My First Ever Pancake Fail

Thank you guys so much for the congratulations yesterday! I seriously couldn’t wait to share the news with you guys and I’m so excited to be in my new blog home!

So as you know, today is Pancake Sunday, but if you can believe it, I woke up thinking I might have something other than pancakes this morning…I know, crazy right?

I thought about it…

I made coffee…

I thought about it some more…

I finished my coffee…

But in the end, I just couldn’t think of anything I really wanted. So I decided to make them anyway.

I opened the fridge to gather a few ingredients, spotted the last apple, and got an idea!

Hmm…

How about the flavor of apple & cinnamon instant oatmeal in a pancake!

…or just apple cinnamon oatmeal that LOOKS like a pancake!

Huh?

Yep! Perfectly browned and crisp on the outside and warm and mushy (like oatmeal) on the inside. It’s kind of like how I would imagine a breakfast cookie tasting if you were to slap it in a skillet for a few minutes.

I haven’t really decided it these were a complete bust or not. They were still tasty, but just not what I was expecting. You know how it is when you have it set in your mind how something should taste and then it comes out not quite matching up? Totally what happened! I think next time, I may try using dried apple slices for a more intense apple flavor and perhaps less oats and more flour.

So until I have a chance to perfect these (and you bet your spatula I will), I thought I’d share my little oatmeal pancake recipe with you guys.

Apple Cinnamon OATMEAL Pancakes: (serves 1)

  • Modified flax egg (1/2 tablespoon flax + 1 1/2 tablespoons water)
  • 1/3 cup rolled oats
  • 1/8 cup whole wheat pastry flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/3 cup milk (I used flax milk)
  • 1 teaspoon vanilla extract
  • 1 small apple, peeled and grated

1. Heat a non-stick skillet over medium heat and coat with cooking spray.
2. Combine ground flax and water to make flax egg and allow to set.
3. Combine together dry ingredients in a medium-sized bowl.
4. Add milk, extract, grated apple, and flax egg to the dry ingredients and stir just until         incorporated.
5. Spoon batter into skillet making 3 medium-sized pancakes. Flip once the edges begin         to set (batter will not bubble).
6. Continue cooking until browned and crisp.
7. Top with butter and maple syrup.

Uh…

I wonder if this means I was supposed to have oatmeal?

  2. Crispy on the outside and mushy on the inside? Oh I’d be all over these. But I know what you mean when something comes out not tasting quite like you expected it to… or not having the texture you wanted. I’m big on texture and sometimes I think that satisfies me more than anything else… If I want crunchy, I need crunchy. If I want doughy, I need doughy. It’s a hard life 😉

    My last kitchen blunder was probablyyyy… hmm. I don’t want to sound all cocky, but it’s been a while. And not because I’m a pro in the kitchen, but because I’ve been playing it safe and sticking to things that I know will work lol. But the last thing I remember is trying to make these black bean burgers. Yeah… I don’t think I added enough herbs and spices because they came out completely flavorless. It was like eating… flour patties 😯

      Ewwww! My very first black bean burger turned into a black bean scramble…not enough binding ingredients! Oops!

      I totally get you on the textures thing! I get these super intense cravings sometimes for food based solely on the texture!

    i mean, i’m from vermont…so that makes it at least a little bit of a normal thing to say, you know.

    last kitchen blunder…i made some cookies from a recipe i saw on a blog…and didn’t care for them one bit. going into it i was suspicious of the recipe, but at the same time curious. i guess it was a good reminder that it’s okay that i rarely follow recipes, unless it’s a cookie recipe from a BOOK! haha.

      Nope, not weird at all! I’d like to bathe in the stuff myself! Sooooo good!

      Oh, I had the same thing happen to me a couple of weeks ago. I even gave them another shot and tried them again barely tweaking the ingredients (convinced it was ME that did something wrong)…nope…still nasty! Blech!

    Looks kinda like Ashley’s (The Edible Perspective) banana scrambles! She also makes them with applesauce or pumpkin. They do look yummy though!

      Yeah, I thought so too! I actually went and checked her recipe to make sure I wasn’t accidentally copying her! Haha!

    ^^ um, can we just talk about the time I grabbed a water bottle out of my sisters car, took a sip, and found out it was straight vodka. Did I mention I was 10 years old? I’ll never forget it.

    Those look so good! I would rather have mushy pancakes than cakey ones anyday.
    My last kitchen fail was last night when I tried to make sweet quinoa for breakfast. I guess you’re supposed to rinse quinoa to get rid of the butter flavor? Well I didn’t. And I didn’t cook it for very long and it tasted like wood.

  8. Taste- shmaste. They look AMAZING, nonetheless. For that, my friend, you get instant credit 🙂 I’m an inpatient foodie in the morning, so grating and peeling is off the agenda. That is, unless I do it the night before! I love making apple- cinnamon oatmeal by just boiling chopped apples with oatmeal, milk, cinnamon and spices 🙂

    Girl, you don’t fail at anything in the kitchen 😉
    They look really good; when I make Deb’s protein muffin, I like to use those baby food freeze dried apples (actually Dole makes them not sold in baby food area and there are the Brothers Apple Crisps – I get the cinnamon flavored ones, they are by the raisins) – anyhow, they are tiny and work well in those muffins, so I am sure they would in pancakes, etc. You probably already have bought them, but just wanted to let you know in case you hadn’t!
    I cant think of any recent disasters in kitchen, but I know I have had them before. It always irritates me if I have wasted ingredients!

      Aww, thank you Missy! You are too sweet! Oh yes, HATE wasting ingredients…that’s why I usually end up eating it anyway! I HAVE had those apples before…I wasn’t a big fan of them by themselves, but that’s a great idea for the pancakes! I’ll have to try that!

  10. I have been feeling so uninspired during breakfast lately! For some reason I just never feel like I’m realllyyyy craving anything. So, I usually just stick with peanut butter. I actually almost made some oatmeal cottage cheese pancakes this morning. I also contemplated a breakfast cookie. You kind of did both!

  15. Congrats on the blog name! That is awesome! The pancakes look good. Seriously, I make so many blunders in the kitchen…I can’t even begin to name them. As long as it tastes good, it’s a win for me!

  16. I’ll admit it friend, I couldn’t find a single thing that was a fail about those oatcakes. They look pretty darn good to me, especially with that perfect pat of butter on top. Seriously you need a cookbook!

  17. Congrats on being self-hosted! 🙂 Last kitchen blunder = my pancakes this morning. Let’s just say a very hot frying pan + pancake batter = burnt pancakes (though still edible-ish). Your pancakes sound nice though! 🙂

      Thank you LB! Sorry to hear about your pancakes…I hope you slathered them in some nut butter…I don’t think there’s anything that can’t be salvaged with some good nut butter! 🙂

    I have kitchen blunders all the time. I made my dad a panini yesterday and burnt the hell out of it! Only me… I also had a smoothie blow up in my face just now!
