Pancakes Fit For a King

Good evening loves! I hope you are all enjoying a nice relaxing Sunday!

I finished watching The King’s Speech last night and for those of you who haven’t seen it…you HAVE to get it! It has been a while since I’ve seen a good movie, but this one did not disappoint! Incredible acting, great story line, and the perfect amount of suspense to keep you glued to the screen!

It was a bit late when I headed to bed last night (is it bad that I consider 11:30 like SUPER late?) but I had no problem getting out of bed this morning! I couldn’t wait for breakfast! Not only was I excited for Pancake Sunday, but after my PB&J fiasco the other day, Jenny mentioned something that immediately made me swoon:

Peanut Butter, Banana, & Bacon Pancakes

Eeek!

Knowing this came from a highly credible source…I mean c’mon, the name of her blog is Peanut Butter & Jenny (which I absolutely adore)…I KNEW this was going to be good!

Elvis Pancakes: (serves 1)
Adapted from Peanut Butter & Jenny’s Bacon Pancakes 

  • 1/4 cup whole wheat pastry flour
  • 1/4 cup rolled oats
  • 2 tablespoons wheat germ
  • 1/4 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 flax egg (1 tablespoon flax + 3 tablespoons warm water)
  • 1 medium banana, 1/2 mashed banana, 1/2 sliced
  • 1/2 tablespoon coconut oil
  • 1/2 cup almond milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon maple flavoring*
  • 4 slices of bacon, cooked and crumbled
1. Heat a non-stick skillet over medium heat.
2. Combine water and flax and allow to set 3-5 minutes.
3. Stir together all dry ingredients to break up any clumps.
4. Combine wet ingredients in a separate bowl, add flax and mix well.
5. Add wet ingredients to dry ingredients.
6. Add 1/2 of the cooked and crumbled bacon to the batter, stir to combine.
7. Spoon batter into greased skillet and allow to cook for 6-7 minutes before flipping.
8. Continue cooking for 6-7 minutes on the other side before plating.
9. Top with other half of banana and crumbled bacon, drizzle with pure maple syrup.
10. Enjoy while humming “You Ain’t Nothing but a Hound Dog”

A little splash of maple flavoring took these babies to a whole new level of amazingness!

Soft and smooth on the inside

Crispy on the outside

Rittled with bits of bacon

And permeated with the classic taste of maple!

Jenny, my dear, you are a genius! And I can now die happy!

Other than dying and going to Heaven enjoying this plate of awesomeness, I met my sis for a lunch date at my favorite sushi place and then came home to watch the third Narnia movie, which I loved! Makes me want to go back and watch the other two again! I am a total sucker for all the digital animation and special effects!

Welp, now that I’ve spent almost the entire day being lazy, I guess I should get up and do some laundry. Not sure they’d be too happy if I showed up tomorrow in my pj’s! Anyone volunteer to fold it and put it away for me? I’ll make pancakes! 😉

    Yum yum yummy! Those do look divine. I agree, the maple flavoring is key. I love to use it in my banana and peanut butter smoothies. I guess because it tastes like my beloved peanut butter and maple syrup sandwiches!!
    My Sunday flew by – went to church, came home and cooked lunch, ironed scrubs for the week, de-cluttered part of my closet, and spent rest of day reading Twitter and blogs! Total bum day for me. But I needed a do nothing day 🙂

    • I totally feel ya…it’s good to get a good guilt-free lazy day in every once in a while! Mmm, a peanut butter and maple sandwich sounds delicious! Reminds me of the cinnamon maple peanut butter I made a few months ago…deeeelicious!

    • Actually until making these, I had only ever done the peanut butter and banana combo…I was always hesitant to throw in the bacon! Now I know what I’ve been missing all this time!

  12. Folding and putting laundry away is the worst! That’s the reason I hate doing laundry. I actually like the washing part- there’s something so satisfying about putting really sweaty workout clothes in the washing machine! Putting them away, though… ugh. It doesn’t help that I don’t have a dresser or a closet!

  16. I might have to withdraw from reading your blog because you always make me want bacon. I don’t even think I’m one of “those people” that ever craved/lived for bacon….but damn, girl! haha. (just kidding about withdrawing from your blog. you’d have to duct tape my hands and feet for that. not sure what my feet have to do with being able to read … but I digress.)
    I haven’t heard of or seen the King’s Speech. It’s going to be a crappy week, though; maybe a movie night (er…day….) would do me some good!

    I love maple extract!! I make chocolate protein smoothies with maple extract and it tastes like butterscotch!
