WIAW: Mexican Socca Pizza

Hey guys! Am I the only one that can’t believe it’s already Wednesday? Seems like just yesterday I was getting lost in the woods! Ugh! I really want to try the trails again…maybe I’ll take a bag of breadcrumbs with me this time? ๐Ÿ˜‰

Well, if it’s really Wednesday, then it’s really time for another edition of What I Ate Wednesday!

Alrighty, here goes!

Breakfast (7:45am)
Whole wheat bagel thin topped with Trader Joe’s PB cream cheese,
2 microwaved egg whites + a splash of almond milk,
1/2 a nanner and cinnamon
(un-pictured 1/2 caf black coffee)

I seriously debated getting this the other day…hesitantly, I put back the basil white bean hummus as I thought to myself, “This better be good!”…best.decision.ever!

All wrapped up and ready for the drive to work since I can’t seem to be on time this week!

Don’t forget the vita gummies!

Oh yeah, and I don’t think they allow monkey slippers at the hospital…unless your a patient! ๐Ÿ˜‰

2 cups a the day…the only way to survive the subarctic temps in a hospital!

Lunch (12:00)
Salad of mixed baby greens, zucchini strips, carrots, celery, and some hidden tomatoes topped with a crumbled Edamame Millet Burger (all gone…so sad!)

Organic gala apple & a dark chocolate Adora disk

Pre-workout Snack (4:30)
More blueberry action with 1/2 a Blueberry Muffin Larabar

Christin and I tried these “together” via Twitter yesterday…both of us expected a bit more of a blueberry PUNCH but regardless, we decided it was still tasty and definitely worth buying again!

And lots of this! I found my old 32oz Camelbak bottle when I was unpacking. Since I’ve been using it, my water consumption has gone waaaaay up! Yay!

And now, for dinner!

Dinner (7:30pm)
Personal-size Mexican Socca Pizza

Mexican Socca Pizza: (makes 1 single serving pizza)

  • 1/4 cup chickpea flour
  • 1/2 cup water
  • 1/2 tablespoon coconut oil
  • 1/2 teaspoon Ms. Dash crack Southwestern Chipotle Seasoning blend
  • pepper, to taste

1. Whisk together all ingredients in a small bowl and break up any lumps.
2. Pour batter into a greased 8 inch oven-proof skillet (10 if you want a SUPER thin ย  ย  ย  ย  ย  ย  ย  crust) and cook for 12-15 minutes.
3. Top with 2 tablespoons of your favorite salsa. I’m pretty loyal to this brand (I love the ย  ย  ย  ย low sodium…not many salsas out there with stats like that!)
4. Add your pizza toppings.
5. Place skillet in oven under low-medium broil until warmed through.

I topped my pie with sliced zucchini, Soyrizo, sweet mini peppers, onions, diced heirloom tomato, and Daiya cheddar, garnished with fresh cilantro.

I’ve been wanting to try Soyrizo for a while now. I found this brand at Wal-Mart and I LOVE it! The flavors are spot on and you can’t even tell it’s not real meat!

Sliced and served alongside some cheezy kale chips!

Super simple and oh so tasty!

Spray washed/dried kale leaves with cooking spray, sprinkle with nutritional yeast and pop in a 350ยฐ oven for about 6-8 minutes or until crispy.

Have you tried kale chips before?
I’ll admit that the first time I tried them, I wasn’t a fan, but only because I didn’t realize that I cooked mine for too long…FYI, burnt kale leaves taste like freshly mown grass! ๐Ÿ˜•

Best thing you ate today?
I thought breakfast was fabulous, but dinner reigns supreme this time!

    • Oh Jess, I think I love you too! You seriously just made me laugh out loud! So the allure of my bagelwich drew you in, huh? I thought people would think I was a little crazy for pairing eggs with something so sweet, but then I thought…eh, it’s like a deconstructed French toast!

      I so thought of you when I spotted this tea at the store the other day! Until then, I’d only been able to find it in the sampler box. It is SOOO good…I swear it tastes like blue Pez!

      Try this socca…I’ve had many a fail, but I promise this is super easy! Just pour it in the pan and walk away!

  8. I bet that cream cheese is heavenly! I wish I could have it. The pizza looks perfect! I made a veggie shepherd’s pie tonight and it was so good! I love my veggies.

    • You are COMPLETELY normal! The abnormal ones are the people who dread choking down their “horse pills” each morning, but do it anyway because it’s good for them! At least we look forward to taking our vits!

      And I’m officially addicted to kale chips. And out of kale. Grrr!

    question, do you put your garbanzo bean flour in the fridge? i read on my bag (bob’s red mill) that it keeps best if you do. just wondering if it’s necessary!

    • Actually, I just keep mine in the pantry, but I do keep larger quantities of flour in the fridge like my whole wheat flour and my bread flour since I figure they will be around longer. I’ve had this bag of chickpea flour for a few months now and it still tastes the same to me!

  13. I thought of you today as my car was being towed away from the scene of an accident. I can not remember why you don’t have your car right now. Was it an accident? I just felt so sad watching it ride away on the back of that tow truck. I’ll be in a rental for a while… who knows how long. It’s funny how we, as people, feel about our cars.

    • Awww, I feel your pain! Are you ok? Yes, I was in an accident the day I closed on my new house on the 31st. At the rate the mechanic is working at, I should see my car again…oh, by about the 31st of NEXT month! It is funny how you grow kind of an attachment to a vehicle…almost like its a pet! I actually used to gripe and complain about what my car didn’t have (power window and door locks, cruise control, etc) but now that I’ve seen a future without her, I know what I had was a good car! Hope you are able to get yours fixed and be reunited soon!

    • Well, first off…this was take two! I had the same thing for dinner two night’s in a row (not that I minded in the least) just so I could try again with the photos! Haha!

      Nope, just experimenting! I’m still an everythingatarian! ๐Ÿ˜‰

    My goodness.. that pizza looks amazing!

    I’ve always disliked kale chips and I think I may be baking mine too long! They always taste grassy to me, so now I know and will reduce the baking time.

    Have you tried Daiya vegan cheese? It’s so SO good and doesn’t have any harmful milk proteins in it for those of us that are more than just lac-tarded. Plus, it comes shredded so it saves me some serious grater wrist ๐Ÿ˜‰

    How many meals do you usually eat a day? Four?

    • Yes ma’am, I used to eat 5 meals (am and pm snack) but lately, I haven’t been hungry for breakfast until around 8 so I get started later in the day. Kinda makes it a pain though when I’m trying to head out the door by 7:45 to make it to work on time! I almost forgot to make something the other day…luckily that breakfast sammie came together in a flash!
