I hope you all had a fabulous weekend and had a good start to the week today. I’m doing another round of night shifts this week and so far…yeah, not going as well as last week 🙁
One thing that did perk me up though after I rolled out of bed this morning after only 3 hours of sleep (thank you new neighborhood construction) was this bowl full of yum:
The thickest, creamiest, coconuttiest pumpkin smoothie you’ll ever see!
Although the weather in Tennessee has decided to revert back to summer over the past couple of days (hello 70 degree weather!), I’m still finding myself craving the comfort of fall-flavored foods…so I decided this morning would be the perfect time to break out a ridiculously creamy fall-esque smoothie!
Creamy Coconut Pumpkin Smoothie

Ingredients (Serves 1)
- 1 scoop vanilla protein powder
- 1/2 frozen banana, sliced
- 1/2 cup pumpkin puree
- 1 teaspoon pumpkin pie spice
- 1 teaspoon almond extract (coconut or maple would be great too!)
- 1 cup coconut milk (from a carton)
- 6-8 ice cubes
- 1/4 teaspoon xanthan gum (for thickening)
- 1/4 teaspoon guar gum (for added creaminess)
Instructions
1. Combine all ingredients in a blender/food processor and blend until creamy, scraping down the sides if necessary.
2. Top with unsweetened shredded coconut and/or nuts of your choice.
I knew I’d be using these pumpkin spice almonds to top my smoothie, so I decided to throw a little almond extract in the mix…such a good idea!
I really cannot even begin to tell you how incredibly thick and satisfying this smoothie was…I swear I thought I was eating pumpkin flavored ice cream!

Ok, now I want THAT! Dang that looks so good! Atlanta is the same with the weather. Crazy, but I’m guessing when the cold finally hits us it will be FREEZING! I hope you have a better day/night Heather.

This looks so good! I’m thinking I’m going to need to buy some thickening gums though… I can never get my smoothies as thick as this!
Girl, I swear, one of the best investments ever! Both are pretty inexpensive and you only have to use a small amount to get the thickness you want. I could never go back to making smoothies without them!
I love pumpkin smoothies anytime of year. The “gums” are crucial for that thickness. I use cottage cheese and cream cheese in mine and it really is more like ice cream.
And yes the weather here is warm and humid (hello frizzy curly hair) and raining today. It’s supposed to cool off Thursday, so I’m glad for that.

I literally saw those nuts in target every day throughout october and kept resisting the urge to buy them. I’m seriously regretting that right now.
during the fall I’m all about apples and, as of late, applesauce. Especially warmed with cinnamon and nut butter. Le swooooooooonie!

You’re brave for taking on more overnights! That smoothie looks so thick and delicious. We’re getting a cold front today, but there’s always a possibility of it snowing one day and being 80* the next, here in CO. Fall smoothies are the perfect blend of a cool treat and a seasonal taste 🙂

Yum YUM. This seriously looks like a big bowl of ice cream. I always crave vanilla and cinnamon-y flavors when fall rolls around.
Those almonds were like the best impulse purchase I ever made at Target. (Then again, almost everything I buy there is an impulse by. What is it about target!?)
I used mine to make pumpkin almond butter! It was SO good!!!!

It’s pretty much always warm/hot where I live, so smoothies always go down a treat – looks amazing, thick and yum yum yummmmmmmmmmm
YUM!!! Pumpkin and apple are two of my favorite flavors for the fall. I’m starting to like coconut though, so I’m just dying to try this!
I think this is a good way to ease into the flavor of coconut since the pumpkin flavor is a bit stronger without being overpowering! Definitely give it a whirl and let me know what you think!
