hours
“Okie dokie, I can do that!

…1 hour later, “Hmm, maybe I should give it a little longer, doesn’t look like it’s done much”…2 hours later, “Oh yay! That looks right!”

4. Remove from bowl, shape into 8 inch log, place in loaf pan covered lightly with greased plastic wrap and allow to rise a second time (1-2 hours)

“Man, this is a whole lot of waiting! I want some bread now!”…1 hour later, “Nope! STILL not ready”…2 hours later, “FINALLY!”

5. Bake at 350 degrees Fahrenheit for 35-40 minutes, tenting after 20 to prevent over browning of crust.

The last step is where my face was pretty much plastered to the oven window wiping the drool from my lips and twiddling my thumbs.

But then, 35 minutes later…it was finished!

It came out perfect! My little sister is staying over tonight and arrived just as I was slicing it up. As she took the first bite, I stood on my tip-toes in anticipation…

Her words, not mine: “Oh my gosh, this is like the BEST bread I’ve EVER tasted! It’s so sweet and…umph…mmm!…so good!”

*Insert happy dance!*

Dinner this evening HAD to be something great to compete with this fantastic loaf of wheaty goodness. I’ve been eyeing the bookmark for Erika’s White Chicken Chili for a week now. I knew tonight would be the perfect night to give it a whirl.

I halved her recipe since it was only for me and my sis and only added in one thing:

1/2 cup shredded zucchini to the onions while sauteing

I love sneaking in veggies whenever I can…you couldn’t even taste or see them!

Oh my goodness Erika! This soup was fantastic! I topped mine with lime, cilantro, and diced avocado. I loved the flavor of the cilantro mixed with the cumin…smoky with a hint of spice. The somewhat sweet-tasting bread was a perfect match to this flavorful soup. I did a good job of “mopping up” my bowl with it at the end of this meal!

Who You Callin’ Ugli, Beet?!

So, it’s a good thing that I had some fun in the kitch yesterday, because if I had to post about my day today…well, I got nuthin’! It was a nasty rainy day that did absolutely nothing for my motivation. I’m actually surprised that I got in a great workout earlier. If I didn’t have Team HEAB to hold me accountable, I can assure you that I would have turned to mush today!

Have any of you ever heard of or seen this little guy in your supermarket?

I’ve seen it in the store before but was so put off by the grotesque appearance that I never gave it a second thought…until the other day.

The ugli fruit or uglifruit is a Jamaican tangelo, a citrus fruit created by hybridizing a grapefruit, an orange and a tangerine [source].

Not exactly sure why or how this little fella got the short and of the stick (branch?) when it comes to attractiveness, but it what lacks on the outside, it definitely makes up for on the inside. The flesh is extremely juicy with a subtle tanginess that is similar to a grapefruit or pummelo and it’s incredibly easy to peel!

I guess I was just feeling extra inquisitive at the store the other day, because after adopting the fruit no one wanted putting the ugli fruit in my cart, I spied something else that piqued my interest.

Up until this point the only way I had ever eaten a beet was pickled from a jar. After seeing so many recipes lately including roasted beet salads, I decided to snatch them up and figure out what to do with them later.

After a quick Google search led me here, which is a (quick) step-by-step guide to roasting beets, I realized this was going to be a lot easier than I thought!

Step 1: Cut off the greens and wash beets

Step 2: Drizzle beets with olive oil

Step 3: Place in 375 F oven for 90 minutes

Step 4: Marvel at the beauty of your roasted beauties beets!

Step 5: Using gloves (juice stains), slide skin off of beets, slice and serve!

Did you know that you can also eat the green parts? I didn’t either until my dear friend Google told me so!

Step 1: Wash greens and cut into bite-sized pieces

Step 2: Take another picture at a different angle and admire their beauty

Step 3: Toss in a skillet with oil and minced garlic, cook on medium heat until wilted

Roasted Beets with Sautéed Beet Greens & Quinoa: (serves 1)

  • 1 bunch fresh beets with greens
  • Olive oil
  • 1 heaping teaspoon minced garlic (or one good size clove)
  • 1/2 cup cooked quinoa
  • 1/4 cup shredded carrots
  • 1/4 cup crumbled goat cheese

1. Trim greens from beets.
2. Wash beets and coat with olive oil. Wrap in aluminum foil packet and roast at 375 F for     90 minutes.
3. Wash beet greens and cut into bite-sized pieces
4. Combine greens with 1 teaspoon olive oil and 1 heaping teaspoon minced garlic and           saute over medium heat until greens are wilted.
5. Add shredded carrots in the last few minutes of cooking.
6. Spoon greens over a bed of quinoa and top with 1 sliced roasted beet and crumbled             goat cheese.

These were soft and warm with a little bit of a crunch to them and an overall sweetness that is just hard to describe. The heat from the greens caused the goat cheese to melt and coat each flavorful bite.

As you can guess from the picture above, this dish was not at all what I imagined. I picked and picked at it until I had no choice but to lick the plate clean couldn’t stand to eat anymore. If you do make this, just save yourself the heartache and send the beets over to me. I will be sure to “dispose” of them properly. Trust me on this one! 😉
