What I Ate Wednesday: “Steak” & Eggs

Hey y’all! Yep, I said Y’ALL…because I’m from the south and I can! πŸ˜‰

Hope you all had a hump-idy good day!

I’m playing along with Jen’s link party again this week so for your viewing pleasure, I bring to you “What I Ate Wednesday” Part 2!

And remember, all my eats are still sugar-free!

Breakfast (8:00am)
Peachy Banana Smoothie In a Bowl
+
12oz mug (un-pictured) black coffee

  • 1/2 banana
  • 1/2 cup frozen peaches
  • 1/2 cup plain low-fat kefir
  • 1/2 cup puffed red wheat cereal
  • 1/4 cup rolled oats
  • 1 tablespoon sugar-free peach butter
  • 1 tablespoon raw, unsalted almond butter
  • a small handful of raw almonds

Lunch (12:15pm)
Leftover Smokey Chipotle Beans & Rice

Snack #1 (3:30pm)
Trader Joe’s Tomato & Basil Hummus & 1 whole wheat tortilla

Snack #2 (6:45pm)
1/4 cup 2% cottage cheese with fresh pineapple

16oz water x 1

 

 

 

 

16oz hot tea x 3
Hey, I was cold!

Dinner (8:30pm)
“Steak” & Eggs

For the “steak”, I just sautΓ©ed 1 large portobella mushroom with some onion (a few scallions might have also made an appearance) in about 1/4 cup of beef broth and then added spices to taste (cumin, garlic, black pepper, and a splash of liquid smoke).

Mmm! I love the “meaty” taste of portobellas!

Dessert (9:00pm)
1/2 a nanner with TJ’s crunchy Valencia PB & cinnamon

and…

All-Natural Grape Fruit Strip

Did you know that if you spread a spoonful of peanut butter on a grape fruit strip it tastes JUST like a PB&J sammie?? I die!

There you have it? I hope you were oh so entertained! πŸ˜‰

Off to bed to get some shut-eye! Tomorrow is my “Friday” at work!

    Actually scratch that, the cookies I just concocted today, that I posted about! πŸ™‚ They were pretty damn nut buttery and good. and could be made sugar free… πŸ˜‰

  5. Wow! All your eats look ridiculously good!
    I have to say the best thing today was a FAT bowl of volumized oats by Kristi at Sweet cheeks with almond butter and almond milk. and some plain greek yogurt with cheesecake pudding mixx! I showed it over at my blog today. Seriously. I swear it was cheesecake! So good! And I only used 2 tbsp! Next time Imma buy the SF kind !

  8. yum! i’m also on sugar free week – it’s weird, it’s making me crave it more than usual!
    Portobello mushies are the best. I like grilling them with balsamic and garlic. It’s only 2pm so the best thing today was still my chocolate PB oatmeal πŸ™‚

    The best thing I ate yesterday were my Pumkin Cranberry Nutty Cookies. Now they are all gone. πŸ™ But no worries, I’ll be making them again soon. πŸ™‚

    Ahh, I’ve heard that portabellos make a great burger sub! I have yet to try it, everything looks AMAZING! You always have the best eats, girl!

    I love breakfast for dinner. I have it a lot when my hubs is gone!

    Best thing I ate yesterday: It was actually my green monster. I’m under the weather, and it was the only thing that tasted good all day! I almost made another for dinner!
