The Day My Breakfast Smiled at Me

Hey hey hey! Sounds like you guys had some pretty tasty eats yesterday! But c’mon, when do we food lovers eat anything that’s not yummilicous?

So I’m sitting in my kitchen looking around and wondering how in the world one simple dinner made such a disaster out of this place? I swear I can’t toast bread without pulling out half of the utensils/plates/silverware I own!

But before we get to dinner, let me show you my “start the day out happy” breakfast!

Put a smile on your face and make the world a better place!

How can you look at this and NOT smile??

Eyeball #1: Cinn/raisin toast with cottage cheese, honey, and chias

Eyeball #2: Cinn/raisin toast with TJ’s Valencia peanut butter and chias

After work and after I went to the bank to grab one of my new credit cards for bad credit, I had an appointment with the mortgage lender to go over all the paperwork for my home loan, as I got it using a mortgage schedule online…aka, sign my name until I thought my arm would fall off!

When I got home, I did a 30 minute upper body workout that I made up with inspiration from my Team HEAB days and from good ol’ J Dub! I have to say it was pretty awesome! Even after a long day at work and driving home in dreary weather, I had so much energy both during and after the workout! I even busted out the white girl moves during my “cool down” in between sets! Haha!

I didn’t get around to making dinner until around 7pm, but luckily with the help of some leftovers, my meal came together fast!

Chipolt-nay Rice & Black Bean Burger: (serves 1)

  • 1/2 cup mixture of rice and beans from Chipolt-nay burrito bowl
  • 1 flax egg (1 tablespoon flax mixed with 2 tablespoons warm water)
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 cup whole wheat breadcrumbs

Combine all ingredients, form into a patty, and cook over medium heat for 3-5 minutes per side. I topped my burg with chipotle salsa and sliced avocado.

Cheezy Greens: (serves 1)

  • ~2 cups chopped collards (I used two large fistfuls)
  • 1/2 tablespoon olive oil
  • 1/2 tablespoon balsamic vinegar
  • 1-2 tablespoons nutritional yeast flakes
  • raw pepitas (pumpkin seeds)

Saute collards in olive oil until wilted and then stir in balsamic vinegar and nooch. Top with pepitas.

So…freaking…good!

I love morphing leftovers when I can to make an entirely different meal! I first learned about it years ago from a show on Food Network called Quick Fix Meals with Robin Miller. She’s a nutritionist that focusses on quick and healthy dinners using bulk cooking methods and a variety of spices. Unfortunately, you can only catch reruns these days since they have a new (and personality devoid) nutritionist on the block. Ellie Krieger has some really good recipes, but can anybody actually watch her show without falling asleep?

Well, I’m off to go find my kitchen sink…it’s under there SOMEWHERE!

What’s your favorite Food Network show?
I really like to catch episodes of Diners, Drive-ins, and Dives. I actually went to one of the diners that was featured from Georgia this past summer and it was ahhhhhhmazing!

    I’m pretty much messy in every aspect of my life so you can imagine what the kitchen looks like after I cook.

    I live about 40 minutes from Marietta, but never have been to that diner.

  7. I prefer the cooking channel and anything that Jamie Oliver does is high on my list! I love him. I grew up in Marrietta and have never been there. We have the Sugar Hill Diner here and I think it’s owned by the same people! I will check it out.

    I love making different meals out of left overs! Yours looks delicious!

    Dinner looks awesome as well. If the flax egg what holds the patty together? I’ve been experimenting with making my own veggie burgers. I recently tried putting brown rice is the food processor until it got gluey and using that, but they still didn’t hold as well as I thought they would.

    I am definitely a messy cook. I made dinner the other night and almost had a full dishwasher of things I’d used to make it! Crazy!

It’s hard to say what my favorite Food Network show is…I do get a huge kick out of Paula Deen and her sticks of butter. πŸ™‚ And this is not Food Network, but I AM obsessed with Anthony Bordain. Which is weird because I’m newly vegan and he’s, like, the opposite ha.

    • I feel the same way! I haven’t had a cable subscription in over a year and any time I see Food Network on, I’m immediately sucked in! Sometimes when I transport a patient to/from their room and it’s on, I just wanna plop down on their bed and start the commentary! Lol

    I love Diners, Drive-ins, and Dives! Guy Fieri is so awesome, he mentioned a little diner in Miami Beach that I pass by occasionally but I’ve never been. Love your smiley face breakfast! πŸ™‚ Dinner looks amazing btw!

    so i know this contradicts with my bad unpacking habit, but i clean as i go and i usually dont eat the meal ive just made until everything is all cleaned up. im a bonafide OCD freak.

    lately, im recently really into chopped. the all star one has awesome chefs from all the food network shows.

    • I actually do that sometimes when I’ve made an exceptionally large mess. As bad as the house can get to looking during the week while I’m working, I’m pretty OCD myself when it comes to cleanliness and organization…although you couldn’t tell it right now with half empty boxes scattered throughout the place!

    I just made this veggie burger, wow ahhhMAZING!! i felt guilty because it was so good. I didn’t have rice so or ground flax, but i used flax seed, and i used a tsp of oat bran for it to stick together too! and for the breadcrumbs i used 1/8 cup of bran flakes, it made the burger taste like it had those burnt crispy charcoal edges. I missed that! It was soo very good Thanks for the recipe!

      Oh Hannah! You just made my night! I LOVE hearing about people trying my recipes…and even more when you make substitutions/adjustments (more ideas for me! ;)). I’m so glad you enjoyed them and I’ll definitely be adding bran flakes to my next batch! Nothing like the good ol’ taste of the burnt and crispies from a grill! Yum!
