Hey hey! How is everybody doing? Me? Well, thanks for asking…I had a great day!
I had an older gentleman as a patient today (for newbies, I am a CAT scan technologist in a hospital) who was the most personable and pleasant patient I’ve had in a long while. It can be hard working in a hospital sometimes. Let’s face it, when you don’t feel well, you get cranky and sometimes that crankiness is projected at the wrong people. This gentleman was a stark contrast to the majority of my patients lately. He had a bright smile and a great sense of humor and was a joy to talk with. It feels good to be appreciated for what I do and the patients that acknowledge that always bring a big smile to my face!
I started out with something a little different for breakfast this morning. Honestly, I really couldn’t decide if I wanted oats or a yogurt parfait. I seriously stood in the kitchen for at least 5 minutes contemplating my breakfast! I know…I have no life!
1/4 cup oat bran + 1 tablespoon ground flax cooked in 1 cup of water
1/2 container of Strawberry Chobani
1 tablespoon TJ’s Valencia peanut butter
1/2 banana, sliced
And Black Coffee

This was good, but I was hungry again after two hours. I will definitely use 1/2 cup of oat bran next time.
Like you can see from my post yesterday for What I Ate Wednesday, typically I have one am snack and one pm snack along with my three main meals. Today I had FOUR snacks and three meals!
Snack #1 (8:00am): A new-to-me Z Bar flavor courtesy of my girl Christin. I am in love with these things!
Yeah, the package is empty! That’s how hungry I was by 8am!
Snack #2 (9:30am): About 3 cups of fresh popcorn from our popcorn machine in the breakroom!
Popped with butter-flavored oil, no salt
Snack #3 (4:00pm): Pumpkin Pie Parfait
1/4 cup pumpkin puree + 3-4 drops vanilla stevia +
a HEAVY sprinkle of pumpkin pie spice
I swear this tasted JUST like pumpkin pie! The only thing it needed was some graham cracker crumbs!
Snack #4 (right now!): Snickerdoodle Hummus & Animal Crackers
I saw that Katie made herself some dessert hummus today with inspiration from Evan. I was like, “What is dessert hummus?” So I took a look over at Evan’s blog wannabechef. You have GOT to try this! I seriously thought I was eating a snickerdoodle! I followed his recipe, but left out the brown sugar and I thought the sweetness was perfect!
Excuse me while I live vicariously through Teddy here for a moment and bathe in this cinnamon goodness!
I may or may not have just run out of animal crackers and used my finger to clean this little bowl! 😉

I just bought teddy grahams the other day because I was craving them pretty hard. And yes hummus is so delicious! My bf tried to make a falafel and it was total fail so we decided to eat the leftovers as “hummus” lol!
These are actually the animal crackers that they sell in the bulk bin section at Whole Foods, but the taste is really similar to the honey Teddy Grahams! I used to live off the cinnamon ones when I was little!
Haha! Way to use up that food! I hate throwing stuff out!

I love your snacks!! And seriously, Z-bars rule so hard. They even have a blueberry flavor that is so nice… and smores, and peanut butter… I sent you the only three flavors I have on hand a la a giant box of 24 of them from Costco, 8 of each of the brownie, chocolate chip, and honey graham. Amazeballs!
I made peanut butter hummus one time that was totally badass!
I seriously need to find that s’mores bar like yesterday! Mmmm!

oh ya, love that dessert hummus. I made an apple cinnamon nut hummus the other day and posted it. Gotta love using that peanut flour. I should have made the pumpkin pie parfait, DANG!

Oh my gosh you totally did! How in the heck did I forget about this?! Probably got lost in all my foodie bookmarks! I’m a total recipe hoarder…need to get better about actually trying them! I just bookmarked it AGAIN, in capital letters this time! 😉

Thank you! I love layering things in a parfait cup…makes it look so classy! I just recently began liking popcorn again. Only trouble is that I have to pay attention while I eat it or I will devour a whole bag in 5 minutes!

I was totally skeptical too! Just make sure you blend it REALLY well. I just whipped mine up in the Magic Bullet and found a couple of beans that were still whole! It’s like…yum, yum, yum…whoa, chickpea!
Oh goodness, I am going to get that snickerdoodle dessert hummus recipe now. Can’t wait to try it. A perfect snack for me!

Wow! Talk about buying in bulk! 6 or 12 containers? of dessert hummus? It would be gone in a week! I think I may be trying to recreate that pumpkin pie one in the NEAR future though!

At my Dad’s viewing and funeral, I couldn’t believe the number of doctors and office staff that came, they said even though he was in pain (from a previous accident, not the one that killed him) he was always joking and always so happy to see them, talking to them, etc. He had so many CAT scans in the last few years of his life, the two of you probably would have been best friends 😉
I am in love with the yogurt/oatmeal combo, must try now!!!! Well, I guess it could wait until tomorrow morning 😉
It really is amazing to think of the impact a person can have on another person’s life. We have a few regulars that come in for cancer follow-ups that we honestly look forward to seeing each couple of months! I think it is wonderful that so many of the staff came and showed their support! That had to warm you heart!

Don’t feel bad, I didn’t know what it was a month ago. It’s a Trader Joe’s PB that has dry roasted Valencia peanuts and roasted flaxseeds! My new favorite peanut butter! Check out the pic at the bottom of this post:
