Today, I went to meet HEAB at the farmer’s market in Nashville. Before I left, I needed to fix something for lunch and could NOT seem to get yesterday’s PB and carob comboΒ (seems I’m not the only one who’s a fan of the c-pod!) out of my head! Sooooo, I whipped up a little sumthin, sumthin…
That would be Heaven…on a plate!

That my friends would be a big daddy sweet potato over”flowing” with Greek yogurt, crunchy peanut butter, and carob chips all sprinkled with a little cinnamon.
Did you know that when an angel flaps her wings, cinnamon dust stirs up?
Just saying!
Anyway, where was I? Oh yeah…Farmer’s Market…HEAB…yes, yes, yes that’s where I was going!
Is it just me or are the asparagus stalks marching around the tomatoes?

We had such a great time perusing all the stands, catching up, and talking photography. That’s right, Heather just got her first DSLR from Santa…yeah, he was a bit late!

Mmm! Yesterday you indpired me to put carob powder in ice cream and…IT WAS THE BEST DECISION EVER! I can’t have carob chips due to the barley aka gluten but the powder in ice cream tasted SO good! It was not bitter but tasted like frozen chocolate and something else really good i can’t place my finger on!! TRY IT!

Had such a good time just hanging out, and I really should go to the Farmer’s Mkt. more often. I’m about to email you my photo of us together from my camera. CRACKING me up. Every time I look at it, I hear the phrase, “she only has eyes for you”. Haha – Summer was mesmerized by you. Too funny.

Sister, it’s totally crazy how you create just what I would’ve. I, too, recently had a tater just like that– foodgasmic much, huh? π You should definitely try sweet taters and avocado…. SO darn good! π

this might be an incredibly stupid question, but how do you make that amazing looking baked potato concoction? i’ve never experimented with sweet potatoes before but i so want to try now! do you bake it in the oven? or the microwave?
That’s not a stupid question at all Sheila! Usually, I bake my sweet potatoes at 425 (just pop em in the oven on a baking sheet) for about 30-45 minutes (depends on the size). You know it’s done when you can press on it and it gives a little or when you can easily pierce it with a fork.
This time, I was in a bit of a hurry so I went with my go-to quick microwave method: Wrap your tater in plastic wrap and throw it in the oven for 5-7 minutes (again depending on the size). Now this way of cooking is great in a pinch, but the skin doesn’t get crisp like it does when it’s baked. If that’s no big deal for you…then feast away, but I think the crispness is one of my favorite parts so I just took it out of the microwave, unwrapped it, and put it under low broil for about 10 minutes…voila! Crispy sweet potato goodness!

Sweet potatoes: I love just baking them in wedges and dipping them in BBQ sauce! Or tossing them with honey and olive oil and eating them plain.

The other day I had the “put peanut butter on your sweet potato” epiphany. I am pretty sure it is a turning point in life. I paired my pb and sp with some usc (unsweetened shredded coconut). Had I some coconut butter, I probably would have put a tad of that in there for more coconut taste. AND, I think I’ll put some chopped nuts (walnuts or pecans) for crunch, or maybe toasted buckwheat groats. And, I thought about putting some sliced banana in there too…. now I have just gotten carried away with myself, but that would be a pretty dang good meal.
PS. I agree, those asparagus do look like they are on a mission to protect and defend the tomatoes from people who squeeze too hard.
