Borrowed Banana Bread {Pancakes}

Hey hey my little broccoli bites!

I hope you guys are having a fantastically lazy Sunday afternoon! I’ve been super busy today! Super busy planting my rump on the couch that is! I do plan on getting up here soon so I can meet a friend at the gym for a little sweat sesh, but for now, I’m perfectly content sitting here with my lap top, sipping on my second cup of coffee…yes, I am having a cup of coffee in the middle of the afternoon, because it’s the weekend and everybody knows there aren’t any rules for the weekend! πŸ˜‰

While perusing some foodie blogs this morning, I stumbled across Kate’s “7 Links” post from earlier this week. Let me just say that I am absolutely LOVING seeing these posts around blogworld…it’s such a great way to catch up and learn more about some of my favorite bloggers!

Anywho!

As soon as I saw Kate’s link to her Banana Bread Protein Pancakes, I knew I had to make them for Pancake Sunday…plus, after last week’s creative flavor combo, my brain needed a little rest! Haha! πŸ˜‰

I followed her recipe exactly, but at the last minute decided to throw a few carob chips into the mix…

Only trouble is, with an oat-based pancake recipe, carob chips tend to make your final product look a little…er, well-done?

Well, nothing a little peanut butter drizzle, shredded coconut, and raspberries can’t fix!

Yeah, that’s much better! πŸ˜‰

From the moment the batter was stirred up, my mouth was watering…and THEN the entire kitchen started smelling like freshly baked banana bread as they were doing they’re thing in the skillet!

Obviously it didn’t take long for me to figure out what to do with them once they were on my plate!

I usually like my pancakes with more of a fluffy consistency that you can only get from using some sort of flour, but every now and then I can appreciate a little variety and these were definitely good enough to make again! Besides the perfectly sweet flavor from the bananas and chewy texture of the oats, these babies pack a nutrient punch with the addition of chia seeds and protein powder…they kept me full for four hours!

Well, I’m off to go snag a quick run before meeting my friend for Bodypump! Honestly I can’t decide if the motivation to run is coming from the itch of not running in the past few days, or because I scored these babies while shopping yesterday:

I’m actually a pretty die hard Asics fan, but after walking around the store in one of each for about 20 minutes, the New Balances stole my sole! <- Shameless pun…can’t help it! πŸ˜‰

I really REALLY needed a new pair of running shoes. Plus I figured since I got these during theΒ tax free weekend with TWO coupons…one for $10 off and one for 20% off, they’ll get me by until I can get my booty to Nashville and grab a pair of Β these!

  1. yum! I had pancakes this morning too! I made mine with buckwheat flour, vanilla and tons of cinnamon – tasted like a snickerdoodle cookie!

      Oh, that sounds great Kayla! I love snickerdoodle cookies! I need to experiment more with buckwheat flour…I’ve only used it once or twice with pancakes.

  3. Gah. I’m a huge sucker for anything banana bread, so these would be right up my alley. Unfortunately, I wake up craving and neeeeeeding my bowl of eggy bananafied oats topped with nut butter and pudding pretty much every day, but maybe I can have these for dinner sometime? I know you’d support my multiple breakfasts a day πŸ˜€ And as for shoes, I really like Brooks and Asics, but I can’t say that I’m really loyal to one brand, ’cause I’m always experimenting.

      Haha! As I was reading your comment, I was thinking, “these would make a great lunch…or dinner!” Breakfast ANY time a day is perfectly acceptable if you ask me! I tried on a pair of Brooks…the salesperson was RAVING about them, but at $149 I was a little hesitant. :-/

  5. Way to depend on somebody else for creativity! Something *very* hard for me to do; I feel like I’m being a bad foodie. πŸ™‚ These look delicious, none the less and totally look like your own creation. In fact, you make them look SO good, I think I’m making them tomorrow. Or the next day. I’ll get around to it, I promise. πŸ™‚

  6. I have no idea what brand my running shoes are! I really need to get some new ones. Mine are a year old, which to me doesn’t sound that old because my last ones were 7 years old when I retired them πŸ™‚

  7. I’m definitely an Asics girl too. I’ve had Kayano’s for three years now and can’t wear any other shoe! But who knows…Maybe New Balance will sweep me off my feet some day?

    Banana bread is near and dear to my heart, so I *need* to make these pancakes. Like tomorrow morning. Or maybe right now. Gah. Reading food blogs right before bed is not a good idea!

      I know, right? I’m always getting hungry right before bed, but I know it’s only because I spend the last hour or so of my night drooling over people’s food! Haha!

      Never heard of Kayano’s before. If I don’t end up liking the feel of the Vibrams, while I’m in Nashville, I’ll probably scope out a store that can give me a fitting and go from there. The right shoes REALLY make a difference!

    Yum!! I just tried carob chips for the first time the other day and I’m not sure I’m completely sold on them. I wear Nike and always feel slightly guilty when I think of some 7 year old in a sweatshop making them. Just kidding, I hope that is not the case! I have nightmares about a pair of Asics I bought a few years back that gave me SUCH bad blisters. Never again, never again.

      Ouch! Yeah, I might be a little scarred too!

      Try the carob chips a few more times before writing them off! I didn’t like them at first either, but they really do grow on you…kinda like nutritional yeast! πŸ˜‰

  9. Jealous! I shopped for new shoes Saturday during tax-free weekend, but I couldn’t find any I liked. I need new cross trainers desperately, but I’m only used to shopping for running shoes. Hopefully I’ll find some soon!

    yummmm yumm.. thats what my plate always looks like after something good, butt i like to lick mine (shhhh don’t tell πŸ™‚ ) I love the ravenna brooks. I tried their shoes on and fell in love with their light but supportive feel. I used to wear newbalance, then saconey, and now raveenas! i order online because its much cheeper!

  12. i had vanilla latte overnight oats topped with strawberry rhubarb jam, NuttZo peanut butter and 1/2 a banana. It was amazing. I am in need of a pancake fix. Dinner maybe? Whose says pancakes are only for breakfast!

      Nobody says that! At least no body important in MY book! Pancakes for dinner taste even better than pancakes for breakfast…fact!

    this morning for breakfast I had oatmeal cooked in almond milk with chia seeds, fresh blueberries, a square of melted unsweetened chocolate, and greek yogurt swirled in. It was delicious πŸ™‚

    I think the pancakes look amazing, with or without the toppings!
    This morning I had a bagel and fruit. It was pretty boring because we were at a hotel :-/ I’m deff having oatmeal for dinner tho! πŸ™‚

  16. I’ve always bought Sauconys for my running shoes… but when I was buying my last pair I tried on a pair of Asics and I almost bought those. It was a close call!
