What Goes Up, Must Come Down

Helllllllllllloooooooo my peoples! Happy day that comes after Wednesday that nobody likes because it is still not Friday! 😉

So glad to see so many fans of socca after yesterday’s post! I’m craving another Mexican Socca Pizza now, just thinking about it!

I have been THIS excited since before work this morning to share my breakfast with you! While catching up on Ashley’s posts, I discovered something genius…cornbread for breakfast! Am I surprised by the source of such genius-ness? Not in the slightest!

Is it just me, or do you wanna lick the screen?

I followed Ashley’s Banana Cornbread Bake recipe to a tee and then topped it with 1/2 cup of Trader Joe’s plain low-fat Greek yogurt, and a drizzle of almond butter and honey.

I have always been a fan of cornbread (I was born in the South…it kind of comes with the territory) and I like it with a touch of sweetness. This bake was absolutely perfect, like the love-child of healthy banana bread and cornbread! I know some of you are probably skeptical about eating cornbread for breakfast, but believe me, this is something you want to try!

And I can’t even begin to tell you how well it went with the Greek yogurt, almond butter, and honey! Ohhh, I die! I rarely repeat breakfasts, but I cannot wait to have this again tomorrow!

You know what also goes well with almond butter? My appetizer for tonight’s dinner:

As we all know, balance in life is inevitable. What goes up, must also come down. Which brings me to dinner…

Pretty, no?

Deceivingly underwhelming? Yes.

Ok, so it all started with the calavacita squash that I purchased this weekend. I spied it in the back of the fridge and thought it was time to finally bust it out. Buuuuut, I couldn’t decide what I wanted to do with it…and it was 6:30…and my stomach was growling (hence the need for an “appetizer”).

I chopped it up, sprayed it with some cooking spray, sprinkled it with S&P, and threw it in the oven to roast as I contemplated the future tried to form a plan for dinner.

Main dish, main dish, main dish? Ohhhh, howabout tempeh? Mmm, yeah! Ok, now what?

Enter the new BBQ sauce I found at Tuesday Morning (similar to TJ Maxx)

Most of the time, my last-minute plans and “aha!” type ideas form a pretty good tasting meal. This time…not saa much! Ok, so the squash needs a little something more than S&P (smoked paprika perhaps), I should have marinated the tempeh, and this was the

HOTTEST FREAKING BBQ SAUCE EVER!

Eh, well, at least it looked pretty!

I blame this on writer’s chef’s cramp. And too much stress. And not enough sleep. And oh, the fact that it’s the day after Wednesday that nobody likes because it’s still.not.Friday!

  1. I’m dying to try that cornbread bake! I’ve got my eyes on it! and I’m makin a move soon! As in Saturday after I buy some buckwheat!

    Peanut butter and cheese is the furthest I’ve gone! and it was actually good! But it was the smallest bite ever next time I’ll go in full force! Peanut butter and cheese panini anyone? 😉

    oh ya, would have loved that sauce. SPICY! So i have to admit, I have dipped roasted chicken in almond butter and balsamic vinegar. Trust me, its good!

  7. Oh yikes! I love hot sauce, but that may be a bit much. I poured what I thought was salsa on my eggs the other day and I still don’t know if I liked it. It was more like enchilada sauce, but it had a weird pepper thing going on. The cornbread bake looks yummy!

    I made her buckwheat bake this morning, but a strawberry- coconut version of it. Ohmygosh- bigosh, it was SOOOOO good. That girl seriously knows her stuff when it comes to food. If she owned a restaurant, man- oh- man, I’d hop to it the second I could! 🙂 I tried a savory version of her cornbread bake with smoked paprika, nooch and chili powder topped with baked bbq beans and avocado, but I want to try the sweet. Breakfast tomorrow, perhaps? Me think so.
    Glad I’m not the only person to dip corn chips in almond butter, hehe.

      Oh wow! That savory cornbread sounds insane! I’m down to about 1 tablespoon of nooch and I’m trying to savor it until my local health food store gets my order in!

    I love cornbread. I made some with blueberries in it a few weeks ago and it turned out really yummy.
    Favorite thing with nut butter = apples and sweet potatoes
    strangest thing with nut butter = drizzled over veggie chili. ha! I know it sounds insane but I’ve done it. And it wasn’t too shabby either 😉

    • I really want to try the blueberry cornbread thing! I’ve been craving blobs like crazy lately!

      Nut butter on chili sounds awesome! I’ve added almond butter to sloppy joes per one of HEAB’s recipes and I could get enough! It definitely boosts the creaminess factor!

  13. Hm, I’m pretty sure I’ve put nut butter on every single thing I’ve ever eaten… but the weirdest is probably dipping a tortilla in a peanut butter jar after a night of drinking. The worst is that it was my cousin’s and I was double dipping, haha! I have no memory of this…

  14. I’ve got a maaaajor form of chef’s cramp at the moment, too. I blame it on the fact that I’ve needed to go grocery shopping for the past two weeks but haven’t had the time! I really want some fresh veggies…
    Bummer about the BBQ sauce, though! I’m very picky about my BBQ. I like it on the sweet side v. spicy. But yes, the cornbread for breakfast definitely looks like it made up for it 😉 LOVE cornbread!
    Oddest thing I’ve paired nut butter with? A lot of people get weirded out by my PB & J with BBQ tofu sandwiches…haha. Can’t say I blame them since I gross myself out while making it…but it really does taste good if you use BBQ seasoning vs. real BBQ sauce on the tofu!

    I wish i liked corn bread because everyones versions of that breakfast look SO good!

  18. That cornbread bake looks so good! I can’t say that I’ve eaten peanut butter with something odd but I’d go for anything that included peanut butter! How could you not?!

    The strangest thing I’ve paired pb with would prob be pickles. And I’d totally go for savory crackers and pb! Nut butter can only mean good things 🙂

  21. I’m not one to pair nut butter with salty foods…it’s just not how I roll…but more power to you if you like that combo! I was born in the south, too and cornbread for breakfast sounds AMAZING in my eyes 🙂

  22. That cornbread bake drizzled with almond butter is calling my name! It looks fabulous!
    The oddest thing I paired almond butter with would probably be on a sandwich with bacon and apples. Not your average sandwich, but it was delicious! 😀

  26. Okay seriously… that cornbread bake NEEDS to happen over here! And now looking at it again, I’m pretty sure calabacita and calavacita are indeed not the same thing. Calabacita that I had at Whole Foods looked more like zucchini!

    • Hmm, good to know! Yeah, this looked more like a buttercup/kabocha squash, but definitely not sweet! I’ve been thinking of making another cornbread bake inspired my your blueberry cornbread…yum!

    OK, you crammed way too much good stuff into just one blog! For starters, we’re always looking for an excuse to add cornbread to another meal in the day. Now it looks like we’ve got lunch, dinner, AND breakfast covered – nice! (Yes, btw, we DID lick the screen.) But then you went and suggested an addition to our ever-growing condiment pantry. Chips dipped in almond butter? Well… alllllright. If we must.
    Hey, raise yer hand if you ever pour the crumbs at the bottom of a bag o’ chips into the dip of yer choice and go to town on that bad boy with a spoon! Oh, just us? Oh well.
