Hey hey peoples!
I hope you all had a marvelous weekend! How many of you celebrated Pancake Sunday with me this morning?
All last night, I was dreaming of pancake ideas…when you’ve made as many pancakes as I have in the last year, it’s harder to think of what to make next!
Should I focus on the “stuffing“?
Or maybe the topping?
Should I play with color?
Well, when it came down to it this morning, I decided going with a blend of two of my favorite KMB pancake recipes…
Elvis Pancakes meet Carob Chip Pancakes:
Anyone up for some chocolate chip BACON pancakes? 😉
Chocolate Chip Bacon Pancakes

Ingredients (Serves 2)
- 1 cup whole wheat pastry flour*
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 teaspoons cinnamon
- 2 tablespoons butter, melted
- 1 large egg
- 3/4 cup + 2 tablespoons milk (I used unsweetened almond milk)
- 1 1/2 teaspoon vanilla extract
- 2 servings bacon, cooked and diced
- 1/4 cup semi-sweet/dark chocolate chips (I used mini chips)
Instructions
1. Heat a non-stick skillet over medium heat and coat with cooking spray.
2. In a medium-sized bowl, combine flour, baking power, salt, and cinnamon and stir with a spoon or a whisk to mix.
3. In a separate bowl, whisk together the butter, egg, milk, and vanilla.
4. Add wet ingredients to dry ingredients and stir just until combined.
5. Fold in diced bacon pieces and chocolate chips.
6. Spoon batter into skillet (makes 6 medium-sized pancakes) and cook for approximately 4-5 minutes (or until batter starts to bubble) before flipping and then 2-3 minutes before plating.
7. Plate and top with maple syrup and sliced bananas.
*If you do not have access to whole wheat pastry flour (which produces lighter baked goods and pancakes due to it’s lower gluten content), feel free to use any all purpose flour or a mixture of all purpose and whole wheat.
I just happened to spot a lonely speckled banana in the fruit basket and decided to throw a few slices on top of my cakes…
BEST decision ever!
The combination of the bacon with the chocolate and then with the maple and banana was out of this world!
Each bite was either salty…sweet…or that perfect mixture between the two!
Oh, and to all my wonderful veggie lovin’ friends out there, don’t be scared of trying this recipe out with a little fakin’ bacon! I’m sure it would be deeeeelicious!

My favourite salty/sweet combo is trail mix! I love it when the smarties and banana chips get a bit of salt on them.

Mmm, if you just added some peanut butter mixed with the maple syrup (btw one of my fave sweet/salty combos) it’d be an Elvis- Wonka pancake (Wonka for the chocolate!)
I love cottage cheese with fruit among many other salty sweet combos. I even add salt to my fruit if eating it alone!
You know, if heard that adding salt to fruit actually brings out some of the sweetness. I’ve tried it on watermelon before, but I wasn’t much of a fan.

Oh good, I’m glad you added that fakin bacon would probably be a good thing to try instead of the real deal. I would hate to miss out on all the fun just because I don’t eat the pork (hmm, that kinda sounds dirty). Once again, thanks for an awesome pancake recipe. You never seem to disappoint!
I think my favorite sweet/salty combo is homemade chocolate covered pretzels. Pretty much the best snack ever… too bad my thighs don’t think I should have them all the time.
Ohhh, if only the calories in some of my favorite snack foods could be negative! Chocolate and pretzels are definitely a winning combo. Have you ever tried chocolate and plantain chips together? I die!

I love Marmite on raisin toast.
Or dark chocolate with salt.
Or salty peanut butter and chocolate and banana.
Or a honey soy glaze on tofu.
Or just anything that involves salty sweetie together 🙂

Oh yes, I’ve heard of your Marmite and raisin toast combo from HEAB! I’ve never actually tried Marmite (or Vegemite for that matter), but I take it it’s a little salty tasting?
It’s a toss up between chocolate covered Zapp’s potato chips or ice cream topped with bacon and caramel. I’m drooling just thinking of the two!

Love it! I made something similar a few months ago (with fake bacon) and it was delicious. I never liked bacon before I became a vegetarian, so I’m happy that fake bacon is a reasonable facsimile 🙂
Definitely will try these with veggie bacon! As for favorite sweet/salty combo-kettle corn or pretzels and chocolate. Mmmm 🙂
We have a restaurant here that serves bacon wrapped dates and another that serves ham wrapped tomatoes. Both combos are phenomenal! And who can resist the epic creation that is the salted caramel mocha?
Mmmm! LOVE bacon wrapped dates! But I’ve never actually had a salted caramel mocha before…I’m thinking that needs to change real soon! 😉
i think salt and chocolate is the best salty and sweet combo…whether its salty roasted nuts with carob chips or just salty dark chocolate…
