Pancakes!

So I’m sure you guys have figured out by now that I’ve developed quite the infatuation with French toast lately. I’ll admit it, I woke up this morning, on Pancake Sunday of all days, thinking about sinking my teeth into some soft and sweet, doughy French toast!

WHAT?!?!

Has this pancake loving gal changed her ways?

Then, in the wake of the rapture, I felt the power of the pancake gods…French toast pancakes?! Nahhh, that wouldn’t work…

or would it?

You know what you find if you Google “French toast pancakes”? You get a handful of “recipes” that instruct you to take ready-made pancakes and dip them into an egg and milk mixture. Well, that’s just not how we do things around here, now is it?

Forget all about those mystery pancakes full of sodium phosfiddlefaddle and pyramids of monochemistrybooks…this recipe was screaming to be made from scratch!

French Toast Pancakes: (serves 1)

  • 1/4 cup whole wheat pastry flour
  • 2 tablespoons wheat germ
  • 1/4 teaspoon baking powder
  • 1/16 teaspoon salt (just a smidge)
  • 1 teaspoon cinnamon
  • 2 whole eggs
  • 1/4 cup unsweetened almond milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon maple flavoring (optional, if omitting, use 1 teaspoon of vanilla)
1. Preheat a non-stick skillet to medium heat.
2. Stir together dry ingredients in a small bowl.
3. In a separate bowl, whisk eggs, milk, and extracts.
4. Add wet ingredients to dry ingredients and stir just until combined (careful not to             over-mix your batter. A few lumps are normal)
5. Pour batter into greased skillet (I made 3 small-medium pancakes) and cook for about     5-6 minutes or until batter starts to bubble.
6. Flip pancakes and continue cooking for 4-5 minutes until browned.

I topped my cakes with raw honey butter and pure maple heaven syrup

Creamy whipped buttery goodness!

Close your eyes and take a bite…

You’d swear you’re eating French toast!

    waffles or french toast would never be turned down, though! i don’t think i could possibly choose a favorite. i go through obsessions with both! (but waffles do catch all the good stuff like honey butter and maple syrup better…)

  13. Mmmm YUM! I just had pancakes today for the first time in two weeks! I was doing a little cleanse and as soon as I finished, I made pancakes. They were so amazing and delicious, I was practically in tears! If I had to choose between pancakes, waffles or french toast I would definitely choose pancakes!

  18. I had the same pancakes or French toast dilemma yesterday – if only I’d seen this earlier!
    Mind you, I’m off work this week so every day’s Sunday – so I’m sure I’ll make them at some point 🙂

    I only like waffles if I take two and make ’em into a sandwich with pb in the middle! Mmm!

    is there a difference between regular wheat flour and pastry wheat flour?

    • Yes there is a difference. Whole wheat PASTRY flour is finer and contains less gluten than regular whole wheat flour. When used in baking or pancake making, it yields a lighter, less chewy result. I get my ww pastry flour at Whole Foods in the bulk bin section, but if you have a hard time finding it, you can substitute regular whole wheat but run it through a blender or food processor for a minute or so to make the consistency less coarse. Or you could do 1/2 all purpose flour and 1/2 whole wheat flour (I used to do that before I started getting the pastry flour and the results are VERY similar)!

  21. I LOVE French Toasting my pancakes! Holy crap, I totally forgot about this until now! I haven’t done it in ages.. but I did it through BFL with protein pancakes to up the protein in my meals and still get the french toasted fix. Thanks for the reminder!

    I dont eat pancakes too often, but it is definently my favorit! I need to get pancakes back into my life!
